GRILLED HAM STEAKS WITH SAUTEED SWEET POTATOES, CORN AND CARAMELIZED APPLES



Grilled Ham Steaks with Sauteed Sweet Potatoes, Corn and Caramelized Apples image

1/4 cup brown sugar
2 tablespoons ground cinnamon
1 whole smoked ham, sliced
1 (12-ounce) can pineapple chunks
Lettuce, for garnish
Sauteed Sweet Potatoes and Corn, recipe follows
Caramelized Apples, recipe follows
1 sweet potato
2 tablespoons olive oil
2 tablespoons fresh rosemary leaves, minced
2 ears corn
1 green bell pepper
1 red bell pepper
4 red apples, sliced into wedges
2 tablespoons butter
1/4 cup brown sugar

Steps:

  • Combine the brown sugar and cinnamon in a small bowl. Sprinkle the sugar mixture over the ham slices to coat all of the pieces. Heat a large grill pan over medium-high heat. Drain the pineapple chunks from the juice in the can. Add the ham and the pineapple chunks to the hot pan, and cook for approximately 20 minutes, or until the slices are golden brown. Reserve the liquid in the pan for the Sauteed Sweet Potatoes and Corn.
  • Serve over lettuce with the Sauteed Sweet Potatoes, Corn, and Caramelized Apples.
  • Bring a medium-sized pot of water to a boil. Peel and cut the sweet potato into small chunks. Add the sweet potato to the boiling water, and boil until tender. Drain the sweet potato into a colander. In the same pot, heat the olive oil over medium heat. Return the sweet potato to the pot, and add the rosemary. Saute until the sweet potato has developed nicely browned crusts on the cut sides, and then remove it to a large serving bowl.
  • In another medium-sized pot, place 2 ears of corn in just enough water to cover, and bring to a boil. Continue boiling until kernels are soft and tender. Meanwhile, slice the green and red peppers into 1/4-inch strips. Add the peppers to the pan with the liquid from the sauteed ham, and cook over medium-high heat. Slice the corn off the cob, and add it to the pan with the peppers. Continue sauteing until vegetables are crisp yet tender. Add the corn and pepper mixture to the bowl with the sweet potato, and toss gently until combined.
  • In a large pot, add the apples and enough water to cover. Bring to a boil and cook until apples are tender. Drain in a colander. To the same pot, add the butter and brown sugar, and return the apples. Over low heat, stir with a wooden spoon until the apples absorb the sugar and the butter has melted.

1 Cook's® Bone-in Thick-Cut Ham Steak (about 2 pounds)
1 jar 10-ounces Jalapeno Pepper Jelly (about 3/4 cup)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro

Steps:

  • 1. Prepare grill for medium heat.
  • 2. Combine jelly and garlic in small saucepan; cook over medium heat 2 minutes, or until jelly is completely melted, stirring occasionally. Remove from heat. (Or, combine in small microwavable bowl. Microwave on HIGH 1 minute, or until jelly is melted.) Stir in cilantro. Reserve 1/4 cup jelly mixture; set aside.
  • 3. Grill ham steak 5 minutes; turn over. Brush with half of the remaining jelly mixture; continue grilling 10 minutes, until ham reaches an internal temperature of 160 degrees F when tested in center with meat thermometer, turning ham steak over and brushing with remaining jelly mixture after 5 minutes.
  • 4. Serve with the reserved jelly mixture.

1 tablespoon prepared mustard
1 teaspoon lemon juice
1/8 teaspoon ground cinnamon
1 ham steak (about 2 pounds and 1 inch thick)

Steps:

  • In a small saucepan, combine the preserves, mustard, lemon juice and cinnamon. Cook and stir over low heat for 2-3 minutes. Set glaze aside. Score edges of ham. , Grill, uncovered, over medium heat for 8-10 minutes on each side, brushing with glaze during the last few minutes of grilling.

1/2 cup apricot preserves
1/2 cup orange juice
1 tablespoon lemon juice
1 teaspoon ground ginger

Steps:

  • Combine preserves, orange juice, lemon juice and ginger for basting sauce.

Ask the butcher to cut the ham steaks for you for the tastiest, easiest dinner you've made in a long time (try it for brunch, too!) This dish is deliciously simple, so pick a simply elegant wine. Try a Chablis Premier Cru, which is a Chardonnay unadorned with oak--go for a select vineyard. The spicy ham will benefit from the wine's medium body, long finish, and thirst-quenching acidity. Try a Festbier from Germany; particularly a Marzen lager. The sweeter malts and diminished hoppiness will bring out the subtly sweet flavors of the ham and the earthy spiciness of the rub. Serve with some mashed sweet potatoes and fresh blanched green beans, if desired.
