Steps:
- Wisk together the Brown Sugar, Pepper, Garlic Powder, Onion Powder, Water, Worcesteshire Sauce and Soy Sauce. Then wisk in the Mustard. Reserve 1/4 cup of the marinade.
- Trim the pork ribs and place in a sealable plastic bag in a large bowl.
- Pour in the marinade remove the excess air and seal the bag. Let the ribs marinade at room temerature for 30 minutes.
- Heat up the grill and clean the grates.
- Mix the reserve marinade with the barbecue sauce.
- Remove the meat from the marinade and discard the remaining marinade.
- Brush the meat with the marinade & Barbecue sauce and grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill and enjoy.

Steps:
- Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
- Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
- Preheat grill for medium-low heat and lightly oil the grate.
- Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

- Preheat oven to 325°. Place ribs in a shallow roasting pan. Bake, covered, 1-1/2 to 2 hours or until meat is tender. Meanwhile, in a small saucepan, combine the remaining ingredients. - Brine: In a medium saucepan over medium-high heat, combine water, brown sugar, salt peppercorns and garlic powder. Bring to a simmer, stirring until the sugar and salt have dissolved. Add ice and stir until completely cooled. Transfer brine to a large sealable plastic bag. Add ribs. Seal the bag and refriderate at least 1 hour, or up to 8 hours. Barbecue sauce: In a small bowl, whisk together tomato paste, brown sugar, lemon juice, salt, garlic powder, ginger, cumin, mustard powder, honey, sesame oil and water. Cooking: When ready to cook, heat a grill to medium high. Coat the grate with oil or cooking spray. Drain and discard the brine. Place ribs on the grill. Brush tops of the ribs with the barbecue sauce, then cover the grill and cook 5 minutes. Use tongs, flip the ribs, then brush the tops with additional barbecue sauce. - Heat oil in 1 1/2-quart saucepan over medium heat. Cook, rosemary and garlic in oil, stirring frequently, until garlic is golden; remove from heat. Stir in wine, sugar, salt and pepper.

GRILLED COUNTRY STYLE RIBS WITH PINEAPPLE-CHILI SALSA
Steps:
- Marinate ribs in a large plastic zip bag with the italian dressing for at least one hour. Preheat grill to approximately 400. Slice the lower 2 inches off the fresh pineapple, slice off from remaining fruit three 1/2" slices. Core/skin them, then grill for approx. 5 minutes per side. Some charring is ok, but don't burn them. Remove from the grill, dice, and place in a bowl with remaining ingredients. Watch the cilantro, as a little goes a long way! Remove ribs from marinade and remove excess from the meat. Grill at least 5-7 minutes per side until done (use thermometer, as they are usually pretty thick). Arrange on a plate and spoon on liberal amounts of salsa. Side note: Try serving with rice pilaf or country style smashed potatoes (skin on). You may vary the heat and associated flavor from the peppers by experimenting with different varieties.

We're having company from Brazil - the land of outdoor grilling. Country ribs were on sale locally, so this seemed a no-brainer! I happened to have those 2 types of chili powder - other can be used instead. Same with the salt.

- 1. In a small bowl, measure and blend together all the seasonings. Rub into all surfaces of country ribs. Put into resealable bag or dish covered with plastic wrap. Refrigerate for 8 hours or overnight. (Less time will work, flavors won't be as intense)
- 2. Let the ribs sit at room temperature for 1 hour before cooking. Heat a grill pan or outdoor grill to medium (about 350°F to 450°F). If using charcoal, let coals turn gray and spread out.
- 3. Place the ribs on the grill with the larger, flatter side down, cover the grill, and cook until the pork is browned and crusty on the bottom, about 5 to 7 minutes. Flip, cover, and cook until it's browned and crusty on the other side, about 5 to 7 minutes more. Rotate the ribs so that they are resting on a thinner side (you may need to prop them up against one another), cover, and cook until browned and crusty, about 4 to 6 minutes. Flip to the other thinner side, cover, and cook until browned and crusty or an instant-read thermometer inserted into the thickest part of the thickest rib registers 145°F, about 4 to 6 minutes more. Transfer to a clean serving platter, tent loosely with foil, and let rest about 5 minutes before serving.
