We try to cut back on our red meat and our favorite subs are eggplant and Portebello mushrooms. This is a delicious eggplant one. The freshest ingredients really make a difference,especially the mozzarella and basil.

1/4 cup Italian dressing (your favorie or homemade with olive oil)
12 ounces baby eggplants, cut in 1/2 inch thick lengthwise slices
2 large crusty rolls, split
4 -6 slices fresh mozzarella cheese (or deli,adjust depending on your taste)
1 roma tomato, sliced thin
1/4 cup fresh basil leaf

Steps:

  • Prepare a moderately hot grill.
  • On a platter, pour 2 T dressing over eggplant slices, (I brush the slices to cut back on calories).
  • Grill eggplant over moderate heat, brushing with more dressing, until charred and soft on the inside, about 5 minutes.
  • Meanwhile, brush cut sides of rolls with remaining dressing, place around edge of grill, and toast until a golden brown, about 2 minutes.
  • Layer rolls with eggplant, cheese, tomato, and basil leaves and replace tops.

1 large eggplant, sliced into 1/4-inch-thick rounds
Kosher salt and freshly ground black pepper
1 large ciabatta loaf, split
3/4 cup extra-virgin olive oil
1 bunch scallions, trimmed
1 clove garlic
1 cup hummus
One 4-ounce block feta cheese, sliced 1/8 inch thick
1 cup lightly packed arugula
1/2 cup fresh basil leaves
1/4 cup fresh dill fronds
1 lemon, halved

Steps:

  • Preheat a grill or grill pan over high heat.
  • Season the eggplant with salt on both sides and let sit for 5 to 10 minutes while you prepare the other ingredients.
  • Place the ciabatta on a rimmed baking sheet and brush the split sides with some of the olive oil and season with salt. Add the scallions and coat with some of the olive oil and season with salt.
  • Pat the eggplant dry and drizzle both sides with some of the olive oil. Grill the eggplant until softened and charred, 5 to 6 minutes per side.
  • Grill the scallions until softened and charred, 2 to 3 minutes per side. Cut the charred scallions into 1/4 inch pieces.
  • Grill the ciabatta split-side down until golden and crispy, 1 to 2 minutes.
  • To build the sandwich, rub the garlic on the split sides of the toasted ciabatta. Spread the hummus on the split sides. Add the eggplant and scallions to the bottom half of the ciabatta. Top with the feta, arugula, basil, and dill. Squeeze lemon over the arugula and herbs, then sprinkle with black pepper. Close the sandwich, slice, and enjoy!

extra virgin olive oil

8 slices country sliced bread
2 cups arugula leaves
8 ounces thinly sliced mozzarella cheese

Steps:

  • Brush eggplant slices with oil on both sides and place in a George Foreman grill--or panini grill-- cook 4 minutes, remove.
  • Brush bread slices with oil.

2 ciabatta rolls, split
4 slices eggplant (1/2 inch thick)
1 medium heirloom tomato, cut into 1/2-inch slices

No bread in this dish, so it's a good meal for someone watching carbs. This is from The Weber recipe collection. Because you are grilling, the cook time is not completely "passive time". Makes 8 appetizers or 4 lunches.

2 medium red bell peppers
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
2 globe eggplants, about 1 pound each, trimmed
prosciutto di Parma, about 8 thin slices
8 slices mozzarella cheese, each 1/4 inch thick
8 fresh basil leaves
extra virgin olive oil

Steps:

