These are spicy and wonderful! As close as I can get to a restaurant version that I am addicted to. Serves 2 as an entree and 4 as an appetizer.

16 large shrimp, peeled and deveined
8 slices bacon
barbeque seasoning, to taste

Steps:

  • Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
  • Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

10 slices OSCAR MAYER Fully Cooked Bacon, cut in half
20 uncooked medium shrimp (3/4 lb.), peeled, deveined
2 zucchini, trimmed, each cut into 10 slices
2 yellow peppers, each cut into 10 pieces
1/2 cup BULL'S-EYE Original Barbecue Sauce

Steps:

  • Heat grill to medium heat.
  • Wrap 1 bacon piece around each shrimp. Thread 2 each shrimp, zucchini slices and pepper pieces alternately onto 10 skewers.
  • Grill 3 to 4 min. on each side or until shrimp turn pink, turning and brushing occasionally with barbecue sauce.

50 large shrimp (approximately)
17 slices bacon
1 vidalia onion
16 ounces of medium size mushrooms
2 green bell peppers
2 red bell peppers
barbecue sauce (your favorite kind)

Steps:

  • Cut up the onion and peppers in large chunks approximately 1 inch squares or a little larger.
  • Cut the bacon slices into thirds and slightly cook the bacon until it is softened but not crispy.
  • (this could be done in the microwave) Wrap the shrimp in the bacon slices and assemble the Kabobs on the metal skewers starting with bacon wrapped shrimp, a chunk of red pepper, onion, mushroom cap, and green pepper then another bacon wrapped shrimp.
  • fill the skewer.
  • Place the Skewers on a preheated grill with slightly greased foil.
  • As you are cooking the skewers, baste with the BBQ sauce on each side for approximately 7 to 10 minutes (depending on the temperature of your grill.) Enjoy!

16 (10-inch) wooden skewers
2 tablespoons butter
1/2 cup finely chopped onions
1 small jalapeno, seeded and chopped
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper
1 (1-inch) piece ginger, grated
1/2 cup dark brown sugar
1/4 cup orange juice
1 cup ketchup
16 colossal shrimp, shelled with tail on, deveined (about 1 1/4 pounds)
4 slices bacon

Steps:

  • Preheat grill to medium.
  • Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.

1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon citrus lemon pepper
1 teaspoon garlic
1 tablespoon Worcestershire sauce
1 tablespoon fresh squeezed lemon juice
4 tablespoons butter, melted
9 slices bacon
18 prawns
18 wooden skewers, soaked in water for at least 15 min

Steps:

  • Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
  • Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.
  • Wrap each piece of shrimp with a piece of bacon. Slide on to skewers. If you use wooden skewers, the skewers need to be soaked in water for about 15 minute in water or use metal ones.
  • Grill on a hot grill until shrimp are opaque. Use remainder of marinade when turning the shrimp.
