1/2 cup mayonnaise
6 tablespoons honey mustard
1 tablespoon red wine vinegar
1/2 teaspoon salt
Dash pepper
3 cups cubed cooked chicken
2 celery ribs, thinly sliced
1/2 cup chopped cashews
1/4 cup chopped red onion
4 flour tortillas (6 inches), warmed
1/2 cup shredded cheddar cheese

Steps:

  • In a bowl, combine the mayonnaise, mustard, vinegar, salt and pepper. Stir in the chicken, celery, cashews and onion. Spoon about 1 cup down the center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up.

6 Rhodes Dinner Rolls, thawed to room temperature
3-4 cups shredded cooked chicken
1/2 cup mayonnaise
2 teaspoons rice vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon Dijon mustard
1/4-1/2 cup cashews
3 tablespoons sliced green onions
1/2 cup mandarin oranges, divided
1/4 cup finely chopped red cabbage
salt & pepper to taste

Steps:

  • Spray counter lightly with non-stick cooking spray. Roll each dinner roll into an 8 inch circle. Cover with plastic wrap and let rest for about 20 minutes. In a large bowl, combine the chicken, mayonnaise, vinegar, sugar, sesame oil and mustard. Fold in the cashews, green onions, half of the oranges and the cabbage and mix well. Salt and pepper to taste. Remove wrap from flattened rolls and brush with olive oil. Cook on a grill heated to medium heat for about 1 minute on each side. Remove from grill and cool slightly. Divide chicken mixture evenly between the wraps and garnish with remaining oranges.

1/4 cup olive oil
3 tablespoons lime juice
2 garlic cloves, minced
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 pound boneless skinless chicken breast
2 flour tortillas (8 inches), warmed
Optional toppings: chopped green onions, sliced ripe olives, chopped tomatoes, shredded cheddar cheese, sour cream and/or shredded lettuce

Steps:

  • In a large resealable plastic bag, combine the first five ingredients; add the chicken. Seal bag and turn to coat; refrigerate for up to 2 hours. , Drain and discard marinade. Grill chicken, uncovered, over medium heat for 4-5 minutes on each side or until juices run clear. Slice chicken into strips. , Serve in tortillas with toppings of your choice.

2 -4 garlic cloves, finely chopped
1/2 cup soy sauce
1/4 cup rice wine or 1/4 cup sake
2 tablespoons lime juice
2 tablespoons sesame oil
1 tablespoon honey
1 tablespoon grated fresh ginger
1 teaspoon Chinese five spice powder

Steps:

1 lemon, zest of
1/4 cup fresh lemon juice or 2 lemons, juice of
2 garlic cloves
kosher salt
fresh ground black pepper
1 cup low-fat sour cream
2 tablespoons grated parmesan cheese
1 tablespoon fresh lemon juice or 1/2 lemon, juice of
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 anchovy, smeared with a fork to a paste
1/2 garlic clove
kosher salt
black pepper
1/2 pint cherry tomatoes, quartered
1 romaine lettuce hearts, chopped into bite-size pieces
parmesan croutons, recipe follows
4 (12 inch) sun-dried tomato tortillas, toasted with a little oil
