3 tablespoons extra-virgin olive oil, plus more for grill
2 garlic cloves, minced
Coarse salt and ground pepper
1 loaf crusty bread (10 ounces), such as ciabatta, sliced in half lengthwise
6 ounces fresh mozzarella, thinly sliced
1 medium eggplant (8 ounces), cut lengthwise into 1/4-inch slices
2 medium tomatoes, cut into 1/2-inch slices
14 fresh basil leaves

Steps:

  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. In a small bowl, combine garlic with 1 tablespoon oil; season with salt and pepper. Brush garlic oil on cut sides of bread and grill until lightly toasted on both sides, 1 to 2 minutes. Top bottom half with cheese.
  • Brush eggplant with 1 tablespoon oil and season with salt and pepper. Grill until tender and lightly charred, 12 to 15 minutes, flipping once. Layer eggplant on cheese. Brush tomatoes with 1 tablespoon oil and season with salt and pepper. Grill until lightly charred, 2 to 3 minutes, flipping once. Layer tomatoes on eggplant, top with basil, and sandwich with top half of bread. Cut crosswise into 4 pieces and serve.

This quick and easy grilled eggplant sandwich is a healthy substitute for a burger, and it tastes great! I cooked the eggplant and other veggies in a grill press to save time, but you could also use a grill pan or barbecue grill to prepare them.

cooking spray
1 purple eggplant, peeled and cut into 1/2-inch slices
2 tablespoons grated Parmesan cheese
¼ teaspoon ground black pepper
¼ teaspoon dried oregano
1 sweet onion, cut in 1/4-inch slices
1 sweet red bell pepper, broadly sliced
2 sandwich rolls
2 slices provolone cheese

Steps:

  • Preheat a panini press.
  • Spray 1 side of each eggplant slice with cooking spray. Turn slices over and sprinkle with Parmesan cheese, black pepper, and oregano, then spray with cooking spray. Place eggplant slices in the panini press and close the lid. Add 2 slices of onion and 4 pieces of red bell pepper to the panini press and close the lid. Cook veggies for about 5 minutes.
  • Meanwhile, toast sandwich rolls and place on individual serving plates.
  • Place 1 slice of provolone on the bottom half of each roll, then add grilled eggplant, onion, and bell pepper slices. Cover each with top half of the roll and enjoy.

Grilled Eggplant, Red Pepper, Goat Cheese Pumpernickel Sandwich image

I love these - these are so easy and such great flavor. I get a nice loaf of fresh pumpernickel and cut thick slices. Add some very thin sliced red onion, grilled eggplant, crumbled goat cheese, fresh basil, garlic aioli and roasted red peppers. Just perfect! I like to press it down lightly as it grills simply brushed with a little oil on the grill and it is a perfect sandwich. Served with a salad, soup or fresh grilled fries.

8 slices of thick fresh pumpernickel bread
1 eggplant, cut into rounds (I like to use the Japanese eggplant that do not need to be peeled and much sweeter -1/2-inch thick)
1 tomatoes, sliced
1/2 cup red roasted red pepper (jarred peppers work fine for this)
8 ounces goat cheese, crumbled
1/3 cup basil leaves, rough chopped
1 red onion (medium, cut in half and then thin sliced)
1 tablespoon olive oil, to roast the eggplant
salt
pepper
1/3 cup mayonnaise
1 teaspoon garlic, minced
1/2 teaspoon parsley
1/2 teaspoon lemon juice

Steps:

  • Aioli -- Mix the mayonnaise, garlic, parsley and lemon in a small bowl. Cover and refrigerate until later.
  • Eggplant -- Drizzle the eggplant with olive oil, salt and pepper. Roast at 425 degrees on a cookie sheet lined with parchment paper or foil 10-12 minutes on the middle shelf until tender. Remove and let cool.
  • Sandwich -- Spread the aioli on the bottom slice of the bread and top with the red onion, then the eggplant, tomato, basil, goat cheese, and red peppers. Top with another slice of bread also slathered with the aioli.
  • Grill -- Season your grill pan with a little olive oil and just grill the sandwich on each side until golden brown. It only takes a few minutes.
  • ENJOY! a nice light, bit healthier sandwich.

