This is another amazingly simple recipe from Everyday Italian. I LOVE grilled fruit....it just makes the flavors of the fruit "pop." This isn't one of those "do ahead" deserts, it needs to be served as soon as it is prepared......but you can prep ahead by slicing the pineapple, and mixing up the mascarpone mixture and the Nutella mixture, and having them ready. Or, if your house is like mine, the kitchen is where everyone hangs out anyways...so put them to work mixing stuff while you grill the pineapple. Would also be great dessert for a summer barbecue, since the pineapple could be grilled outside on the grill.

2 fresh pineapple, peeled, cored, and cut crosswise into 1/2 thick slices
2/3 cup mascarpone cheese, at room temperature
1 teaspoon vanilla extract
1 tablespoon sugar (optional) or 1 tablespoon Splenda sugar substitute (optional)
2/3 cup nutella
6 tablespoons whipping cream
3 tablespoons chopped toasted hazelnuts

Steps:

  • Whisk the mascarpone cheese, vanilla and sugar till smooth and blended.
  • Set aside (For ease of serving, I scoop into a ziploc bag, and seal. Then when it's serving time, I just snip the corner and drizzle thin streaks of it all over the pineapple slices.).
  • Combine the Nutella with cream in a small saucepan, and stir constantly over low heat for about 5 minutes, till satiny smooth, and easy to pour.
  • Set aside.
  • Grill pineapple slices in a grill pan sprayed with Pam over medium heat.
  • (you can also cook at medium high heat on BBQ, using Pam, also) Grill slices about 3 minutes per side, so you get those nice"grill marks.
  • "Arrange the pineapple on a large platter or shallow serving dish.
  • Drizzle Nutella over the pineapple.
  • then snip the corner of the bag, and drizzle the mascarpone over the top.
  • Sprinkle the hazelnuts over the top, and serve immediately.

1 large ripe golden pineapple, peeled, cored and cut into 8 to 10 wedges
Good olive oil
1/4 cup honey

Steps:

  • Prepare a charcoal grill with a single layer of hot coals.
  • When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.

1 pineapple
1 cup apricot jelly
2 tablespoons light brown sugar
1 tablespoon unsalted butter
1 tablespoon ground cinnamon
Pinch of salt
Vanilla ice cream, for serving

Steps:

  • Prepare a grill for medium heat.
  • Cut the pineapple in half lengthwise from the very top to the bottom (keeping the leaves on). Then cut each half lengthwise in half again, so you have 4 long pieces with leaves at one end.
  • Add the jelly, brown sugar, butter, cinnamon and salt to a medium saucepan over medium-low heat. Cook, stirring, until the mixture is fully combined and liquid.
  • Brush the pineapple with some of the mixture (reserve the remaining mixture), transfer to the grill and grill 3 to 4 minutes per side. Remove to a platter and, using a sharp knife, cut the bottom ends off each piece of pineapple. Then, carefully cut lengthwise from the bottom to the top of each piece along the skin (separating the fruit from the skin), and then crosswise into 1-inch pieces.
  • Drizzle the remaining apricot mixture over the pineapple. Serve with vanilla ice cream.

These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

ΒΌ teaspoon honey
3 tablespoons melted butter
1 dash hot pepper sauce
salt to taste

Steps:

  • Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.
