In this easy recipe, grilled chicken is combined with pasta and spinach. Use pasta shells, macaroni, or similar pasta in this yummy chicken dish.

20 ounces fresh spinach
1 cup chicken broth (plus more, as needed)
6 ounces dry pasta shells (or other similar pasta)
1 to 2 teaspoons olive oil
4 medium cloves garlic (minced)
1/2 teaspoon ground nutmeg
Dash salt (or to taste)
Dash freshly ground black pepper (or to taste)
1 pound chicken breast (boneless halves, grilled, cut into 1-inch cubes)
1/2 cup Parmesan cheese (grated, plus more for serving)

Steps:

  • Gather the ingredients.
  • In a medium saucepan over medium heat, cook the spinach in the chicken broth, adding the spinach a little at a time as it wilts.
  • Drain the spinach in a colander, reserving the broth. Press the spinach to squeeze out as much excess liquid as possible.
  • Cook pasta in a medium saucepan of boiling salted water according to package directions.
  • Using a colander, drain the pasta.
  • Preheat a heavy skillet over medium heat. When the skillet is hot, add the oil and garlic. Cook, stirring constantly, until the garlic is tender, but not browned.
  • Add the spinach and nutmeg. Taste and add salt and pepper.
  • Add the grilled chicken chunks to the spinach and combine.
  • Stir and add a small amount of the reserved cooking broth. Continue to cook, stirring and turning, until hot, adding broth as necessary.
  • Add the hot drained pasta shells to the spinach mixture and blend well.
  • Sprinkle with the 1/2 cup of Parmesan cheese and serve immediately. Pass more Parmesan cheese at the table.
  • Enjoy.

8 ounces pasta (fusilli, rotini, etc.)
1 1/2 to 2 cups spinach leaves
1/2 red bell pepper
12 grape tomatoes (or cherry tomatoes , halved)
1/4 cup diced red onion
1 medium clove garlic (finely minced)
2 cups chopped chicken (cooked or canned)
1 to 1 1/2 cups mayonnaise
1 tablespoon white wine vinegar
2 tablespoons lemon juice
1 teaspoon Dijon or a favorite gourmet mustard
1/8 teaspoon ground black pepper
1/2 teaspoon dried leaf basil
salt (to taste)

Steps:

  • Gather the ingredients.
  • Cook the pasta in boiling salted water following the package directions; drain and rinse well. Set aside to cool.
  • Meanwhile, chop the spinach leaves coarsely and diced the red bell pepper half.
  • Toss the cooled and drained pasta with the spinach, red bell pepper, tomato halves, onion, garlic, and chicken.
  • Combine 1 cup of the mayonnaise with wine vinegar, lemon juice, mustard, pepper, and basil.
  • Toss the dressing mixture with the pasta mixture. Add more mayonnaise, if needed. Taste and add salt, as needed. Refrigerate for at least 2 hours before serving time for best flavor.

1/4 cup red wine vinegar
2 tablespoons olive oil
4 boneless skinless chicken breasts (about 1 lb)
8 cups torn fresh spinach
1 bag (10 oz) Cascadian Farm® frozen organic red raspberries, thawed, drained
1/2 cup thinly sliced red onion
1/4 cup sliced almonds, toasted

Steps:

  • Heat gas or charcoal grill. In small bowl, stir together fruit spread, vinegar and oil; reserve 1/3 cup for glaze. Set remaining mixture aside.
  • Carefully brush grill rack with oil. Place chicken on grill over medium heat. Brush chicken with reserved glaze. Cover grill; cook 5 minutes. Turn chicken over; brush with glaze. Cover grill; cook 3 to 7 minutes longer, brushing occasionally with glaze, until juice of chicken is clear when center of thickest part is cut (170°F).
  • Meanwhile, on 4 individual dinner plates, arrange spinach, raspberries, onion and almonds. Cut each grilled chicken breast into slices; place on top of salads. Drizzle with remaining fruit spread mixture.

1/2 lb pasta (I use whole wheat penne)
3 garlic cloves, chopped
2 tablespoons McCormick grill seasoning (such as Montreal Steak Seasoning)
2 teaspoons hot sauce
3 tablespoons Worcestershire sauce
5 tablespoons red wine vinegar
1/2 cup extra virgin olive oil (divided)
2 large onions (sliced 1in thick)
6 chicken breasts (thin cut cutlets)
2 tablespoons Dijon mustard
1/4 cup parmigiano-reggiano cheese, grated (or Pecorino Romano)
2 arugula (washed and coarsely chopped)
1 small radicchio (a small head cored and coarsely chopped)
2 cups fresh basil (about 20 leaves, coarsely chopped)
3 celery ribs, thinly sliced
1 fresh mozzarella ball (I use a fresh ball cut into bite sized pieces)
1 pint grape tomatoes (left whole if small, cut in halves or quarters if larger)
salt (to taste)
pepper (to taste)

Steps:

  • Heat a gill pan or outdoor grill to high heat.
  • Bring large pot of water to boil and cook pasta according to package directions until al dente.
  • In a small bowl, combine garlic, grill seasoning, hot sauce, Worcestershire sauce, and 2 tablespoons of th vinegar and mix.
  • Whisk in 1/4 cup olive oil and divide the mixture into 2 bowls.
  • Add the sliced onion to one and the chicken to the other. Toss to coat both thoroughly and marinate for a few minutes.
  • In a salad bowl, combine mustard and remaining 2 tablespoons vinegar with a little salt and pepper.
  • Whisk in the remaining olive oil and then add the grated cheese.
  • Once pasta is cooked and drained, add it to the salad bowl and toss to coat.
  • Grill the onion slices until well marked, about 2-3 minutes.
  • Grill the chicken for 3 to 4 minutes on each side.
  • Remove both onion and chicken from grill to cutting board and allow to cool for a few minutes.
  • Coarsely chop the onions and cut the chicken into slices.
  • Add them to the pasta.
  • Add the arugula, radicchio, basil, parsley, celery, mozzarella and tomato; toss thoroughly.
  • Season with salt and pepper to taste.
  • ** We aren't big fans of arugula and radicchio, so we use romaine and iceberg lettuce. we've also kept the chicken, pasta and onion separate from the salad and had as 2 dishes - Ijust make a little extra dressing.

1 tsp. zest and 1/4 cup juice from 1 lime
2 Tbsp. GREY POUPON Savory Honey Mustard
1 clove garlic, minced
1/8 tsp. ground black pepper
1 lb. boneless skinless chicken breasts, grilled, sliced
3 cups whole wheat rotini pasta, cooked
1 red bell pepper, chopped
1 pkg. (10 oz.) frozen chopped spinach, cooked
1 Tbsp. chopped fresh thyme

A main dish salad that is a summer staple in our house. Even our 4-year old loves it! It's refreshing, yet filling. I serve it with crusty rolls and chocolate pie for dessert. Also, use leftover chicken if you have some to make it that much easier. I've also found that this tastes great even without the chilling time. Hope you like this as much as we do!

8 ounces bow tie pasta
4 cups torn fresh spinach
1/2 cup halved green grape
1/2 cup dried cranberries
1/4 cup sliced green onion
1/2 cup light mayonnaise
3 tablespoons seasoned rice vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1 (11 ounce) can mandarin oranges, drained

Steps:
