Treat guests to grilled lobster tails served with a lemon, garlic and parsley butter. They take a little effort, but make an impressive dinner party dish

4 lobster tails, defrosted if frozen
lemon wedges, to serve
125g butter , softened
1 garlic clove , crushed
handful parsley leaves, finely chopped, plus extra to serve
1 tsp Dijon mustard
small pinch chilli powder , optional
1 lemon , juiced

Steps:

  • Make the butter by mixing together all the ingredients, then season and set aside. Can be made two days ahead. Remove from the fridge to soften before using.
  • Use kitchen scissors to cut along the tops of the lobster shells, then flip the tails over and crack the ribs of the shell. Use your fingers to open the shell and loosen the meat keeping it attached at the base and pull it half out. Use a knife to cut along the top of the tail without cutting all the way through and remove the vein if you see one. Sit the tail in a shallow roasting tray and add some butter to each one. Tails can be prepared a few hours ahead and chilled.
  • Heat the grill to high, then grill the lobster tails for 10 mins until cooked through. Put them on plates and drizzle with the butter from the pan, or pour the butter into a ramekin and put it in the middle of the table for dipping the lobster meat in. Serve with lemon wedges and scatter with extra parsley, if you like.

6 frozen lobster tails (8 to 10 ounces each), thawed
3/4 cup olive oil
3 tablespoons minced fresh chives
3 garlic cloves, minced
1/2 teaspoon salt

Steps:

  • Using scissors, cut 3 to 4 lengthwise slits in underside of tail to loosen shell slightly. Cut top of lobster shell lengthwise down the center with scissors, leaving tail fin intact. Cut shell at an angle away from the center of the tail at base of tail fin. Loosen meat from shell, keeping the fin end attached; lift meat and lay over shell. , In a small bowl, combine the remaining ingredients; spoon over lobster meat. 1 stick salted butter, at room temperature
2 tablespoons chopped chives
1 tablespoon chopped tarragon leaves
1 clove garlic, minced
Dash hot sauce
Freshly ground black pepper
4 (7-ounce) lobster tails
Olive oil
Kosher salt
Lemon wedges, for garnish
Chive sprigs

Steps:

  • Preheat your grill to direct medium-high heat.
  • In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve.
  • Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste.
  • Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.
  • Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs.

½ cup salted butter, softened
2 tablespoons minced garlic
1 dash hot sauce
freshly ground black pepper to taste
4 (6 ounce) lobster tails
4 (10 inch) skewers
1 tablespoon olive oil, or to taste
kosher salt to taste
1 medium lemon, cut into wedges

Steps:

  • Combine butter, minced garlic, hot sauce, and pepper in a bowl; mix until fully combined. Set aside.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Butterfly lobster tails by cutting lengthwise through the centers of the hard top shells and about halfway through the top of the meat with kitchen shears. With your fingers, press shell halves of the tails apart. Flip them over, and insert a skewer down the lobster tail so that the tail is easier to remove after cooking and doesn't curl up. Brush tails with olive oil and season with salt.
  • Place lobster tails on the preheated grill with the cut shell sides down; grill until shells are bright in color, 5 to 8 minutes. Flip and spoon 1 tablespoon butter mixture onto the butterflied meat through the cut in the shell. Grill until lobster meat is an opaque white color, 4 to 7 more minutes, basting once more with butter mixture.
  • Remove lobster tails from the grill and serve with more garlic butter and lemon wedges.

