Grilled Ham and Cheese with Cornichon Spread image

A tart pickle spread helps balance the rich creaminess of this gourmet ham-and-cheese sandwich.

Number Of Ingredients 10

3 tablespoons finely chopped cornichons
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
Coarse salt and freshly ground black pepper
4 slices whole-grain bread
1 tablespoon unsalted butter, melted
4 ultrathin slices provolone cheese
4 ultrathin slices Swiss cheese
2 tablespoons prepared onion jam
8 thin slices French ham

Steps:

  • In a small bowl, mix together cornichons, mayonnaise, and mustard; season cornichon spread with salt and pepper. Brush one side of each slice of bread with butter and the other side with cornichon spread. Place on work surface spread side up.
  • Place two slices of each cheese on two slices of bread. Top cheese with onion jam and ham; top with remaining slices of bread, spread-side down.
  • Place sandwiches on griddle or cast-iron skillet over medium heat; weight down with a grill press or a second cast-iron skillet. Cook, turning occasionally, until bread is golden and cheese has melted. Serve immediately.

MINI GRILLED GRUYERE AND HAM SAMMIES WITH CORNICHONS



Mini Grilled Gruyere and Ham Sammies with Cornichons image

Yield about 4 dozen mini sammies

Number Of Ingredients 6

2 cups cornichon pickles, plus 24, halved lengthwise
12 slices Pullman loaf, or other tight crumb white bread
1 1/2 cups Dijon mustard
12 thick slices Gruyere
6 slices ham
2 sticks unsalted butter, room temperature

Steps:

  • In a food processor, finely chop 2 cups cornichons until they are a coarse paste.
  • Spread one side of each piece of bread with Dijon. Top each piece of bread with a slice of Gruyere. Place the ham on half of the pieces of the bread and cheese. Spread the cornichon paste on the other half of the pieces of bread and cheese.
  • Preheat a griddle or saute pan.
  • Close the sandwiches and press to secure. Butter the outsides of all the pieces of bread.
  • Place the sandwiches on the griddle or pan and cook until the bread is golden brown, 3 to 4 minutes. Turnover and repeat this process.
  • When the sammies are golden brown and crisp on each side, remove them from the griddle and neatly cut the crusts off the bread. Cut each crustless sandwich into 8 neat mini sammies.
  • Top each mini sammie with a cornichon half and secure it with a toothpick.

6 slices firm, thinly sliced close-textured bread, such as Pepperidge Farm
3 tablespoons sweet butter, softened
3 thin slices honey-cured ham
1/4 pound sliced Gruyere cheese, white cheddar, or Swiss

Steps:

  • To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
  • Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
  • Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

½ cup heavy cream
½ teaspoon salt
1 pinch cayenne pepper
1 pinch freshly grated nutmeg

2 tablespoons butter
½ teaspoon champagne vinegar

  • Combine egg, heavy cream or milk, salt, cayenne pepper, nutmeg, and lemon zest in a bowl. Mix until batter is thin and runny. (Add 2 tablespoons more milk or cream if needed.)
  • Toast bread until lightly browned. Add Havarti cheese to each slice. Divide ham between two sandwiches. Bring the two halves of the sandwich together and place into the batter. Flip several times to coat evenly; place on a plate. Repeat with second sandwich.
  • Fill a large saucepan with 2 inches of water and bring to a boil. In the meantime, melt butter in a skillet over medium heat. Cook sandwiches in the hot butter until outside is browned and cheese is melted, about 4 minutes per side.
  • Meanwhile, reduce saucepan heat to medium-low, pour in vinegar, and keep the water at a gentle simmer. Crack an egg into a small bowl, then gently slip it into the simmering water, holding the bowl just above the surface of water. Repeat with second egg. Cook until the egg white is firm and the yolk has thickened but is not hard, 2 1/2 to 3 minutes.
  • Transfer sandwiches to plates and dust with cayenne pepper. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place onto each sandwich. Dust with cayenne pepper.
