This Chipotle Chicken Avocado Melt tastes exactly like the Panera version, complete with focaccia, smoked Gouda and roasted red peppers.

1 loaf focaccia bread
1 chicken breast
1/4 cup roasted red peppers, sliced
1 avocado, sliced
4 slices smoked gouda cheese
1/3 cup light mayo
1 tbsp adobo sauce (from a can of chipotles)
1/2 chipotle pepper, minced

Steps:

  • Add chicken breast to a large pot of boiling water and cook for 15-20 minutes or until internal temperature of chicken reaches 165 F. Remove from water, then shred chicken and season with salt & pepper.
  • Slice focaccia in half lengthwise if needed. Mix ingredients together for chipotle mayo, then spread a little over a tablespoon over one half of focaccia bread.
  • Top with 1/4 of the chicken, about 1 tbsp roasted red pepper, 1/4 of the avocado and one cheese slice. Top with remaining slice of focaccia bread, then add to a skillet over medium heat. Place lid overtop and cook for 3-4 minutes until cheese has just melted. Serve and enjoy!

1 1/2 pounds boneless skinless chicken breasts (or 4 chicken breasts)
2 garlic cloves finely minced
3 tablespoons olive oil
¼ cup cilantro (chopped)
Juice of 1 lime
1/2 tsp. cumin
½ tsp paprika
½ tsp salt (or to taste)
¼ tsp black pepper
2 avocados diced
2 small (or 1 large tomato) (chopped)
¼ cup red onion (chopped)
1 jalapeno (de-seeded and chopped (optional))
1/4 cup cilantro finely chopped
Juice of 1 lime
fresh cracked pepper & salt to taste

Steps:

  • In a large bowl, whisk all the ingredients for the marinade and set aside.
  • Pound the breasts to even thickness or slice in half horizontally to get evenly sized breasts and add to the bowl of marinade. Mix through until the chicken is fully coated in the marinade. Use right away if needed or marinate for 30-minutes or up to 12 hours.
  • Grill chicken over medium-high heat or in a large heavy-duty skillet on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.

4 boneless skinless chicken breast halves (4 ounces each)
1/3 cup cornstarch
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 large egg
2 tablespoons water
1/2 cup cornmeal
1/4 cup vegetable oil
1 medium avocado, thinly sliced
2 cups shredded Monterey Jack cheese
Sour cream, salsa and sliced green onions, optional

Steps:

  • Flatten chicken to 1/4-in. thickness; set aside. In a shallow bowl, combine cornstarch, cumin, garlic powder, salt and cayenne. In another shallow bowl, beat egg and water. Dip chicken into egg, then roll in the cornstarch mixture and cornmeal. , In a large skillet, cook chicken over medium heat in oil until golden brown on both sides. Place in a greased 13x9-in. baking dish; arrange avocado evenly on top. , Bake, uncovered, at 350° for 10-15 minutes or until chicken juices run clear. Sprinkle with cheese. Vegetable oil, for grill pan
6 skinless, boneless chicken breast halves (about 2 pounds)
Coarse salt and freshly ground pepper
2 cups cooked chickpeas
3 fresh Poblano peppers, seeded, deribbed, and finely chopped
1 medium red onion, finely chopped
Cilantro-Lime Vinaigrette
3 ripe, firm avocados, peeled, pitted, and diced
Lime slices, for serving
4 sprigs fresh cilantro, for serving

Steps:

  • Oil a grill pan and place over high heat until hot. Season chicken with salt and pepper. Working in batches so as not to crowd the pan, place chicken skin-side down on grill pan. Cook 4 minutes. Turn, and cook until just cooked through, about 2 minutes more. As each batch is finished, set aside on a platter. Oil grill pan as necessary. When chicken is cool enough to handle, cut into medium dice, and transfer to a large bowl.
  • Add chickpeas, peppers, onion, and vinaigrette. Toss to combine. Gently fold in avocado. Serve garnished with lime wedges and cilantro.

ripe, Fresh California Avocados, seeded, peeled and sliced

Steps:

  • 1.Marinate the chicken thighs in Teriyaki Marinade & Sauce for at least 2 hours. 2.Grill chicken until no longer pink in the center. 3.Brush Teriyaki Baste & Glaze on each thigh, top with slices of cheese and avocado. Place under the broiler for about 1 minute, until cheese is melted; serve on buns. For preparation all on the grill brush Teriyaki Baste & Glaze on each thigh, top with slices of cheese. Cover grill for about 1 minute or until cheese is melted. Place chicken on bottom half of the sandwich buns, top with avocado slices and bun top; serve. Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly. Serving Suggestion: Serve with a fresh green salad or fruit, or try with Wasabi Avocado Potato Salad.
