WHOLE CITRUS MARGARITAS

4 navel oranges, cut into 3/4-inch pieces
2 lemons, cut into 3/4-inch pieces
2 limes, cut into 3/4-inch pieces
1/2 cup superfine sugar
1/4 cup Cointreau
1/4 cup Triple Sec
1 1/2 cups good quality tequila (recommended: 100 percent agave)
10 cups ice
Fine salt, for the rims of the glasses
10 lime wedges

Steps:

  • Put the oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add the sugar and stir to dissolve. Then stir in the Cointreau, Triple Sec, and tequila.
  • To serve: Pour salt onto a small plate. Run a lime wedge around the top of each glass and dip the glass in the salt. Fill each glass halfway with ice and pour in the juice mixture. Garnish with a lime wedge and serve.
  • Chef's note: Farm freshness is the key here. Look for the citrus that is mostly in season and adjust the recipe. Tangerines, Meyer lemons, and key limes all have amazing flavor if you can find them.

GRILLED CITRUS MARGARITA

8 to 10 large limes
5 large lemons
4 oranges
1 1/4 cups superfine sugar (or caster sugar), plus more for rimming glasses
3/4 cup tequila, or more if desired

Steps:

  • Preheat a grill on medium-high heat. Slice 2 of the limes and 1 of the lemons into rounds. Set aside.
  • Cut the oranges and the remaining 6 limes and 4 lemons in half crosswise. Pour 3/4 cup of the sugar in a bowl. Dip the cut side of each fruit in the sugar to lightly coat.
  • Grill the sugared fruit over medium-high heat until caramelized with char marks. When cool enough to handle, use a fork or citrus reamer to juice the grilled citrus. There should be about 2 cups of grilled citrus juice.
  • Stir the remaining 1/2 cup sugar into the juice and add the tequila, stirring to combine. Refrigerate until chilled.
  • When ready to serve, pour the drink mix into a large pitcher of ice. Add the sliced citrus rounds and serve over ice in glasses rimmed with sugar.

Kosher salt (optional)
1 lime, cut into 6 wheels
1 1/4 cups añejo tequila
6 tablespoons fresh lime juice (from about 2 limes)

Steps:

  • Prepare a grill or grill pan for medium-high heat. Grill orange halves, cut side down, until well browned, 8-10 minutes. Let cool slightly, about 10 minutes. Juice oranges, then strain and discard pulp (you should have about 1 1/2 cups juice).
  • Pour salt onto a small plate, if using. Rub rim of an old-fashioned or rocks glass with lime wheel, then dip into salt.Stir orange juice, tequila, lime juice, and 8 cups ice in a pitcher. Divide cocktails among glasses and garnish with lime wheels.
