2 sticks unsalted butter, melted
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
2 teaspoons garlic powder
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
1 French or Italian loaf, sliced 1/2-inch-thick on the bias

Steps:

  • Heat a grill pan over high heat.
  • Mix together the butter, olive oil, parsley, garlic powder, salt and pepper in a bowl. Brush both sides of the bread slices with the butter mixture. Working in batches, grill the bread until lightly charred, 3 to 4 minutes total.

This bread is a snap to make and so delicious made on the grill, prepare all the slices ahead and grill the same time with other food, I did not list amounts for salt, pepper and garlic powder, you may use as much as desired and the garlic powder is only optional I always add it on, if desired sprinkle on some shredded cheese after the last turn but do not turn the bread over --- servings is only estimated.

1 loaf unsliced French bread
1/3 cup olive oil (or use a mixture of half each melted butter and olive oil)
kosher salt
fresh ground black pepper
garlic powder (optional)

Steps:

  • Slice the French bread diagonally into about 3/4-inch slices or as thick as desired.
  • Brush both sides of each slice with olive oil or melted butter.
  • Sprinkle one side of the slice lightly with kosher salt, black pepper and garlic powder if using.
  • Place seasoned side down on the grill.
  • Grill over medium heat until lightly toasted about 1-3 minutes, cooking time will depend on how hot your grill is (check frequently to avoid burning).
  • Using long tongs turn the bread over and season with salt, pepper and garlic powder; grill until toasted.

1/4 teaspoon red pepper flakes

1 loaf Italian bread, sliced into 1/4-inch slices
1 cup shredded mozzarella

Steps:

  • Preheat grill to low-medium heat.
  • In a small bowl, combine olive oil, garlic, red pepper flakes, basil and salt. Brush both sides of the bread with the olive oil and garlic mixture.

2 large garlic cloves, halved lengthwise
1/2 cup grated Parmesan
Basil leaves, for serving

Steps:

  • Light a grill or turn heat to high. Drizzle both sides of bread with olive oil and grill for 2 to 3 minutes without turning, until one side is crisp and beginning to char.
  • Remove bread from grill and rub grilled side thoroughly with the cut garlic. Evenly distribute Parmesan on the grilled side and return toast to the grill, cheese side up. Close lid and cook for another 2 to 3 minutes, or until cheese is melted. Transfer to a cutting board, slice each piece of toast in half and serve garnished with basil leaves.

A quick and easy, but delicious side for summer dinners. Hot, smoky garlic bread is equally friendly to a juicy steak, a whole fish or a Caprese salad. Any loaf that is not too thick can be used, but whole grain stands up better to the oil-garlic-fire treatment. You may doubt that using garlic cloves with the papery skins on will work, but the rough surface of the toasted bread rubs them right off.

1 large (or 2 small loaves) baguette or ciabatta bread, preferably whole grain
Olive oil
2 garlic cloves, not peeled
1 large ripe tomato, halved (optional)
Coarse salt such as kosher or Maldon

Steps:

  • Cut bread in half lengthwise, and cut in half crosswise if very long. Brush cut surfaces of bread lightly with olive oil. Under a broiler or on a grill, toast bread, turning a few times, until cut surfaces are golden brown. (If using a broiler, you can place bread directly on the oven rack.)
  • Remove bread to a work surface, grab a garlic clove with your fingertips and rub it lightly over the cut surfaces of the bread. (The papery skin of the garlic will come off.) When the bread is well scented with garlic, brush again with olive oil and toast again. If using tomato, rub the cut surfaces against the bread so the bread absorbs the juice. Oil and toast bread one last time, until golden and charred. Sprinkle lightly with salt and serve immediately.

1 pound mixed peppers and chiles of varied sizes
8 thick slices crusty bread
2 (4-ounce) balls burrata
Kosher salt and freshly ground pepper

Steps:

  • Heat grill to medium-high. Lightly brush grates with oil and grill peppers whole, turning occasionally, until skin is mostly blackened and peppers are completely softened, 5 to 10 minutes, depending on size. Place in a medium bowl, cover, and let stand 10 to 15 minutes. When cool enough to handle, remove skins and pull peppers apart, discarding skins, seeds, and stems, if desired. Tear in half if small, or cut into strips about 3/4 inch wide.

