3/4 cup butter, softened
1 tablespoon lemon juice
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons garlic salt
1-1/2 teaspoons dried parsley flakes
3/4 teaspoon dill weed
1/4 teaspoon sugar
1/4 teaspoon pepper
4 halibut or swordfish steaks, 1-inch thick

Steps:

  • In a small bowl, combine the first eight ingredients; let stand for 30 minutes. Spread 1 tablespoon herbed butter over each halibut steak., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, butter side down, covered, over medium heat or broil, buttered side up, 4 in. from the heat for 5-1/2 minutes. , Spread 1 tablespoon herbed butter over each halibut steak; turn and spread with remaining butter. Grill or broil 5-6 minutes longer or until fish flakes easily with a fork.

1 avocado (preferably California)
fresh lemon juice for rubbing the avocado
2 teaspoons fresh lime juice plus 2 lime slices, halved, for garnish if desired
2 tablespoons water plus, if desired, additional to thin the sauce
1 1/2 tablespoons finely chopped scallion
1/8 teaspoon ground cumin
a pinch of cayenne, or to taste
2 tablespoons sour cream
two 1/2-pound halibut steaks, seasoned with salt and pepper
olive oil for brushing the fish
finely chopped seeded tomato for garnish

Steps:

  • Halve the avocado and reserve one half, rubbed with the lemon juice. In a blender puree the remaining avocado half, peeled, the lime juice, 2 tablespoons of the water, the scallion, the cumin, the cayenne, the sour cream, and salt and pepper to taste, scraping down the sides of the blender, until the sauce is smooth. Transfer the sauce to a small bowl and stir in enough additional water to thin the sauce to the desired consistency.
  • Grill the halibut, brushed generously on both sides with the oil, in an oiled ridged grill pan or on an oiled rack set about 6 inches over glowing coals for 4 to 5 minutes on each side, or until it just flakes. Arrange the steaks on 2 plates, nap them with the sauce, and garnish each serving with the reserved avocado, peeled and sliced thin, fanning the slices, and the lime slices. Sprinkle the plates with the tomato.

1 lemon
4 (5-6-ounce) skinless, boneless halibut fillets
Kosher salt, freshly ground pepper
2 pounds mixed heirloom tomatoes, sliced
1/2 cup sliced drained hearts of palm
Torn basil leaves (for serving)

Steps:

  • Prepare a grill for medium heat; oil grates. Finely grate 1 tsp. lemon zest directly onto halibut and lightly drizzle with oil; season with salt and pepper. Grill halibut, turning once, until browned on both sides and just opaque in the center, about 5 minutes.
  • Meanwhile, combine tomatoes, hearts of palm, and 1/4 cup oil in a medium bowl; squeeze in 2 Tbsp. juice from lemon and toss to combine. Season with salt and pepper.

2 small shallots, finely chopped (2 tablespoons)
1 large garlic clove, finely chopped
3 tablespoons olive oil
2 1/2 lbs plum tomatoes, chopped
6 stalks fresh lemongrass, tough outer layers removed and lower 6 inches coarsely chopped
3/4 teaspoon salt
1/2 teaspoon black pepper
6 (1-inch-thick) pieces halibut steak with skin (6 oz each)

Steps:

  • Cook shallots and garlic in 1 tablespoon oil in a 3- to 4-quart heavy saucepan over moderately low heat, stirring occasionally, until softened, about 3 minutes. Add tomatoes, lemongrass, salt, and pepper and bring to a boil, stirring. Reduce heat and cook at a bare simmer, stirring occasionally, until tomatoes fall apart and form a chunky sauce, about 20 minutes.
  • Force sauce through a medium-mesh sieve into a bowl, pressing hard on and then discarding solids. Season with salt and pepper.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderate.
  • Brush fish on both sides with remaining 2 tablespoons oil, then season with salt and pepper. Grill fish, covered only if using gas grill, on lightly oiled rack, turning over once, until just cooked through, 7 to 8 minutes total. Serve fish with sauce.

Steps:

  • Prepare barbecue (medium-high heat). Thread jalapeño and garlic clove onto metal skewer. Brush jalapeño, garlic, fish, and red bell peppers with oil; sprinkle with salt and pepper. Sprinkle fish with 1/2 teaspoon cumin and 1/2 teaspoon coriander. Grill fish, bell peppers,jalapeño, and garlic until vegetables are tender and charred and fish is just cooked through, about 4 minutes per side for fish and 8 minutes per side for vegetables. Grill lemon, cut side down, until charred, about 3 minutes. Transfer fish to plate and tent with foil to keep warm.
  • Peel charred parts of skin from bell peppers and cut stem from jalapeño, and transfer to blender, discarding peel and stem. Add garlic clove, remaining 1/4 cup oil, 1 1/2 teaspoons cumin, and 1 1/2 teaspoons coriander to blender. Process until coarse puree forms. Season sauce generously to taste with salt and pepper.
  • Place 1 fish fillet on each of 4 plates. Squeeze grilled lemon over. Spoon sauce over fish and serve.

Halibut is probably my favorite fish and the steaks hold up to grilling well and are a fast meal anytime. This recipe is a combination of lots of recipe browsing and mostly what makes my family happy- that is the real goal now, isn't it? Prep time includes marinade time.

3 tablespoons extra virgin olive oil
3 tablespoons vermouth
1 tablespoon fresh rosemary
24 ounces halibut steaks

  • Combine first 4 ingredients and mix well in a shallow dish (I use an 8x8 glass dish). Add Halibut, coat and marinate 30 minutes on each side.

1/4 cup maple syrup (can use 3 tablespoons brown sugar in place of maple syrup)

1 tablespoon soy sauce (can use low-sodium soy sauce)
1 pinch ginger powder (optional)
1/2 teaspoon black pepper
2 (1 lb) halibut steaks

Steps:

  • Place butter, maple syrup, garlic, lemon juice, soy sauce, ginger (if using) and black pepper in a saucepan; heat until the butter has melted (about 2 minutes) stirring constantly, then cool to room temperature.
  • Brush each and both sides of the steaks VERY generously with the soy sauce mixture, reserving some to brush on the fish while grilling.
  • Place into a shallow glass dish, cover and refrigerate for up to 4 hours.
  • Lightly oil the grill grate.
  • Cook the fish for about 5 minutes per side brushing with remaining sauce (discard any remaining sauce).
