1 1/2 lbs ground buffalo meat or 1 1/2 lbs hamburger
1/2 cup onion, finely chopped
3 jalapeno peppers, seeded and finely chopped
1 garlic clove, finely chopped
2 cups water
6 -8 dried chilies or 1/2 medium ancho chili
1/4 cup red wine vinegar
1 teaspoon dry mustard
1 garlic clove
1/4 cup light olive oil

Steps:

  • Mix meat, onion, peppers, and garlic together. Mix well. Shape into preferred sized patties.
  • Brush the grill with vegetable oil. Next, place the patties onto the grill. Make sure they are place approximately 4 inches from medium heated coals.
  • Turn them only once--about 4 - 6 minutes for a medium doneness. **NOTE: You can also broil these as well.Placing the patties about 3 inches from the heat source. Turning only once.**.
  • Serve with the hot chile sauce.
  • HOT CHILE SAUCE Boil the water, adding the chilis. Boil for 5 minutes and drain.
  • Remove the stems and remove from heat. Cool.
  • Add this to a blender and add the following: vinegar, mustard, and garlic. Blend until the chiles are finely chopped. On low speed, gradually add the oil. Blend until smooth and creamy.

Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

1 lb ground buffalo meat
1/4 red onion, finely chopped
1 -2 garlic clove, finely chopped
2 tablespoons Worcestershire sauce
1 pinch kosher salt
1 pinch fresh ground pepper

Steps:

  • Combine all ingredients in a bowl, be sure not to over handle! Form into patties and fry or grill.
  • Serve as any other burger.

1 tablespoon canola oil
1 teaspoon butter
1 medium onion, halved and thinly sliced
Dash salt
Dash sugar
BURGERS:
1/3 cup jalapeno pepper jelly
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef
4 hamburger buns, split and toasted
2 tablespoons crumbled Gorgonzola cheese
Thinly sliced jalapeno pepper, optional

Steps:

  • In a small skillet, heat oil and butter over medium heat. Add onion, salt and sugar; cook and stir until onion is softened, 3-4 minutes. Reduce heat to medium-low; cook until deep golden brown, stirring occasionally, 4-6 minutes., In a large bowl, mix jelly, salt and pepper. Add beef; mix lightly but thoroughly. Shape into four 1/2-in. thick patties., Grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 4-5 minutes on each side. Serve on buns with caramelized onion, cheese and, if desired, sliced jalapeno.

2 jalapeno peppers, seeded and finely chopped
2 tablespoons minced fresh cilantro
2 tablespoons light beer or water
2 dashes hot pepper sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound extra-lean ground turkey
3 slices pepper jack cheese, cut in half
6 dinner rolls, split
6 tablespoons salsa
6 tablespoons fat-free sour cream
6 tablespoons shredded lettuce

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into six patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until a thermometer reads 165° and juices run clear. , Top with cheese; cover and grill 1-2 minutes longer or until cheese is melted. Serve on rolls with salsa, sour cream and lettuce.