1 small garlic clove, chopped
1/4 cup low-fat mayonnaise
1 teaspoon lemon juice
1 medium eggplant (about 1 pound)
3 medium portobello mushroom caps, gills removed
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
8 slices whole wheat bread, lightly grilled
2 cups arugula or 2 cups spinach, stemmed and chopped if large
1 large tomatoes, sliced

Steps:

  • Preheat grill to medium-high.
  • Mash garlic into a paste on a cutting board with the back of a spoon. Combine with mayonnaise and lemon juice in a small bowl. Set aside.
  • Coat both sides of eggplant rounds and mushroom caps with cooking spray and season with salt and pepper. Grill the vegetables, turning once, until tender and browned on both sides: 2 to 3 minutes per side for eggplant, 3 to 4 minutes for mushrooms. When cool enough to handle, slice the mushrooms.

•1 large eggplant, (1 1/4-1 1/2 pounds), cut into 12 1/4-inch-thick rounds
•Canola or olive oil cooking spray
•1/4 teaspoon salt
•3 tablespoons finely shredded Parmesan, or Asiago cheese
•1/2 cup shredded part-skim mozzarella cheese
•4 small pieces focaccia bread, or rustic Italian bread
•2 teaspoons extra-virgin olive oil
•5 ounces baby spinach
•1 cup crushed tomatoes, preferably fire-roasted
•3 tablespoons chopped fresh basil, divided

Steps:

  • Preparation 1.Preheat grill to medium-high. 2.Place eggplant rounds on a baking sheet and sprinkle with salt. Coat both sides lightly with cooking spray. Combine Parmesan (or Asiago) and mozzarella in a small bowl. Brush both sides of focaccia (or bread) with oil. 3.Place spinach in a large microwave-safe bowl. Cover with plastic wrap and punch several holes in the wrap. Microwave on High until wilted, 2 to 3 minutes. Combine tomatoes and 2 tablespoons basil in a small microwave-safe bowl. Cover and microwave until bubbling, about 2 minutes. 4.Place all your ingredients on the baking sheet with the eggplant and take it to the grill. Grill the eggplant slices until brown and soft on both sides, 2 to 3 minutes per side. Grill the bread until toasted, about 1 minute per side. Return the eggplant and bread to the baking sheet. Reduce grill heat to medium. 5.Place 1 eggplant round on top of each slice of bread. Layer 1 tablespoon tomatoes, 1 tablespoon wilted spinach and 1 tablespoon cheese on each slice of eggplant. Repeat with the remaining eggplant, sauce, spinach and cheese. Sprinkle each stack with some of the remaining basil. Place the baking sheet on the grill, close the lid and grill until the eggplant stack is hot and the cheese is melted, 5 to 7 minutes.

1-2 large eggplant (cut 8 equal slices)
1 jar(s) red peppers, sliced (4) equal pieces)
1 large fresh portabello mushroom cap, sliced
4 slice turkey bacon cooked, cut in 1/2
4 oz mozzarella cheese, low-fat
4 Tbsp olive oil, extra virgin
1 Tbsp mixed herbs, dried
kosher salt & pepper to taste

Steps:

  • 1. Slice eggplant. Sprinkle salt on both sides and place on paper towels. This will draw out the water. After 15 minutes, pat dry the eggplant. Brush egglant with 1 tbsp of olive oil. Sprinkle both side with herbs, salt and pepper.
  • 2. On a hot grill pan, add 1 tbsp olive oil. Grill eggplant about 3-4 minutes on each side. Remove from pan.
  • 3. Add 1 tbsp olive oil to grill pan. Add sliced mushrooms and brown on both sides. Remove from pan.
  • 4. Add 1 tbsp olive oil to grill pan. Grill red pepper3 about 2-3 minutes on each side. Remove from pan.
  • 5. In a oven proof pan place 4 slices of eggplant followed by cheese, bacon, mushrooms, red pepper and more cheese. Broil on high until the cheese has melted. Take out of oven and place eggplant slice on top. Enjoy
