GRILLED FRUIT KABOBS
Steps:
- Preheat the grill to high heat. Soak the skewers in water for 20 minutes, to prevent them from burning while grilling the skewers
- To make the fruit kabobs, thread two pieces each pineapple, strawberry and cantaloupe onto skewer. Repeat process to assemble as many skewers as you'd like to make.
- Spray with the coconut oil spray and brush maple syrup all over the skewers.
- Place the fruit skewers on the grill in a single layer. Grill for 2-3 minutes on each side, or until lightly browned and tender, about 10 minutes total.
- Serve immediately, dipped with vanilla yogurt, if desired.

SHISHITO PEPPERS WITH CHILI AND LIME

- Heat the oil in a large saute pan over medium-high heat until hot, then add the shishito peppers. Cook, stirring frequently to allow even charring, until softened slightly and blistered in spots, 3 to 5 minutes.
- Meanwhile, stir together the chili powder, sesame seeds, zest, 2 teaspoons salt and some black pepper in a small bowl. Combine ponzu and lime juice in another bowl.
- Place peppers in a large bowl and toss with the spice mixture and about half the ponzu-lime mixture, stirring well to evenly coat the peppers. Place on a serving platter, finish with flaky salt and serve with the remaining sauce alongside.

CHILI-LIME FRUIT SALAD

- Toss the pepitas with the olive oil, 1/4 teaspoon of the chili powder and 1/4 teaspoon salt. Add to a small skillet and heat over medium heat, stirring frequently, until toasted and turning brown in some spots, 5 to 7 minutes.
- Use a melon baller to scoop the watermelon, honeydew and cantaloupe into a large bowl. Mix the lime zest and juice, honey, remaining 1/2 teaspoon chili powder and 1/4 teaspoon salt in a medium bowl. Pour the dressing over the melon and toss until well coated. Fold in the pepitas and serve immediately.

- Add all the cut fruit to a large serving bowl. Add the lime zest, juice, and chili powder to a small bowl and whisk to combine. Pour the chili-lime mixture over the fruit and toss to combine. Serve immediately or refrigerate until ready to serve.
GRILLED FRUIT SKEWERS WITH SWEET YOGURT SAUCE
Steps:
- If you are using wooden skewers, soak them in water for at least 30 minutes.
- In a small pot combine the brown sugar with 1/4 cup water, cinnamon and orange zest. Bring to a boil over medium heat. Remove from heat and set aside to cool to room temperature.
- Preheat the grill or grill pan over low heat.
- Thread 2 pieces of each type of fruit onto each skewer. Grill the skewers until the fruit is warm and lightly charred about 6 minutes giving the skewers a quarter turn every 1 1/2 minutes. Make sure to brush with the brown sugar syrup after each turn.
- While the fruit is grilling, make the dipping sauce. Whisk together the yogurt, orange juice, and 1 tablespoon of the brown sugar syrup in a serving bowl. Reserve 2 tablespoons for the Online Round 2 recipe Sweet and Spicy Chicken Wraps.
- Arrange the skewers on a serving platter and serve with the dipping sauce on the side.
GRILLED FRUIT SKEWERS WITH SPICY MAPLE CUMIN GLAZE

- Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
- Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
- Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.
