GRILLED CHICKEN WITH BASIL DRESSING

Steps:
- Whisk 1/3 cup of oil, 3 tablespoons of lemon juice, fennel seeds, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a heavy-duty re-sealable plastic bag. Add the chicken and seal the bag. Massage the marinade into the chicken. Refrigerate at least 30 minutes and up to 1 day, turning the chicken occasionally.
- Meanwhile, blend the basil, garlic, lemon zest, remaining 1/4 cup lemon juice, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Gradually blend in the remaining 1/3 cup oil. Season the basil sauce, to taste, with more salt and pepper, if desired.
- Prepare the barbecue for medium-high heat or preheat a grill pan over medium-high heat. Grill the chicken until just cooked through, about 5 minutes per side. Transfer the chicken to plates. Drizzle the basil sauce over and serve.
BASIL GRILLED CHICKEN WITH TOMATO BASIL BUTTER

Molly Pardo of Jupiter, FL took 2nd place at Gold Kist Farms 15th Annual Winning Taste Recipe Contest. The chicken needs to marinate at least 4 hours, so plan accordingly.

- For the chicken: Rinse chicken and pat dry; place in a non metallic dish or ziplock plastic bag. Combine olive oil, basil, Romano cheese, garlic and Italian seasoning; pour over chicken, tossing to coat all sides. Cover dish or seal bag; refrigerate at least 4 hours, turning occasionally.
- Preheat charcoal or gas grill to medium-high heat. Lightly coat grill grate with oil or non-stick cooking spray. Remove chicken from marinade; discard marinade. Grill chicken about 4-6 inches from heat source for about 7 minutes per side, or until no longer pink inside (160°F on a meat thermometer).
- Lower grill to low. Top chicken with mozzarella cheese. Close gill and let cheese melt. Put chicken on a platter and top with some tomato basil butter. Serve chicken with remaining tomato basil butter on the side.
- For the tomato basil butter. Put softened butter in a small bowl. Add remaining ingredients and blend well. Season with salt and pepper; set aside.

- To make Basil Butter: In small saucepan, melt the butter or margarine over low heat. Stir in 1 teaspoon garlic powder, the basil, and the 3/4 teaspoon onion powder. Set aside.
- To make the Mustard Sauce: Stir together all ingredients in a small bowl. Refrigerate sauce until you are ready to serve.
- To prepare the chicken: Trim any fat, rinse and pat dry. Place each breast between two pieces of plastic wrap. Working from the center to the outer edges, pound lightly with the flat side of a meat mallet to 1/4-inch thickness. Remove plastic wrap.
- Grill the chicken for 10 to 12 minutes or until the chicken is tender and no longer pink. Halfway through the grilling, turn the chicken over and generously brush each with the Basil Butter Sauce. Serve the chicken with the mustard sauce.
- I have always served the Mustard Sauce cold, however, it can be served warm. After mixing, place it in a small sauce pan and cook and stir until heated through. Keep warm until serving.
- I uaually double the sauce recipe to have extra on hand. It is excellent on ham and roast beef as well.
GRILLED BASIL AND GARLIC STUFFED CHICKEN
This is so easy to make and has a great flavor. One of my husband's favorites. Adapted from BHG The Grilling Book to suit our taste. Great served with wild rice and a salad. Enjoy

- For sauce, in a small bowl combine lemon peel, lemon juice, and 1 tablespoon melted butter.
- For stuffing, combine butter, parmesan cheese, basil and garlic in a small bowl.
- Set aside.
- Place chicken piece between 2 double layers of plastic wrap.
- Use flat side of a meat mallet to pound chicken into rectangles about 1/8 inch thick.
- Remove plastic warp.
- Spread stuffing on chicken.
- Sprinkle lightly with salt, pepper and ground red pepper to taste.
- Fold in sides of each chicken breast and roll up chicken.
- Secure with wooden toothpicks.
- Grill over medium heat for 20 to 25 minutes or until chicken is tender and no longer pink, brushing occasionally with sauce the last 10 minutes of grilling.

- Press 3/4 teaspoon pepper into meaty sides of chicken breast halves. Combine 1/3 cup melted butter and 1/4 cup chopped basil; stir well. Brush on chicken lightly.
- Combine 1/2 cup softened butter, 2 tablespoons basil, Parmesan cheese, garlic powder, salt and pepper in small bowl. Beat at low speed of an electric mixer until mixture is well blended and smooth. Transfer to a small serving bowl; set aside.
- Grill chicken on medium coals 8-10 minutes per side, basting frequently with remaining melted butter mixture.
- Serve grilled chicken with basil-butter mixture. Garnish with fresh basil sprigs, if desired.
HONEY BASIL GRILLED CHICKEN
This is a yummy flavor filled chicken dish. It's perfect for those hot summer says when you don't want to heat up the kitchen. It can also be prepared in the broiler. I did not include marinating time in the total prep time. I like to serve it with a rice dish and a spinach salad. A cool key-lime pie would make it a perfect meal!

- Combine the first 6 ingredients.
- Cut the peppers into 1-2" pieces.
- Add the chicken breasts& peppers to the honey mixture.
- I put all the ingredients in a heavy-duty zip lock bag.
- Seal the bag and shake it until the chicken& peppers are coated with the honey mixture.
- Put it in the refrigerator and let it marinate for 3 hours.
- Turn the bag several times to make sure the chicken and the vegetables are well coated with the marinade.
- Take the chicken and peppers out of the marinade.
- Put the marinade in a saucepan and bring it to a boil.
- Reduce the heat and simmer until the sauce reduces a small amount.
- This usually takes about 5 minutes.
- Spray the grill rack with cooking spray.
- Heat the grill to medium heat.
- Put the chicken on the rack and close the grill lid.
- Cook for 8-10 minutes.
- Turn the chicken and continue cooking for 8-10 minutes.
- Baste with the marinade during the last few minutes of cooking.
- The peppers can be grilled in a grilling basket or on skewers.
- The peppers will need to grill for about 5 minutes on each side.
- The chicken and peppers can be cooked in your oven broiler.
- Place them in a single layer on the broiler pan which has been sprayed with cooking spray.
- Broil 5-6 inches from the heat for 10 minutes.
- Turn the chicken and peppers and baste with the marinade.
- Cook for an additional 8-10 minutes or until chicken is done.

- Brush grill rack with vegetable oil. Heat gas or charcoal grill. Sprinkle chicken with garlic-pepper blend.

- In a shallow dish, whisk together the lemon juice, vinegar, oil, stock, and garlic. Reserve 3 tablespoons. Add the chicken, turning to coat, and marinate for 20 minutes.
- Meanwhile, prepare a stove-top griddle or outdoor grill. Grill the peppers, turning frequently, until charred and wrinkled, about 10 minutes. Remove to parchment paper to cool. Peel over the parchment paper, reserving the juices. Cut the peppers into 1/4-inch strips and place in a bowl. Stir in the collected juices and the reserved marinade. Season with salt and pepper.
- Grill the chicken until the juices run clear when pricked at the thickest point, about 4 minutes per side. Arrange the chicken over the Caramelized Corn with Shallots and spoon the pepper mixture on top. Garnish with the basil.
