CHEESE-STUFFED DATES WITH PROSCIUTTO



Cheese-Stuffed Dates with Prosciutto image

1/4 cup (2 ounces) goat cheese, at room temperature
1/4 cup (2 ounces) mascarpone cheese, a room temperature
1/4 cup finely chopped fresh basil leaves
Kosher salt and freshly ground black pepper
16 Medjool dates (12 ounces), pitted
8 thin slices prosciutto, halved lengthwise

Steps:

  • In a small bowl, mix together the cheeses and basil and season with salt and pepper, to taste.
  • Gently pull the dates apart and stuff with about 1/2 teaspoon of the cheese mixture. Close the dates around the filling. Wrap a piece of prosciutto around each date and secure with a toothpick.
  • Arrange the stuffed dates on a platter and serve.

12 slices provolone cheese
12 thin slices prosciutto
12 thin slices hard salami
12 slices Italian or kalamata olive bread
1/4 cup butter, softened

Steps:

  • Layer the provolone, prosciutto and salami on six bread slices; top with remaining bread. Spread outsides of sandwiches with butter. , In a large skillet, toast sandwiches over medium heat for 2-3 minutes on each side or until golden brown and cheese is melted.

This is my favourite way to eat this classic comfort food and express meal. I know everyone has their own way of making it, but I'm posting this recipe because most people probably haven't thought about adding dates. Quantities will vary depending on the size of your bread and your personal taste. Enjoy!

2 slices fresh bread, good quality
6 -8 slices sharp cheddar cheese, sliced thinly
2 -4 dates, halved and pitted
butter or mayonnaise

Steps:

  • Spread a THIN coat of butter or mayonnaise on one side of each slice of bread.
  • On unbuttered side, layer cheese and dates.
  • Cover with the second slice, buttered side out.
  • Preheat a frying pan on med-high heat.
  • Place sandwich in pan.
  • Cook 2-3 minutes until golden and cheese has melted enough that you can flip it without everything slipping out.
  • Flip over, flatten with spatula if desired.
  • Cook another 2-3 minutes until golden.

16 large basil leaves
4 wide, thin slices prosciutto di Parma, each cut into 4 long strips
16 toothpicks, soaked in water 10 minutes

Steps:

  • Heat broiler to low. Spoon 1 teaspoon cheese into each date; wrap with a basil leaf, then a prosciutto strip. Secure with a toothpick. Broil until cheese bubbles, about 3 minutes. Serve warm.

1/2 canned San Marzano tomato, diced
1/8 cup chopped red onion
1/2 garlic clove, minced
1 tablespoon red wine vinegar
1/2 teaspoon honey
8 pieces whole-grain bread
2 cups shredded lowfat cheddar, divided
8 slices prosciutto
4 tablespoons olive oil, divided

Steps:

  • Heat oven to 350°F. In a small pot over medium heat, cook tomato, onion and garlic until tomato breaks down and resembles jam, 15 minutes.
  • Add vinegar and honey; cook until jam thickens, 15 minutes. Season with salt and black pepper; remove from heat.
  • On a cookie sheet, arrange bread in a single layer. Top each slice with 1/4 cup cheese and 1 slice prosciutto; bake until cheese melts, 3 minutes.
  • Divide tomato jam among 4 sandwich halves; top with remaining sandwich halves.
  • In a medium skillet over medium heat, heat 1 tablespoon oil. Cook one sandwich, flipping once, 3 minutes per side. Repeat with remaining oil and sandwiches.
