this is a quick weeknight meal for these hot summer nights. alternately this can be roasted in the oven at 450 for 20 minutes. this can be made with tuna also, as i did in the photo.

1 mango, peeled, seeded, cubed
1 cup chopped onion
1 cup chopped fresh pineapple
1/4 cup fresh cilantro or 1/4 cup basil
2 -4 chopped jalapenos
2 teaspoons lime juice
2 -3 dashes hot sauce
2 lbs center cut salmon fillets
2 tablespoons olive oil
2 tablespoons lemon juice
salt & pepper

Steps:

  • preheat grill to high.
  • in a medium bowl mix all the salsa ingredients.
  • cover and refrigerate for up to 3 days.
  • place salmon in a glass dish.
  • rub both sides with oil and lemon juice, marinate in the fridge for 20-30 minutes place salmon on grill skin side down.
  • cook 10 minutes, turning halfway through, until done to your liking.
  • remove to a platter.
  • add salt& pepper, serve with salsa.

¼ cup fresh lime juice
¼ cup extra virgin olive oil
2 tablespoons soy sauce
3 tablespoons shallots, chopped
1 teaspoon sugar
½ cup diced pineapple
2 large plum tomatoes, diced
¼ cup chopped fresh basil
salt and pepper to taste
4 (6 ounce) fillets salmon
½ cup chicken broth
lemon pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk together lime juice, olive oil, soy sauce, shallots, and sugar. Stir in the pineapple, tomatoes, and basil. Season with salt and pepper. Cover, and refrigerate. Remove from refrigerator 10 to 15 minutes before serving.
  • Place salmon in a 9x13-inch pan. Pour chicken broth over the top, and sprinkle with lemon pepper.
  • Bake in a preheated oven until fish flakes easily with a fork, about 30 to 40 minutes. Serve with salsa on the side.

6 (6 ounce) salmon fillets
2 teaspoons olive oil, plus
1 tablespoon olive oil, divided
4 tablespoons lemon juice, divided
4 teaspoons minced fresh ginger, divided
1 medium red bell peppers or 1 medium yellow bell pepper, diced
1 small red onion, finely chopped
2 (8 ounce) cans crushed pineapple
1/2 cup golden raisin
1/4 teaspoon cayenne pepper
3 cups torn fresh spinach
3 cups torn fresh romaine lettuce

Steps:

  • Rinse the salmon in cool water and pat it dry.
  • In a bowl combine 2 teaspoons oil, 2 tablespoons lemon juice and 1 teaspoon ginger.
  • Coat both sides of fish with the mixture and refrigerate for up to an hour.
  • While the fish marinates prepare the Pineapple Salsa.
  • Heat the remaining oil in a medium skillet.
  • Add the yellow pepper and onion and sauté until soft about 4 minutes.
  • Add the crushed pineapple, raisins, cayenne and remaining lemon juice and ginger; sauté until pineapple is warm, about 4 minutes longer.
  • (Salsa can be made ahead up to 24 hours; but bring to room temperature before using.).
  • Grill or broil the salmon, turning once, until fish is barely opaque in the center, and just begins to flake when tested with a fork about 2 minutes per side for 3/4-inch thick fish steaks.
  • Enjoy!

2 lbs salmon fillets
2 teaspoons olive oil
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon fine cajun spices
1/3 cup roasted pineapple and habanero sauce (optional)

Steps:

  • Preheat Grill to 500 degrees on High.
  • Slice salmon fillet into five equal pieces.
  • Place salmon pieces on a sheet of aluminum foil large enough to leave 3" excess all around.
  • Coat salmon with 1 teaspoon olive oil (I prefer using a spray bottle for my olive oil, approximately 5 sprays).
  • Sprinkle same side of salmon with half the spices and rub into fish.
  • If using optional sauce, spread all of the sauce atop spice and rub into fish.
  • Flip the salmon pieces over and coat other side with 1 teaspoon olive oil and remaining spices, rub into fish.
  • Fold edges of foil up and slide onto hot covered grill cooking on high for about 7 minutes. Carefully flip each piece and continue to grill for 5-6 more minutes.
  • Carefully move to serving platter, enjoy hot off the grill with a fresh garden salad.

4 (6 ounce) salmon fillets
1 tablespoon maple syrup
1 tablespoon teriyaki sauce
1 tablespoon pineapple juice
1 teaspoon minced fresh ginger
1 garlic clove, mashed
1 medium tomatoes, chopped into small cubes
1/4 cup chopped red bell pepper
2 pickled jalapeno peppers, slices deseeded and finely chopped
1/2 cup pineapple chunk (fresh or canned)
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Place salmon fillets in a resealable plastic bag Combine marinade ingredients in a non-reactive bowl or measuring cup. Pour marinade over fillets and refrigerate from 1 to 24 hours. (Fix the Pineapple Salsa now so it can chill).
  • In a grill basket sprayed with cooking spray, grill the salmon, skin side down, over hot coals. Flip after 2 to 3 minutes and cook for another 1 to 3 minutes, or until desired doneness. Serve with pineapple salsa spooned on the side.
  • For Pineapple Salsa: Place all ingredients in a small, non-reactive saucepan. Simmer over low heat for about 5 minutes. Cool. Refrigerate until ready to serve with the salmon.
