GRILLED CASHEW-ASPARAGUS FOIL PACK
Here's proof that creative side dishes can still be simple: Foil-wrapped asparagus spears strewn in crunchy cashews, fresh from a smoky grill.

- Heat gas or charcoal grill. Cut 18x18-inch sheet of heavy-duty foil. Break off tough ends of asparagus as far down as stalks snap easily. Place asparagus on center of foil. Top with butter, salt and pepper.
- Bring up 2 sides of foil over asparagus so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packet on grill over low heat. Cover grill; cook 10 to 15 minutes, rotating packet 1/2 turn after 4 minutes, until asparagus is tender.
- To serve, cut large X across top of packet; carefully fold back foil to allow steam to escape. Sprinkle with cashews.

- Meantime, in a small pan, melt butter.
- To melted butter add lemon juice, marjoram & cashews, simmering over low heat for 2 minutes.

- Preheat wok or skillet to medium high or 325.
- Snap off tough ends of asparagus. Cut asparagus into 2 inch pieces.
- Pour oils around top of a preheated wok or skillet for 2 minutes. Add ginger, stir-fry for 30 seconds.
- Add asparagus, and stir fry for 2 minutes.
- Add mushrooms, and stir fry 5 minutes or until asparagus is crisp-tender.
- Add cashews and soy sauce; toss gently.

- Preheat a grill to medium-high heat. Place a cooling rack upside down on the grill.
- Toss the asparagus with 1/3 cup of the olive oil and some salt and pepper. Grill the asparagus, turning often to ensure even charring, about 5 minutes.
- Add the Pecorino-Romano, lemon zest and juice and some salt and pepper to a bowl and mix to combine. Slowly whisk in the remaining 1/3 cup olive oil to form an emulsion.
- Arrange the asparagus on a serving plater. Drizzle with the dressing and garnish with the pine nuts and more Pecorino.

- Cut each stalk diagonally into 3 or 4 pieces.
- Heat the oils together in a wok over high heat.

This is so good. Just had it at my neighbors house this past week end. Had to ask her for the recipe. Will sure make this again on our grill. I think I will add a little Soy Sauce to mine when I make it, just to perk it up a little.

ASPARAGUS AND CASHEW STIR FRY
The combination of fresh asparagus and crunchy, salty cashews is a winner. As a side vegetable it goes well with simple grilled fish, pork, and poultry. Or, I've just sauteed some cubed, boneless chicken breasts to the skillet before adding the asparagus. It's delicious either way.

- Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
- Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.

- Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
- On baking sheet, drizzle oil over trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare mayonnaise.
- Process 2 tablespoons of cashews in a blender until finely ground. In a small bowl, stir to combine ground cashews, mayonnaise, curry powder, lemon juice, and salt. Set aside.
- To serve, divide asparagus among 4 plates and top with a dollop of mayonnaise mixture. Garnish with a few chopped cashews.
