1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch cayenne pepper
3 (4 ounce) fillets wild-caught skin-on mahi-mahi fillets
3 tablespoons olive oil
2 tablespoons lemon juice

Steps:

  • Preheat a gas grill for medium-high heat (450 degrees F (230 degrees C)) and lightly oil the grate.
  • Combine the paprika, oregano, cumin, garlic powder, onion powder, salt, pepper, and cayenne in a small bowl. Brush mahi mahi fillets with olive oil on both sides and season with the spice mixture.
  • Grill on the hot grill until golden, 4 to 5 minutes per side. Drizzle with lemon juice and serve.

Just a simple recipe I came up with on the spur of the moment. Serve with steamed broccoli and you have an easy, not-too-fishy tasting meal. Prep time includes one hour of marinating.

1/2 cup olive oil
1 tablespoon fresh lime juice
1 teaspoon garlic salt (or to taste)
1 teaspoon black pepper (or to taste)
6 mahi mahi fillets
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup red wine
1 tablespoon garlic powder
1 tablespoon soy sauce
4 cups cooked wild rice

Steps:

  • Combine and mix together olive oil, lime juice, garlic salt, and black pepper in a bowl.
  • Dip each fish fillet in the olive oil mixture, making to sure to coat each fillet entirely.
  • Set coated fillets aside and allow to marinate at room temperature for an hour.
  • After 45 minutes, combine soup, red wine, garlic powder, and soy sauce in a sauce pan.
  • Mix together well and allow to simmer, stirring occasionally to prevent sticking.
  • While sauce is simmering, place fish fillets on the grill and cook 4-5 minutes per side, turning only one time.
  • Place each grilled fillet atop a bed of wild rice and top with the sauce.

1 1/2 teaspoons minced garlic
1 teaspoon salt
1/4 cup dark rum
1/4 cup lime juice
1/4 cup chopped of fresh mint
1/4 cup chopped fresh cilantro
1 anaheim chili, minced
2 tablespoons olive oil
2 tablespoons honey
1 1/2 teaspoons lime zest
3/4 teaspoon ground cumin
6 (6 ounce) mahi mahi fillets
cracked pepper

Steps:

  • With mortar and pestle, mash garlic and salt to form paste; place in a gallon bag.
  • Add rum, lime juice, mint, cilantro, peppers, oil, honey, lime peel, cumin, salt and pepper.
  • Add fish; turn and rub to distribute marinade evenly.
  • Refrigerate for no more than 30 minutes so fish doesn't break down.
  • Place fish on grill over medium heat or 4 to 6 inches from coals.
  • Grill 8 to 10 minutes or until fish flakes.
  • Turn once and spoon remaining marinade over fish halfway through grilling time.

2 tablespoons sherry or pineapple juice
2 garlic cloves
8 mahi mahi fillets (6 ounces each)
TROPICAL FRUIT SALSA:
1 medium mango, peeled and diced
1 cup chopped seeded peeled papaya
3/4 cup chopped green pepper
1/2 cup cubed fresh pineapple
1/2 medium red onion, chopped
1/4 cup minced fresh cilantro
1/4 cup minced fresh mint
1 tablespoon chopped seeded jalapeno pepper
1 tablespoon lime juice
1 tablespoon lemon juice
1/2 teaspoon crushed red pepper flakes

  • In a shallow dish, combine the teriyaki sauce, sherry or pineapple juice and garlic; add mahi mahi. 3 tablespoons extra-virgin olive oil
3 tablespoons freshly squeezed lime juice
3 garlic cloves, smashed
1/2 teaspoon cumin seeds
1/4 teaspoon freshly ground pepper
2 to 3 sprigs thyme, oregano, or other herbs
1 1/2 pounds mahimahi fillets

Steps:

  • Make marinade: Combine olive oil, lime juice, garlic, cumin seeds, pepper, and herbs in a large resealable plastic bag or airtight plastic container. Shake well to combine.
  • Add fish, and shake gently to coat well with the marinade. Refrigerate at least 1 hour and up to 4 hours.

1 tablespoon coconut oil
2 (4 ounce) mahi mahi fillets
1 cup fresh spinach leaves
4 medium mushrooms, sliced
1 tablespoon green onions, chopped, or to taste
3 cloves garlic, minced, or to taste
1 tablespoon chopped fresh basil, or to taste
sea salt to taste
1 cup hot cooked wild rice

Steps:

  • Heat oil on a griddle over medium heat. Add mahi mahi fillets to one side of the griddle and cook until it flakes easily with a fork, about 12 minutes, turning halfway through.
  • At the same time, saute spinach, mushrooms, green onions, and garlic on the other side of the griddle. Add basil and salt to the vegetables and fish.
  • Serve over wild rice.
