24 uncooked large shrimp, unpeeled, deveined (thawed if frozen)
12 chicken tenders
1/3 cup fresh lemon juice
2 tablespoons finely grated lemon peel
2 garlic cloves, minced
2/3 cup olive oil
Baby lettuces

Steps:

  • Thread 4 shrimp on each of 6 metal skewers; place on rimmed baking sheet. Loosely thread 2 chicken tenders on each of 6 metal skewers; place on another rimmed baking sheet. Whisk lemon juice, lemon peel, and garlic in medium bowl; slowly whisk in oil. Season marinade with salt and pepper. Pour marinade over skewers, dividing equally.
  • Prepare barbecue (medium-high heat). Arrange lettuces on large platter. Grill chicken until cooked through, about 5 minutes per side. Grill shrimp until pink on outside and opaque in center, about 4 minutes per side. Remove kebabs from grill; place atop lettuce. Serve with Tomato-Avocado Salsa and Chipotle Aioli .

1 lemon
1/4-1/2 cup extra virgin olive oil
3 cloves garlic, minced or pressed
1 1/2 tablespoons dried oregano
1 tablespoon dried basil
1 pinch dried rosemary
1/2 teaspoon salt
1 lb chicken breast, cut into 1 inch pieces
1 large onion, cut into sections
1/2 lb grape tomatoes (they look like small, pear shaped cherry tomatoes, but they are much better on the grill, and taste)
2 red peppers, cut into 1 inch pieces

Steps:

  • Place chicken breast pieces in a bowl.
  • Pour in enough olive oil to completely cover pieces, squeeze the lemon over them, and then add the garlic, oregano, basil, rosemary, salt, and a couple of twists of cracked pepper.
  • Cover and refrigerate overnight.
  • Assemble kebabs, and grill until chicken is no longer pink, about 10-15 minutes depending on your grill.
  • Don't overcook them, though.

1 lemon, zested and halved
2 teaspoons ground cumin
1 teaspoon ground turmeric
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1 pound boneless skinless chicken breasts (about 2 breasts), cut into 1- to 1 1/2-inch cubes
4 Persian cucumbers
3 to 4 sprigs dill, fronds picked
One 8-ounce block halloumi, cut into eight 1/4-inch thick slices
4 pitas
Tahini, for drizzling

Steps:

  • Soak the skewers in water for at least 30 minutes. Preheat the grill to 375 degrees F or preheat a large grill pan over medium heat. Clean and oil the grates or grill pan.
  • Combine the lemon zest with the 2 tablespoons grapeseed oil, the cumin, turmeric, salt, garlic powder and pepper in a medium bowl; stir together. Add the chicken and toss to coat. Let sit for 5 minutes to 1 hour, then thread 5 to 6 chicken cubes onto each skewer.
  • While the chicken marinates, peel the cucumber into long ribbons with a vegetable peeler. Transfer to a small bowl. Add the dill fronds, the juice from 1/2 of the zested lemon and a sprinkle of salt and pepper. Toss and set aside until ready to serve.
  • Grill the skewers, turning every 3 to 4 minutes, until the chicken is cooked through and all sides are charred, 8 to 10 minutes total. Remove to a platter and squeeze juice from the remaining 1/2 lemon over the top.
  • Two minutes before the chicken is done cooking, grill the halloumi until warmed through and lightly charred, about 1 minute per side.
  • For each serving, top 1 pita with some of the cucumber salad, 1 to 2 slices of the halloumi and 2 chicken skewers. Drizzle with tahini and serve.

YAKITORI (GRILLED CHICKEN KEBABS)

Yakitori is chicken and various other things (mainly chicken, as tori means chicken) skewered, brushed with a sweetish sauce, and grilled to perfection. My version utilizes a simplified sauce and is cooked under the broiler, although it can be grilled, too. Yakitori is best eaten fresh while still very hot. Try with a Japanese beer, if you drink beer. I like to serve it as a meal, but it's intended to be more of a snack. Besides the kebab ingredients here, you can also use chicken gizzards or livers, wing drummettes, little meatballs of minced chicken, shitake mushrooms, bell peppers, or gingko nuts. The skewers should be quite small--just enough for a bite or two each.

  • To make sauce, combine all ingredients in a small saucepan. Bring to a boil, remove from heat, and set aside.

1/4 cup packed fresh dill
1/4 cup packed fresh parsley
1/4 cup extra-virgin olive oil, plus more for the grill
Kosher salt
Pinch of red pepper flakes
8 skinless, boneless chicken thighs (about 5 ounces each)
1 lemon, cut into 8 wedges
Freshly ground pepper
1/2 cup plain whole-milk yogurt

Steps:

  • Cut the white and light green parts of the scallions into 1 1/2-inch pieces; set aside. Chop the dark green parts and transfer to a blender. Add the dill, parsley, olive oil, 3 tablespoons water and 1/2 teaspoon salt and puree until smooth. Stir in the red pepper flakes. Remove 2 tablespoons of the puree to a small bowl for the sauce; refrigerate until ready to use. Transfer the remaining puree to a large bowl. Add the chicken and toss to coat. The popular grilled chicken kebabs of Lebanon and Syria, called shish tawuq in Arabic are probably of Turkish origin, from the Turkish word for chicken, tavuk. As with so many grilled foods in the Arab world, this preparation is traditionally served at special grill restaurants in Lebanon. Every cook uses, it seems, a different spice blend, so I give you some options to play with. Serve these hot as a passed appetizer or at a sit-down dinner or meze party. If you are serving it as a passed appetizer, use 6 or 8-inch wooden skewers with fewer pieces of meat on them. You may have to cut the skewers down to size.