8 (1 1/2 pound) live lobsters
Olive oil
Salt and freshly ground pepper
16 skewers, soaked in cold water
Green Curry-Mango Sauce, recipe follows
Chopped cilantro leaves, for garnish
Lime wedges, for garnish
4 ounces black caviar, optional
2 tablespoons plus 1/2 cup canola oil
1 red onion, coarsely chopped
3 cloves garlic, chopped
1 tablespoon chopped fresh ginger
1 serrano chile, coarsely chopped
2 tablespoons green curry paste
3 ripe mangoes, peeled, pitted, and coarsely chopped
2 cups water
3 tablespoons fresh lime juice
3 tablespoons chopped cilantro leaves
1 tablespoon honey
Salt and freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the lobsters and boil until just cooked through, about 12 to 15 minutes. Meanwhile, preheat the grill to medium-high. Drain the lobsters and put them in a bowl of ice water to stop the cooking. Then drain the lobsters well, remove the tail from the lobster, and carefully remove the tail meat from the shell.
  • Skewer each tail onto 2 skewers so that the meat lies flat. Brush the tails with oil and season with salt and pepper. Grill for 2 to 3 minutes on each side or until slightly charred.
  • Place the lobster skewers on a platter and drizzle with some of the sauce over top. Sprinkle with chopped cilantro and garnish with lime wedges. Top with dollops of caviar, if desired. Serve the remaining sauce in small bowls for individual dipping.
  • Heat 2 tablespoons oil in a medium saucepan over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic, ginger, and serrano chile and cook for 1 minute. Add the curry paste and cook for 2 minutes. Add mangoes and water, stir well, and cook until the mango is soft, about 15 to 20 minutes. Transfer the mixture to a blender (see *Cook's Note below). Add the lime juice, cilantro, and honey and blend until smooth. With the motor running, slowly add the remaining 1/2 cup oil and blend until emulsified. Season with salt and pepper, to taste.

1 1/2 cups freshly squeezed lemon juice
1 teaspoon clover honey
2 sticks unsalted butter, softened
2 teaspoons finely grated lemon zest
3 red Fresno chiles, grilled, seeded and finely diced
Kosher salt and freshly grounded black pepper

8 jumbo Maine lobster tails (8 to 10 ounces each)
Canola oil, for brushing

Steps:

  • For the lemon-red Fresno butter: Put the lemon juice in a small saucepan and bring to a boil over high heat. Cook until reduced to 1/4 cup. Stir in the honey. Let cool.
  • Add the butter and zest to the reduced lemon juice and mix until smooth. Fold in the chiles and season with salt and pepper. The butter will keep in the refrigerator, covered, for up to 1 week.
  • For the grilled lobster tails: Bring a large pot of salted water to a boil. Add the lobster tails and boil for 4 minutes. Remove and drain well. Split each lobster tail lengthwise down the underside with a heavy knife, taking care not to cut through the back shell, so that the lobster is still in one piece but the inside is exposed.
  • Heat a charcoal grill to medium-high heat.
  • Brush the lobster flesh with oil and sprinkle with salt and pepper. Place the tails flesh-side down on the grill and grill until slightly charred, about 3 minutes. Flip over, brush with a generous amount of lemon-red Fresno butter, and continue grilling until just cooked through, 2 to 3 minutes, brushing with butter throughout.

Olive Oil
8 ounces haricots verts, cooked until just tender and shocked in ice water, each bean quartered lengthwise

1/4 cup roasted unsalted potatoes, roughly chopped
2 large green (unripe) papayas, peeled, seeded and julienned
1/4 cup Thai fish sauce
1/4 cup freshly squeezed lemon juice

  • Heat olive oil in a small saucepan over medium heat. Add onion and cook until soft. Add curry powder and ancho powder and cook for 2 minutes. Add mango puree and lime juice and cook an additional 5 minutes. Let cool. Place mango mixture in a food processor and add butter. Process until smooth and season with salt and pepper to taste.
  • Place a sheet of parchment paper or waxed paper on a work surface. Spread the butter along a long side and form into a roll about 1-inch in diameter, leaving a 1-inch border of paper. Roll up the butter in the paper and refrigerate for at least 30 minutes.
  • Preheat grill. Brush lobster tails with oil and season with salt and pepper. Place meat side down and grill 4 to 5 minutes or until cooked through. Remove from heat and top each tail immediately with a slice of butter.
  • Green Papaya Salad: Combine all ingredients except peanuts in a medium bowl until combined. Spoon onto a platter and garnish with peanuts and chopped cilantro.

Since I really don't even bother measuring, the amounts listed are only estimated to what I am guessing that I use, it really doesn't matter if the amounts are not exact. You can use fresh garlic in place of garlic powder but I find that fresh garlic will burn on the grill.