  • Grill the bell peppers over Direct Medium heat until they are blackened and blistered all over, 12 to 15 minutes, turning occasionally.
  • Place the peppers in a medium bowl and cover with plastic to trap the steam.
  • Set aside for at least 10 minutes, then peel the skin and discard the stems and seeds.
  • Place the peppers in a food processor with 1 tablespoon oil, and the salt and pepper.
  • Process until smooth, scraping down the sides as needed.
  • Cut each eggplant crosswise into 8 slices, each about 1/2 inch thick.
  • Lightly brush or spray both sides with oil.
  • Grill over Direct Medium heat until the underside is well marked, 3 to 4 minutes.
  • Transfer half of the slices to a tray, with the grilled sides facing up.
  • Turn the remaining slices over and grill until well marked on both sides, 3 to 4 minutes more.
  • Place a tablespoon of the red pepper mixture in the center of the grilled side of each eggplant slice on the tray.
  • Place a slice of prosciutto (folded to fit), a slice of the mozzarella, and a basil leaf on top of the red pepper mixture.
  • Top each "sandwich" with a slice of the eggplant that has been grilled on both sides.
  • Use a wide spatula to place the "sandwiches" on the cooking grate, uncooked side down, and grill over Direct Medium heat until the cheese is softened and the sandwiches are heated through, 2 to 3 minutes.

8 1/2-inch-thick eggplant slices

2 large tomatoes, coarsely chopped

Steps:

  • Spray grill with oil spray and prepare barbecue (medium heat). Spray eggplant on both sides with oil spray; sprinkle with salt and pepper. Grill until tender, turning occasionally, about 10 minutes.

This summer I had an abundant crop of eggplant, and expanded my usage of the vegetable. This is served on a nice crispy Italian bread or French baguette. Nice for a weekend lunch or quick dinner.

1 medium eggplant
3 tablespoons olive oil, divided
2 medium purple onions, cut into very thin strips
3 garlic cloves, minced
1/4 teaspoon black pepper, freshly ground
1 dash dried thyme
2 plum tomatoes, seeded and cut into very thin strips
2 tablespoons fresh parsley, chopped
1 teaspoon white vinegar
1 loaf Italian bread (16 oz) or 1 French baguette
1 garlic clove, cut in half
6 ounces mozzarella cheese, thinly sliced

Steps:

  • Line a baking sheet with aluminum foil; lightly oil the foil Cut the eggplant lengthwise into 1/2 inch thick slices. Place on the prepared baking sheet; brush with 1 tbsp olive oil. Broil 5 1/2 inches from the heat with the oven door partially opened for 6 to 7 minutes or until tender and golden -- watch it so it doesn't burn. Coarsely chop the eggplant and set aside.
  • Saute onion, garlic, black pepper, and thyme in the remaining 2 tbsp olive oil in a large skillet over medium-high heat, stirring constantly, until tender. Stir in the reserved eggplant, tomatoes, parsley, and vinegar. Remove from heat and set aside.
  • Cut the bread in half lengthwise; rub each cut side with the halved garlic clove; place on an ungreased baking sheet. Broil until lightly browned. Place the reserved eggplant mixture on the bottom half of the toasted bread; top with mozzarella cheese slices. Broil 5 1/2 inches from the heat 1 to 2 minutes or until the cheese melts. Cover with the top half of the bread.
  • Cut into 4 portions, and serve immediately.

2 large Italian eggplants
Good-quality olive oil
1/2 pound fresh whole-milk mozzarella
3 large ripe tomatoes, red or yellow or a combination of both
1 bunch fresh basil
Balsamic vinegar
Kosher salt and freshly ground pepper

Steps:

  • Prepare a barbecue (or preheat a broiler). Cut the eggplants into slices about 1/2-inch thick. Spread on a baking sheet and brush with olive oil on both sides. Set aside.
  • Cut mozzarella in half crosswise, then slice each half about 1/4-inch thick to create half-moon shaped pieces. Slice tomatoes in the same manner. Arrange tomatoes and mozzarella decoratively around the edge of a large serving platter.
  • Place eggplant slices on barbecue (or place on baking sheet in broiler) and cook, turning once, until nicely charred on each side; the eggplant should almost caramelize. Arrange the cooked eggplant down the center of the serving platter, surrounded by the tomatoes and mozzarella. Pluck about 12 large leaves from the basil bunch, stack them, roll them up like a cigar, then slice crosswise into thin shreds (?chiffonade?). Scatter the basil shreds over the vegetables and cheese, then drizzle balsamic vinegar and more olive oil over all. Sprinkle with salt and pepper, to taste, and let stand until eggplant is at room temperature.
