CHEESY POTATO BACON PACKETS FOR THE GRILL



Cheesy Potato Bacon Packets for the Grill image

I have been making these for years, it's a family favorite! all ingredients are wrapped in a foil pouch then grilled for about 30-40 minutes, add in some cooked cubed ham for a complete meal, you could even make the packets well in advance then refrigerate until ready to grill :) Make certain to use only large heavy-duty foil for this and spray the inside of the foil generously!

6 large potatoes (sliced 1/4-inch thick)
2 medium onions, chopped
1/3 cup grated parmesan cheese
1 cup grated cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 slices bacon, cooked and crumbled (I just use a 1-pound package of bacon)
6 tablespoons butter, cut into small pieces (use 3 tablespoons for each packet)
2 teaspoons seasoning salt
black pepper
shredded cheese

Steps:

  • Divide the sliced potatoes and onions equally between two pieces (about 18-inches each) heavy-duty foil, that has been sprayed liberally with cooking spray.
  • Sprinkle with seasoning salt, pepper and garlic powder; tossing lightly with hands to coat with seasonings.
  • In a bowl combine grated cheddar mozzarella and Parmesan cheese; divide and sprinkle over the potatoes and onions.
  • Divide/top with bacon and butter cubes.
  • Bring opposite ends of the foil together over filling and fold down several times.
  • Fold unsealed ends toward filling and crimp tightly (making a sealed packet, you may poke a small hole on top of the packet to let steam escape).
  • At this point to you may refrigerate for a few hours until ready to grill.
  • Place on grill over medium heat for about 35-40 minutes or until potatoes are fork-tender.
  • Remove from grill, carefully open the packets (be careful these packets have lots of steam inside, so open with care!) and sprinkle with more grated cheese.
  • Delicious!

My dad's a meat and potatoes kind of guy, so these 'baked' potatoes wrapped in bacon and sprinkled with brown sugar and pepper really make his day!

4 baking potatoes, scrubbed
1 ¼ teaspoons salt
12 slices bacon
2 tablespoons olive oil for brushing
1 cup brown sugar
2 tablespoons freshly ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with olive oil, then sprinkle with brown sugar and black pepper. Wrap the potatoes loosely in the aluminum foil.
  • Grill potatoes until the bacon has crisped, and the potato is soft in the center, about 45 minutes depending on grill temperature.

1 small onion, thinly sliced
2 medium baking potatoes, halved lengthwise
4 bacon strips

Steps:

  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

I was given some tiny fresh new potatoes from a friend's garden. I was grilling chicken and wanted an appetizer to throw on the grill. The bacon wrapped new potato was born. Serve with ranch dressing or BBQ sauce for dipping.

15 small new potatoes
5 slices bacon, cut into thirds
1 (1 ounce) package ranch dressing mix
15 toothpicks

Steps:

  • Preheat an outdoor grill for low heat, and lightly oil the grate.
  • Wrap each potato with a piece of bacon and secure with a toothpick. Sprinkle the potatoes with the powdered ranch dressing mix. Place the wrapped potatoes on the grill, turning the potatoes several times to allow the bacon to cook on all sides. The potatoes will be done when the bacon is nice and crispy, about 20 to 25 minutes.

**russet potatoes
**bacon
**jalapeno
**olive oil
**your favorite potato seasoning

Steps:

  • 1. Scrub potato skins, then cut in half, then into thirds. If you want to use jalapeno slices, cut jalapeno in half, take out seeds and cut into about 6 slices per half.
  • 2. Place potatoes in bowl and drizzle with olive oil and generously season with your favorite potato seasoning, toss to coat well.
  • 3. You will need 1/2 slice of bacon for each, or be indulgent and use 1 slice. Place a slice of jalapeno on the side of potato and wrap with bacon.
  • 4. You could probably secure them with toothpicks, but if you have a grilling basket that has a top and bottom, it is much easier I think. Spray bottom and top of basket, place them in bottom of basket leaving a little room in between. Secure top of basket tightly against potatoes.
  • 5. Heat one side of grill to med heat and place basket on other side with NO heat, and cook indirectly for 1- 1 1/2 hrs. The bacon browns so nicely and does not burn. Use a toothpick to check for doneness after 1 hr. Toothpick will insert easily if done.
