CHICKEN CAESAR PASTA SALAD



Chicken Caesar Pasta Salad image

Toss grilled chicken, romaine and fresh tomatoes with pasta in a creamy Caesar dressing.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup Parmesan
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces penne pasta
One 8-ounce boneless, skinless chicken breast
1 1/2 teaspoons olive oil, plus more for oiling the grill grates
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
  • Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

10 to 12-ounces uncooked bowtie pasta
1 (9-ounce) bag chopped hearts of romaine (or 1 large romaine heart - washed and coarsely chopped)
1/2 cup caesar dressing (get my dressing recipe)
1/2 cup shaved parmesan cheese
1 cup croutons
salt
pepper

Steps:

  • Cook the pasta to al dente in salted water according to the package instructions. Drain and rinse in cool water until pasta is cool. Drain well. Set aside.
  • In a large bowl, toss the hearts of romaine with the pasta, dressing, parmesan cheese, and croutons. Add additional dressing, if desired. Add salt and generous amounts of freshly cracked black pepper to taste. Toss again and serve immediately.

1/3 cup freshly grated parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain water and set aside to cool.
  • Chop the grilled chicken breasts into small chunks.
  • In a large bowl toss together chicken, cooked penne pasta, lettuce, cucumber, carrot, green onion, cherry tomatoes, Parmesan cheese and croutons.
  • Drizzle with desired amount of Caesar salad dressing and toss to coat.

1 box Betty Crocker™ Suddenly Salad® Caesar pasta salad mix
3 tablespoons olive oil
2 tablespoons lemon juice
1 lb uncooked boneless chicken tenders (not breaded)
1 tablespoon Dijon mustard
2 heads baby Romaine lettuce, cut in half lengthwise
Olive oil for drizzling
Croutons, as desired
Shaved Parmesan cheese, as desired

Steps:

  • Pour pasta (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
  • In large bowl, mix seasoning & crouton blend (from Suddenly Salad box), 3 tablespoons olive oil and the lemon juice. Stir in cooked pasta. Cover; refrigerate until ready to serve. In small bowl, coat chicken tenders with mustard; set aside.
  • Heat gas or charcoal grill. Place chicken tenders on grill over medium-high heat. Cover grill; cook chicken tenders about 8 minutes, turning after 4 minutes, until chicken is no longer pink. Drizzle lettuce with olive oil. Place lettuce on grill, cut side down. Cook 1 to 2 minutes or just until light grill marks appear.
  • To serve, place pasta mixture on large serving platters. Top with chicken tenders. Arrange lettuce around edges of platter; top with cheese.
