BALSAMIC GRILLED ASPARAGUS
Steps:
- Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
- Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.
- Place the asparagus on the hot grill and cook, flipping as needed, until crisp-tender and charred in spots, about 8 minutes. Transfer to a platter, garnish with the chopped parsley and serve immediately.
GRILLED OR ROASTED ASPARAGUS WITH BALSAMIC

- Toss the asparagus with shallot, oil, 1/8 tsp salt and pepper. Roast or grill turning twice, until tender and browned, 8 to 10 minutes.
- Bring vinegar and the remaining 1/8 teaspoons salt to a simmer in a small skillet over medium-high heat until slightly syrupy and toss the asparagus with the reduced vinegar.

- Get the glaze started --
- * 1 cup quality balsamic vinegar.
- * 1 T quality honey.
- * 2 T butter.
- Simmer balsamic vinegar until it has reduced by 2/3rds. Add honey, stir until thoroughly mixed. Then add butter, 1 T at a time, and mix until dissolved and velvety before adding the next tablespoon of butter.
- While you are making the sauce. Grill the chicken and asparagus . I use a cast iron grill on my stove top. Could definitely use your outdoor grill too.
- Spray chicken with a garlic olive oil and top with a sprinkle of Herbs de Provence on each piece. Grill until cooked thoroughly.
- Grill the asparagus. Also spray with the garlic olive oil and sprinkle with Herbs de Provence. I also added a tiny bit of salt and pepper to both the chicken and the asparagus. This doesn't take long -- about 4-5 minutes.
- To plate the dish --
- Drizzle about a tablespoon of sauce on the plate. Top with chicken and asparagus. Drizzle the top the dish with extra sauce. Add cracked pepper.
- Serves 4.

Steps:
- Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
- Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes.
- Preheat grill on high heat.
- Remove asparagus from bag (discard marinade) and place on preheated oiled grill rack.
- Grill 5 minutes on each side or until asparagus is done.

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the head of garlic with 1 tablespoon olive oil, salt, and pepper. Place on a baking sheet, and roast 45 minutes in the preheated oven, until golden brown. Once the garlic is roasted, cut the head in half horizontally, exposing all the cloves. Squeeze both halves into a bowl, discarding any skin. Whisk in 2 tablespoons of olive oil, salt, and pepper. Set aside.
- While the garlic is roasting, place the minced shallot in a bowl with the balsamic and red wine vinegars for about 30 minutes to let the flavors blend. Whisk in remaining olive oil, and season with salt and pepper. Place asparagus spears in the mixture until ready to grill.
- Preheat grill for medium-high heat.
- Place asparagus in a large skillet or directly on the grill. Grill the asparagus, turning over once, until tender, about 10 minutes. While asparagus is grilling, spread the roasted garlic mixture on the bread. Grill bread until toasted. Arrange the bread and asparagus on a plate, and drizzle with the remaining shallot and vinegar mixture.

- add vinegars, shallot, and garlic to a non-reactive bowl.
- while whisking, slowly drizzle in olive oil to make an emulsion.
- add salt and pepper.
- let sit for 1/2 hour to allow flavors to meld.

- let sit for a few minutes.
- place on medium-high preheated grill and let cook for 8-10 minutes.

Steps:
- In a small saucepan bring the vinegar to a simmer over medium heat.
- Reduce the heat until just a few bubbles break through the surface.
- Add the smashed garlic.
- Cook at a slow simmer until about 1/4 cup of vinegar remains (about 20 minutes).
- If you cook too quickly or it reduces too much, it will turn bitter rather than sweet.
- Remove the sauce pan from the heat and let cool to room temperature (The syrup will continue to thicken as it cools).
- Heat grill to medium heat.
- Remove and discard all tough, woody ends from the asparagus spears.
- Wash and pat dry.
- Lightly coat the asparagus with the Hot Pepper Oil.
- Season evenly with the salt and pepper.
- Brush the cooking grate clean.
- Lay the asparagus perpendicular to the bars on the grate.
- Grill over direct medium heat with the lid closed as much as possible, until lightly charred and crisp-tender, 4-6 minutes, rolling the spears a couple of times and swapping their positions as needed for even cooking.
- Arrange the asparagus on a platter or individual plates.
- Remove the garlic from the syrup.
- If the syrup is stiff, warm it briefly over medium heat.
- Drizzle some of the syrup over the spears (you may not need all of it.).
- Season with more salt, if desired.
- Serve warm or at room temperature.

- Heat a gas grill to medium. Put the asparagus on a rimmed baking sheet, drizzle with 2 Tbs. of the oil, and season with 1/2 tsp salt and a few generous grinds of pepper. Turn to coat. Grill the asparagus (covered on a gas grill) until it has nice grill marks, about 4 minutes. Turn and continue cooking until tender and browned, about 4 minutes; transfer to a large platter. Reduce heat on the gas grill to medium low. On a rimmed baking sheet, coat the onions with 2 Tbs. of the oil, 1/2 tsp salt and several grinds of pepper. Grill covered, until tender and browned, 8 to 10 minutes per side. Return onions to baking sheet. In a small bowl, whisk the remaining 1/4 cup olive oil with the vinegar and thyme. Toss the asparagus with about half of the vinaigrette and then transfer to a platter. Scatter the onions over the asparagus and drizzle with the remaining vinaigrette. Sprinkle with blue cheese and pine nuts and serve. This salad can sit for up to 1 hour at room temperature.

- Chop asparagus, portobella, onion and bell pepper into bite size pieces then place in a gallon size zip lock bag.
- Add garlic powder, ground pepper, balsamic and olive oil then seal the bag.
- Marinate in the refrigerator for at least 1 hours flipping the bag occasionally.
- Grill in a basket (not the hinged type, but the bowl type) over medium high heat till crisp tender.
- Use the marinade to drizzle over the veggies while occasional stirring.

- Preheat grill on medium-high heat. Coat the asparagus with olive oil using your hands. Season with salt and pepper. Coat the grill with olive oil. Spread asparagus across the grill and cook for 3 minutes. Turn the asparagus over and cook for an additional 3 minutes or until asparagus is slightly crunchy, not soft.
- Remove from grill and transfer to a platter. Drizzle the balsamic vinegar syrup over the asparagus before serving. Season with additional salt and pepper to taste.
- ***To roast the asparagus in the oven, follow the instructions above except cook the asparagus in a preheated 450 degree oven. Cook for 15-20 minutes.