  • Preheat the grill until the coals are somewhat gray with ash; the flame should be low. Meanwhile, combine the olive oil, garlic, basil, and oregano in a small bowl. 10 large cloves garlic, peeled but left whole
1 fresh rosemary sprig, 6 inches long
1/4 cup extra-virgin olive oil
1 stick unsalted butter, at room temperature
Salt and pepper
2 baguettes (not sourdough), 1/2 pound each
1/4 cup freshly grated Parmesan, optional

Steps:

  • Put the garlic, rosemary, and olive oil in a small skillet and heat slowly until the oil just begins to simmer. Turn the cloves over in the oil and saute for 10 minutes longer. Remove from the flame and let cool for 15 minutes.
  • Remove the garlic cloves from the oil (reserve the oil) and mash them to a paste with a knife or mortar and pestle. Take the leaves off the rosemary sprig and finely mince them. In a bowl, combine the garlic paste, minced rosemary, and butter and stir until smooth. Season with salt and pepper.
  • Cut the baguettes in half lengthwise. Spread the cut sides with the seasoned butter and drizzle with a little of the oil used to bake the garlic. Sprinkle with the Parmesan, close the baguettes back up and wrap each in aluminum foil. Cook over medium heat on the grill or in a bed of slow coals for 10 to 15 minutes. Cut into 2-inch-wide slices and serve immediately.

I was first inspired by my brother putting basic garlic bread in foil on the grill - I got a bit carried away in going beyond basic - and decided the foil just gets in the way! This has become a favorite of family and friends and I make it all summer long. When the weather turns cold you can cook it under the broiler. This recipe is very flexible, adapt the seasonings and add-ins to your family's preferences. Don't use the rustic artisan breads for this - head to the grocery and buy the inexpensive store bakery loaves.

1 loaf French bread (the grocery store puffy kind is best for this recipe)
1/4 cup soft butter
1/4 cup olive oil
3 garlic cloves (or more)
1/2 teaspoon garlic powder
2 -3 teaspoons pesto sauce (you can also use fresh or dry basil use more fresh less dry)
1 -3 tablespoon sun-dried tomato packed in oil
1 -3 pinch red pepper flakes
kosher salt (optional add to taste)
3 -4 tablespoons parmesan cheese (optional)

Steps:

  • Slice bread all the way through top to bottom, make slices about 1- 1 1/2 inches thick, set aside.
  • Put all ingredients in Food processor, blender or use an immersion blender with everything in a bowl or 2 cup glass measuring cup (this is my favorite method, the blender is my last choice). Zizz everything up until there are no more chunks of anything. Taste the mix and adjust - some garlic is mild some have more bite - you want a good strong garlic taste. The mix will be kind of soupy, it firms after chilling if you have leftovers - when you go to use it again let it soften a few minutes until spreadable.
  • If you add cheese you might not want to add the salt, especially if you use the kind in a can - I usually add fresh and like it with a little salt. Though the cheese can cause a little sticking on the grill, it tastes great and worth a little clean up.( If doing this in the broiler - don't add the cheese to the mix - but sprinkle it on the bread after you turn it over and broil till toasty. ).
  • Spread a nice thin coat of butter mix on both sides of you bread. I usually stack them on a cookie sheet if I'm using the whole loaf - for just the two of us I use 4 slices and save the rest for another day.
  • I usually grill the bread when everything else is almost done, cooking time varies with your grill and whether you're using gas or charcoal.
  • Put the bread on the grill, check it often you want it kind of golden toasty or a little darker - sometimes the edges get over cooked in spots it's ok . Move the bread around as needed to keep from burning, My gas grill is hotter in the center so I have to spin the bread on the edges to keep it even - grill both sides of the bread, it usually takes a couple of minutes per side, serve ASAP Great with wine or a cold beer - I like to dip it in barbecue sauce.
  • Remember - this is flexible - you can leave out all the extras except for the garlic - or add other seasonings like oregeno. Enjoy!
  • Important - Use the butter mix within a week or freeze the leftovers.
