This is delicious, and I have made it many times since. We have used many types of fish as well as halibut, which I prefer.

- Preheat grill for medium heat and lightly oil the grate.
- Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
- Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

GRILLED HALIBUT
This grilled halibut is a great way to enjoy fish any day of the week. Topped with my garlic thyme butter, this seafood is perfectly tender and flaky without coming off the grill dry and bland. Bonus level? It's ready in less than 30 minutes.

- Preheat. Preheat your grill 375 degrees F.
- Prep the fish. Place the halibut fillet in a shallow baking dish. Combine all of the ingredients for the butter in a small bowl and pour over your halibut fillets.
- Season. Gently toss the fillet to ensure all sides are evenly coated in the butter. Season all sides with freshly cracked pepper and salt.
- Oil the grill. Moisten a paper towel with cooking oil. Pinch the paper towel between tongs and wipe it on the grates of your grill to prevent the halibut from sticking while it grills.
- Grill the halibut. Place the seasoned halibut directly on the grill grates. Close the lid and grill for 5-7 minutes. Flip them, close the lid, and grill until the internal temperature of the halibut reads 145 degrees F. You want your fish to be opaque and just start to flake.
- Serve. Remove the grilled halibut from the grill. Serve hot with lemon wedges.

- Preheat a grill for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper.
- Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate.
- Heat the oil in a skillet over medium heat. Add the garlic; cook and stir just until fragrant, about 2 minutes. Stir in the butter, remaining lime juice and cilantro. Serve fish with the cilantro butter sauce.

HALIBUT WITH HERBED BUTTER
Steps:
- For the herb butter, in a medium bowl, combine the butter, garlic, chopped herbs, and lemon zest plus salt and pepper to taste. Mix thoroughly and transfer to a small saucepan.
- Heat the olive oil in a grill pan over high heat. Sprinkle the halibut generously on both sides with salt and pepper. When the grill pan is hot, place the fish on the pan, and cook for about 3 minutes on one side.
- Meanwhile, heat the herb butter just until melted.
- Turn the fish, lower the heat to medium, and pour the melted herb butter over the fish. Cover the pan, turn off the heat, and allow to sit for 3 minutes.
- To serve, place the fish on a serving platter, spoon the herb butter over the fish, sprinkle with extra parsley, and serve hot.
GRILLED HALIBUT WITH LIME AND CILANTRO
A garlic-citrus marinade creates sensational fish on the grill. Simple salsa partners well for a topper.

- In shallow glass or plastic dish or resealable food-storage plastic bag, mix marinade ingredients. Add fish steaks, turning several times to coat with marinade. Cover; refrigerate 15 minutes, turning once.
- Heat gas or charcoal grill. Remove fish from marinade; discard marinade.
- Place fish on grill over medium heat. Cover grill; cook 10 to 20 minutes, turning once, until fish flakes easily with fork. Sprinkle with pepper. Serve with salsa.

- Thoroughly blend all ingredients in a medium sized mixing bowl. Reserve 2 tablespoons of the baste for garnish.
- Preheat grill to medium high. When grill is ready, baste halibut thoroughly before and during cooking. Grill approximately 4 to 6 minutes per side.
- Garnish with remaining Cilantro Cream.
