These are very tasty and super easy to make. You can make the packets the night before and keep refrigerated for a few days. All you need to do is throw them on the grill when you're ready to cook them (great for busy days when you don't have time to make dinner).

4 pork shoulder chops, 1 inch thick
2 large sweet potatoes, parboiled
1 medium onion, sliced
2 apples, unpeeled
2 tablespoons brown sugar
1 1/2 teaspoons salt
1/2 teaspoon nutmeg
1/8 teaspoon ground cloves

Steps:

  • In a fry pan, brown chops on both sides.
  • Place each in center of a large square of heavy duty foil.
  • Peel and slice sweet potatoes; place slices over chops.
  • Top with onion slices.
  • Quarter and core apples, cut into thin wedges and arrange over onion slices.
  • Combine sugar, salt, nutmeg and cloves and sprinkle over apples.
  • Bring edged of foil together over chop. Fold over with a double fold, leaving a space for expansion and seal ends securely.
  • Build a medium fire in a barbeque.

1 cup Manwich® Original Sloppy Joe Sauce
1 teaspoon Gulden's® Spicy Brown Mustard
PAM® Original No-Stick Cooking Spray
10 ounces frozen Alexia® Waffle Cut Sweet Potato Seasoned Fries (about 20 pieces)
2 medium ears fresh sweet corn, husks removed, quartered
4 thick-cut boneless pork chops (4 chops = 1-1/3 pounds)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons chopped green onions

Steps:

  • Preheat gas grill for medium-high heat. Combine Sloppy Joe sauce and mustard in small bowl; set aside.
  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Spray each with cooking spray. Evenly place sweet potatoes and corn on each piece of foil. Top sweet potatoes with pork; sprinkle pork with salt and pepper. Spoon sauce over pork. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on grate; cover grill. Grill 15 minutes or until pork is cooked through (145°F) and corn is tender. Carefully open packets; sprinkle with green onions before serving.

2 tablespoons extra-virgin olive oil, plus more for brushing
3 medium sweet potatoes
Kosher salt and freshly ground pepper
2 Persian cucumbers, chopped
1 cup chopped pineapple
1 scallion, sliced
1/4 cup fresh cilantro, roughly chopped
1 tablespoon white wine vinegar
1 tablespoon packed light brown sugar
1 tablespoon ancho chile powder
2 teaspoons ground cumin
2 small pork tenderloins (about 12 ounces each), trimmed

Steps:

  • Preheat a grill to medium high and brush the grates with olive oil. Pierce the sweet potatoes all over with a fork and microwave until just cooked through, 5 to 7 minutes; let cool slightly, then slice into 1/2-inch-thick rounds. Transfer the sweet potatoes to a medium bowl and gently toss with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper.
  • Meanwhile, toss the cucumbers, pineapple, scallion, cilantro and vinegar in a medium bowl; season with salt and pepper. Set aside. Mix the brown sugar, chile powder, cumin, 3/4 teaspoon salt and a few grinds of pepper in a separate bowl. Rub the pork all over with the remaining 1 tablespoon olive oil and the spice mixture.
  • Grill the pork, covered, turning occasionally, until a thermometer inserted into the center registers 145 degrees F, about 15 minutes. Remove to a cutting board and let rest 5 minutes. Grill the sweet potatoes, turning once, until marked, about 3 minutes. Slice the pork and top with the cucumber-pineapple salsa. Serve with the sweet potatoes.

2 cups (from 1-pound 4-ounce bag) refrigerated cooked new potato wedges

2 pounds medium red potatoes (about 7), cut into wedges
1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. 2 medium dark orange sweet potatoes, peeled, and cut into 1 inch cubes (about 1/3 pound per sweet potato)
1 medium yellow bell pepper, cut into 1 inch pieces
2 tablespoons butter, melted
1 tablespoon honey
1/2 teaspoon seasoning salt
1 tablespoon chopped fresh chives
cooking spray
aluminum foil

Steps:

  • Heat grill to medium heat.
  • Cut a piece of foil about 18 x 18 inches square. Lightly spray foil with cooking spray.
  • Place sweet potatoes on foil, top with yellow pepper.
  • Mix together the melted honey, butter, and seasoned salt. Pour over potato/pepper mixture. Toss slightly to distribute honey/butter.
  • Note: You can add the chives to the vegetables now, or wait until after cooking and sprinkle them on top.
  • Fold foil over vegetables and crimp to seal. Make sure you have a tight seal, but allow for circulation and expansion during grilling.