Preheat a gas grill for 15 minutes on high or prepare a hot charcoal fire. Skewer the chicken cubes so they touch each other but do not press against each other. If possible, use a skewer rack so the chicken grills without touching the grilling grate. Grill until golden brown, 20 to 30 minutes, turning frequently. Serve hot.
  • Grind the peppercorns and allspice together and blend with the cinnamon and nutmeg. Store in a jar in your spice rack, away from sunlight. It will lose pungency as time goes by, but, properly stored, it will be good for many months.

FOR THE SAUCE: Bring all ingredients to simmer in small saucepan over medium heat; cook, stirring occasionally, until sauce reaches ketchup-like consistency and is reduced to about 1 cup, 5 to 7 minutes. Add bacon paste and spice mixture to chicken; mix with hands or rubber spatula until ingredients are thoroughly blended and chicken is completely coated.   • Remove chicken from marinade; discard marinade. Thread chicken and orange pieces alternately onto each of 16 (10-inch) skewers. Sprinkle evenly with salt and pepper. Place kebabs on a grill rack coated with cooking spray; grill 5 minutes on each side or until chicken is done, basting occasionally with remaining 1/2 cup Pomegranate-Orange Dressing. Place kebabs on a platter; sprinkle with mint.
  • Pomegranate-Orange Dressing (makes 1 1/2 cups) serving size 1 tablespoon.
  • 1 cup fresh orange juice.
  • 2 1/2 tablespoons balsamic vinegar.
  • 2 tablespoons fresh lemon juice.
  • 2 tablespoons pomegranate molasses.
  • 2 teaspoons grated orange rind.
  • 2 teaspoons minced fresh rosemary.
  • 1 teaspoon salt.
  • 1 teaspoon brown sugar.
  • 1/2 teaspoon ground cumin.
  • 1/2 teaspoon ground black pepper.
  • 1/4 teaspoon ground red pepper.
  • 4 garlic cloves, minced.
  • 1/4 cup extravirgin olive oil.
  • Combine all ingredients except oil, stirring with a whisk. Gradually add oil, stirring constantly with a whisk until well combined.
  • Note: Refrigerate dressing in an airtight container for up to five days; stir well before using.

90 ml water
45 ml soy sauce
45 ml lemon juice
1 1/2 tablespoons honey
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
6 boneless skinless chicken breast halves, cut into 4 cm pcs.
1 1/2 green bell peppers, seeded and cut into 4 cm pcs.
1 1/2 medium onions, peeled,washed and quartered
12 large mushroom caps

Steps:

  • In a glass baking dish, combine the first 6 ingredients together.
  • Add the chicken pcs.
  • Mix well to coat the chicken with the remaining ingredients.
  • Cover.
  • Marinate for 2 hours atleast in the refrigerator.
  • Prepare your grill in the meantime.
  • Remove the chicken pcs.
  • from the marinade.
  • Boil the marinade in a saucepan for 10 minutes.
  • Alternate the chicken pcs.
  • and the vegetables on skewers.
  • Grill 15 cm from medium-hot coals for 15-20 minutes, or until done, turning and basting every few minutes with the marinade.
  • Serve hot.

Napa Grilled Chicken Kebabs image

Enjoy a new West Coast take on a grill season favorite.

Number Of Ingredients 10

4 6-8 ounce fresh chicken breasts
4 12-inch metal skewers
16 large marinated artichoke quarters
16 cherry tomatoes
8 large mushrooms cut in half
1 stick softened salted butter
2 tablespoons white wine
1 finely-minced garlic clove
1 tablespoon freshly-chopped parsley
Salt and Pepper to taste

Steps:

  • Start by cleaning and oiling your grill. Then, heat it to 500-550 degrees F.
  • Mix the butter, wine, garlic, and parsley in a small bowl. Then, set aside at room temperature.
  • Cut each chicken breast into 4 equal strips lengthwise. Assemble the skewers with a mushroom half, and then a strip of chicken folded in half, then an artichoke piece, then a cherry tomato. Repeat. Each skewer should hold 4 of each ingredient on them.
  • Season each skewer with salt and black pepper and place them on the hot grill. Turn the skewers every 2-3 minutes until the chicken reaches an internal temperature of 165 degrees F. Pull the skewers to the front of the grill and baste them with the softened herb butter on all sides. Then, remove from the grill and dig in.

1 lb chicken, cubed
1 bell pepper, cut into 1 inch chunks
1 onion, cut into 1 inch chunks
2/3 cup oil
2 tablespoons white vinegar
1 tablespoon parsley flakes
1 teaspoon onion salt
1/2 teaspoon paprika
1/4 teaspoon black pepper

Steps:

  • Combine marinade ingredients well.
  • Pour over chicken, bell pepper and onion.
  • Marinade for one hour.
  • Alternate meat and veggies on skewers.
  • Broil or grill until done (juices run clear).
  • Note: If using wooden skewers, soak in water 20 minutes prior to use so they won't burn.