  • In a small bowl, blend together the butter, garlic, and curry powder. Add a few dashes of hot sauce and season with salt and pepper.
  • With scissors, cut down the center of the lobster tail shells on the top side and discard the dark intestinal vein. Loosen the meat from the shells and rub it with oil. Season the lobster lightly with salt and pepper. (I often don't do this step if your guests are cool).
  • Light a grill. Grill the lobster tails over a medium-hot fire, meaty side down, until light grill marks appear, about 2 minutes. Turn the lobster tails and spread each with about 1 teaspoon of the butter. Turn the lobster meaty side down again and grill until golden brown, about 2 minutes. Turn the lobster tails shell side down and splash with SoCo. ■4 (4 - 5 oz) lobster tails, butterflied (see tip below)
■1/2 lb salted butter (2 sticks), divided
■2 cloves garlic, minced
■1 shallot, minced
■4 tablespoons fresh parsley, chopped
■1/3 cup fresh lemon juice
■1/4 cup fresh orange juice
■1 tablespoon fresh tarragon
■pinch of salt
■pinch of fresh ground white pepper
■lemon wedges

Steps:

  • 1. In a small sauce pan, melt 1/2 of a stick of butter. Add the garlic and shallots and sauté until tender, about 5 minutes. Add remaining butter, parsley, juices, tarragon and salt and pepper. Then heat until butter melts. Set aside, keeping warm and stir occasionally. 2. Next we are going to par-boil the tails. Insert a metal skewer through the length of each tail, between the top part of the shell and the meat, all the way to the end of the tail. Don't pierce through the end of the tail. The skewers will keep the tails from curling up during the par-boiling process. Fill a large pot about half way with water and bring to a boil. Put the lobster tails into the boiling water, turn off the heat and let simmer for 2 minutes exactly. Transfer from the pot to a bowl of iced water until cool enough to handle. Remove skewers, drain and dry. Butterfly them using kitchen shears, cut down the center of the back of the lobster to the base of the tail. Try to cut only the shell and not the meat. Grab both sides of the shell and gently pull the shell away from the meat. The trick here is to pull the shell completely away EXCEPT the part nearest to the end of the tail. Lift the meat from the shell. Grasp the shell underneath and close the gap so the two parts of the shell are connected. Lay the meat on top of the closed shell. Make a small incision with a knife down the center of the lobster meat and remove the vein. Grab the two loose sides of the meat and pull them over each side of the shell. 3. Line the grill with aluminum foil to prevent charring. Preheat grill to high heat. Paint the lobster tails with the butter mixture. Grill meat side down for 2 - 3 minutes. Turn meat side up, paint again with mixture and grill for another minute. Be careful to not overcook the lobster as it will become tough very quickly. Serve immediately with the remaining butter mixture and lemon wedges.

I found this recipe on AllRecipes. This one did not need to be changed at all. Sheer perfection and the only way we eat lobster in our house anymore. I highly recommend still dipping the lovely lobster meat in melted butter, but it's not necessary. The flavor here is wonderful.

1 tablespoon lemon juice
1/3 cup olive oil
1 teaspoon salt
1 teaspoon paprika
1/8 teaspoon white pepper
1/8 teaspoon garlic powder
2 (8 ounce) rock lobster tail

Steps:

  • Preheat grill for high heat.
  • Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade.
  • Lightly oil grill grate. Place tails, flesh side down, on preheated grill. Cook for 10 to 12 minutes, turning once, and basting frequently with marinade. Discard any remaining marinade. Lobster is done when opaque and firm to the touch.

2 lobster tails
2 tsp lemon juice
3 Tbsp butter
2 garlic cloves, minced
1/2 c dry bread crumbs
1 tsp salt
1/2 tsp ground pepper
1/4 tsp dried thyme
1/4 tsp dried marjoram
1/4 tsp dried oregano
1/4 tsp dried basil
1/4 tsp dried rosemary
1/4 tsp dried sage
1/4 tsp garlic powder
1/8 tsp cayenne
1 Tbsp parmesan cheese

Steps:

  • 1. In a small saucepan melt the butter with minced garlic and remove the pan from the heat.
  • 2. In a shallow bowl stir together well the bread crumbs, the salt, the pepper, the herbs, the garlic powder, the cayenne and the Parmesan cheese.
  • 3. Roll the pieces of lobster meat in the garlic butter, dredge them in the bread crumb mixture and return them to the shells.
  • 4. Grill the lobster tails, shell sides down, on a rack set 4-6-inches over glowing coals, turning them occasionally from side to side, for 10 minutes.
  • 5. Cover the grill and grill the lobster tails for 5-10 minutes more, or until they are just cooked through.

