18 fresh green king prawns
100 ml extra virgin olive oil
2 red chilies, finely diced
2 lemons, zested
2 cloves garlic, crushed
lime wedge, to serve

Steps:

  • Remove prawn heads and cut away the legs, then slit the backs of the prawns lengthwise with a sharp knife.
  • Devein, then place the prawns in a bowl.
  • Add the remaining ingredients and mix to combine.
  • Set aside for one hour to marinate.
  • Preheat BBQ or grill to high, add prawns to the flat plate (or if using the grill place prawns on a flat heat proof tray) and cook for 5 minutes, adding some marinade, until cooked.
  • Serve with lime wedges.

1 pound jumbo prawns
2 tablespoons cooking oil
2 tablespoons minced garlic
2 tablespoons thinly sliced lemon grass
5 fresh Thai chile peppers, sliced thin
1 shallot, sliced thin
2 kaffir lime leaves
1 tablespoon fish sauce, or to taste
1 lime, juiced
1 tablespoon Thai roasted chilli paste (nam prik pao)
1 tablespoon torn fresh mint leaves

Steps:

  • Preheat an outdoor grill for medium heat; lightly oil the grate.
  • Cook the shrimp on the hot grill until they are bright pink on the outside and the meat is no longer transparent in the center, 5 to 10 minutes. Arrange the prawns on a serving platter.
  • Heat the oil in a skillet over medium heat. Fry the garlic in the hot oil until brown, 7 to 10 minutes. Remove from heat and stir the lemon grass, chile peppers, shallot, lime leaves, fish sauce, lime juice, and chilli paste into the garlic; toss to combine. Spoon the sauce over the prawns. Garnish with the mint to serve.

20 prawns, shells on
2 tablespoons canola oil
Salt
Freshly ground black pepper
Habanero-Toasted Garlic Vinaigrette, recipe follows
Thyme sprigs, for garnish
1 tablespoon canola oil, plus 1/2 cup
6 whole cloves garlic, peeled
Salt
1/4 cup red wine vinegar
1 to 1 1/2 habanero chiles, seeded and chopped
2 teaspoons honey

Steps:

  • Heat the grill to high or heat a grill pan over high heat.
  • Toss prawns in the oil and season with salt and pepper. Grill for 2 minutes on each side or until just cooked through. Remove from the grill and immediately drizzle with the vinaigrette. Serve 5 prawns per person and garnish with thyme sprigs.
  • Habanero-Toasted Garlic Vinaigrette:
  • Heat grill. Heat 1 tablespoon of oil in a small saute pan over medium heat on the grates of the grill; add the garlic, season with salt and cook until golden brown on both sides.
  • Transfer garlic to a blender and add the vinegar, habanero, and honey and blend until smooth. With the motor running, slowly add the 1/2 cup oil and blend until emulsified.

1 pound of large prawns (headless)
2 tablespoons of very finely chopped garlic
2 tablespoons of very finely chopped cilantro
salt to taste
white pepper to taste
Approximately 1/8 cup of olive oil
Extra chopped cilantro for decorating

Steps:

  • Remove all but the last segment of the prawn shell and leave the tail on. Butterfly the prawns and devain. Add garlinc, cilantro, salt, white pepper, and olive oil. Mix and make sure that each prawn is well covered. Place in refrigerator for at least 1 hour to marinate. Grill prawns on barbeque, high direct heat for approximately 2 minutes per side, until the prawns curl up and turn pink. Place on platter and sprinkle with extra cilantro. Depending on the grill, may take more or less time. Total preparation time, including cooking, 20 minutes max.

HAWAIIAN GARLIC BUTTER PRAWNS WITH GRILLED PINEAPPLE AND PICKLED SERRANOS



Hawaiian Garlic Butter Prawns with Grilled Pineapple and Pickled Serranos image

One 14-ounce can coconut milk
4 cups chicken stock
4 cups rice
Kosher salt and freshly ground black pepper
3 pineapples
16 ounces rice wine vinegar
1/4 cup sugar
6 serrano peppers
1 clove garlic, minced
2 cups (4 sticks) unsalted butter
5 or 6 lemons
1 cup chopped fresh cilantro
1 cup chopped fresh parsley
2 pounds prawns, peeled and deveined
2 bunches arugula

Steps:

  • Bring the chicken broth and coconut milk to a boil in a medium saucepan. Add the rice, then cover, reduce the heat and cook for 20 to 30 minutes. Add salt and pepper to taste. Set aside.
  • Slice the pineapples 1/2- to 3/4-inch thick and grill for 5 to 7 minutes per side. Let cool, then cut away and discard the rind and core. Cut into large pieces and set aside.
  • Combine the vinegar, sugar and 1/4 cup salt in a bowl. Thinly slice the serranos and add to the pickling liquid. Let sit at room temperature for 20 to 40 minutes. Drain.
  • Add the garlic and butter to a large skillet over medium heat; cook until the butter is melted and the garlic has browned. Stir in the juice of 3 of the lemons and the cilantro and parsley. Add the prawns and cook just halfway through. Remove the prawns from the garlic butter, thread onto skewers and grill until fully cooked. Meanwhile, continue to cook the garlic butter sauce for another few minutes and then strain.
  • Toss the arugula with the juice of the remaining 2 lemons and some salt.
  • To serve: Plate a small portion of arugula, add 1/4 cup or less of coconut rice, and top with 3 prawns. Spoon over 2 tablespoons of the garlic butter sauce, then add a few pieces of grilled pineapple and pickled serrano.
