ASIAN CHICKEN SALAD
This Asian Chicken Salad is crunchy, fresh, and packed with BIG flavors! Shredded slaw, carrots, edamame, crunchy chow mein noodles, and soy-marinated chicken on top. YUM!

Steps:
- Toss all salad ingredients - green onions, lettuce, almonds, carrots, cilantro, edamame, and sesame seeds.
- Whisk together the soy sauce, garlic, ginger, sugar, and seasoning. Marinate the chicken in the sauce for at least 1 hour. Bake chicken in the sauce at 400 degrees, for about 20-30 minutes, turning occasionally, until cooked through. When chicken is cooled, shred and add to the salad.
- Toss with dressing of your choice and chow mein noodles just before serving.

DELICIOUS ASIAN CHICKEN SALAD WITH CHOW MEIN NOODLES
A delicious and easy to make salad, I sometimes add in a tablespoon of peanut butter to the dressing, plan ahead the dressing must refrigerate for a couple of hours in advance to blend flavors, it may be doubled if desired -- the salad may be prepared in advance but do not add in the dressing or orange segments until just before serving, prep time does not include cooking the chicken, all amounts may be adjusted to taste :)

- Mix all dressing ingredients until well combined; refrigerate for a minimum of 1 hour.
- In a large bowl combine the lettuce with chicken, green onions, dry noodles, carrot and slivered almonds or chopped peanuts; mix to combine.
- Pour on the dressing; toss to combine.
- Top with mandarin orange segments.
- Serve immediately.

- In a large saucepan, heat oil over medium-low heat. Add ramen noodles; cook and stir until toasted, 5-8 minutes. Remove from pan; set aside., In a small bowl, whisk oils, vinegar, sugar and soy sauce until blended; set aside., Sprinkle chicken with pepper and salt. Place chicken on a lightly oiled grill rack. Grill, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 165°, 8-10 minutes on each side. Cool slightly and chop into 1/2-in. pieces., In a large bowl, combine coleslaw mix and cilantro. Layer coleslaw mixture, peas, chicken, carrots, salad greens, noodles and green onions in an 8- to 10-qt. dish. Sprinkle with bacon; serve with vinaigrette.