8 lobster tails
1 cup of melted butter
¼ cup of olive oil
½ cup of lemon juice
1 teaspoon of paprika
1 tablespoon of minced garlic
pinch of salt and pepper to taste

Steps:

  • 1. Rinse and butterfly the lobster tails. Lay the bellyside up. Pierce just proximal to the tail with a sharp knife and cut through the belly. When you get down to the shell, press hard to cut through. Kitchen sheers will also work nicely. Do not completely separate lobster tails.
  • 2. Gently expose part of the meat out along each tail and rinse again and pat dry.
  • 3. Combine oil, lemon, butter, paprika, garlic and pinch of salt and pepper in mixing bowl. Brush marinade on lobster tails.
  • 4. Grill the lobster on medium heat, with meat side down and frequently brush on the marinade. Cook the lobster tail until the meat is white and opaque and firm to touch, about 8-12 min depending on size. Remove from the grill.
  • 5. Baste one more time with the butter and cover with aluminum foil. Let the meat rest for 5-10 minutes before serving.
  • 6. NOTE: You don't want to cook over direct heat as the garlic lemon butter that you are going to baste the tails with will catch fire. Flame-ups will cook the tails too quickly and you will end up with dried out meat. Keep a spray bottle of water with you next to the grill, in case of flame-ups.

Instead of paying for a babysitter, we would fix something really special and just dine in. It was always more fun then going out;>) This was one of our favorites.

2 lobster tails, thawed if frozen (6-8-oz. each)
2 teaspoons fresh lemon juice
3 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon rosemary
1/4 teaspoon sage
1/4 teaspoon garlic powder
1/8 teaspoon cayenne, to taste
1 tablespoon freshly grated parmesan cheese

Steps:

  • Holding each lobster tail shell side down, cut away the ribbed membrane as close to the shell as possible with kitchen shears.
  • Remove lobster meat in one piece from each shell, rinse and pat dry.
  • Sprinkle each with lemon juice and set aside.
  • In a small saucepan, melt butter with the minced garlic over low heat.
  • Remove from heat.
  • In a plastic ziplock bag, combine bread crumbs, herbs, garlic powder, cayenne and Parmesan cheese.
  • Roll the lobster meat in the garlic butter and shake them in the plastic bag with the bread crumb mixture to coat.
  • Return the lobster meat to their shells.
  • Grill the lobster tails, shell sides down, on a rack 4-6 inches over glowing coals with some hickory chips added, turning from side to side but not turning over, for 10 minutes.
  • Cover and grill another 5 to 10 minutes until they are just cooked through.

1 1/2 cups freshly squeezed lemon juice
1 teaspoon clover honey
2 sticks unsalted butter, softened
2 teaspoons finely grated lemon zest
3 red Fresno chiles, grilled, seeded and finely diced
Kosher salt and freshly grounded black pepper
Kosher salt
8 jumbo Maine lobster tails (8 to 10 ounces each)
Canola oil, for brushing
Freshly ground black pepper
Fresh cilantro leaves, for garnish
Lemon zest, for garnish

Steps:

  • Directions For the lemon-red Fresno butter: Put the lemon juice in a small saucepan and bring to a boil over high heat. Cook until reduced to 1/4 cup. Stir in the honey. Let cool. Add the butter and zest to the reduced lemon juice and mix until smooth. Fold in the chiles and season with salt and pepper. The butter will keep in the refrigerator, covered, for up to 1 week. For the grilled lobster tails: Bring a large pot of salted water to a boil. Add the lobster tails and boil for 4 minutes. Remove and drain well. Split each lobster tail lengthwise down the underside with a heavy knife, taking care not to cut through the back shell, so that the lobster is still in one piece but the inside is exposed. Heat a charcoal grill to medium-high heat. Brush the lobster flesh with oil and sprinkle with salt and pepper. Place the tails flesh-side down on the grill and grill until slightly charred, about 3 minutes. Flip over, brush with a generous amount of lemon-red Fresno butter, and continue grilling until just cooked through, 2 to 3 minutes, brushing with butter throughout. Remove from the grill to a platter, flesh-side up. Top with a little more butter, some cilantro leaves and lemon zest.
