6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed and sliced
1/2 cup pickled pearl onions, halved

Steps:

  • Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie; add pickled onions. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

A classic grilled cheese, this golden brown sandwich features tangy dill pickles slices, caramelized onions, and ooey, gooey melted white cheddar in between two thick slices of bread.

3 tbsp butter (softened)
2 slices bread
2 slices white cheddar cheese
1 dill pickle (sliced)
1/3 cup thinly sliced sweet vidalia onion

Steps:

  • Divide the butter into tablespoons. Spread one on each slice of bread on the designated 'outer' side. Reserve the last tablespoon of butter.
  • Melt the remaining tablespoon in a cast iron skillet. Saute the onions in the butter until tender, and just starting to caramelize. Remove them from the skillet, and set aside.
  • Place one buttered slice of bread down into the skillet. Top with one sliced of cheddar cheese, the pickles, the sliced onions, the remaining slice of cheese. Close it with the second slice of bread, butter side up.
  • Cook the sandwich over medium low heat, for 2-3 minutes or until the bottom side's golden brown & the cheese has begun to melt. Carefully flip the sandwich, and cook another 2-3 minutes until the other side's also golden brown, crisp, and the cheeses are thoroughly melted.
  • Remove the sandwich from the skillet. Slice & serve.

I always have pickles on the side with my basic grilled cheese sandwich so I thought they'd taste good right in the sandwich itself. I also thought sweet Vidalia Onions would taste great with it as well. I hope you like it.

2 slices whole wheat bread
1 -2 slice cheddar cheese
1 -3 tablespoon butter, softened
1 -2 kosher dill pickle (I use Sandwich Stackers, also Bread and Butter pickles work well, too)
1 -2 thinly sliced vidalia onion

Steps:

  • Heat 1 T butter in skillet over medium heat.
  • Spread 1 T butter on 1 slice of wheat bread and another T butter on the other slice of wheat bread.
  • Place 1 slice, buttered side down, in skillet.
  • Place 1 or 2 slices of the cheese on top of this bread slice.
  • Place pickle slice or slices on top of cheese.
  • Place onion slices on top of pickles.
  • Put other slice of bread, butter side up, on top.
  • Fry in pan until both slices are golden brown, about 5-7 minutes.

This recipe is my nephew's girlfriend's creation. I love onions and who doesn't love cheese? The combination is very tasty in my opinion. Only use red onions. I've tried it with regular and the flavor just isn't the same. Hope you like it. Note: The cheese slices are based on the approximate size as the Kraft slices.

4 slices german style rye bread or 4 slices any hearty type bread
4 slices red onions, sliced thin
4 slices cheddar cheese, preferably old
2 teaspoons butter, for spreading on the bread
pepper

Steps:

  • Spread butter on one side of the 4 bread slices.
  • turn over.
  • divide the cheese and onion slices on the buttered side of 2 slices.
  • grind some fresh pepper over this.
  • place other 2 slices of bread on top, butter side up.
  • Heat a pan to medium heat and fry each side of the sandwiches until golden brown and cheese starts to melt.
  • you could use a panini press if you like.
  • serve immediately.

Soo good, I always got this at school, I will have to thank our chefs for this one. This only tastes good cold, so I wouldn't recommend trying to heat it up

2 slices bread, white works best or 1 roll, again white works best
1 tablespoon branston pickle
3 slices medium cheddar, thickly cut or 1/4 cup medium cheddar, grated

Steps:

  • Place the cheese on bread or roll.
  • Spread bread or roll with as much pickle as you desire (has to be Brandeston to get the full effect) the more you add, the better the taste.
  • Put top piece of bread on.
  • Cut into a diagonal triangle.
  • Enjoy.
