2 cups diced, unpeeled Granny Smith or Golden Delicious apples ((about 1.5 medium apples))
2 cups diced unpeeled red apples (such as Red Delicious, Gala, or Honey Crisp) ((about 1.5 medium apples))
1/4 cup golden raisins
1 tablespoon apple juice ((or sub with orange juice or lemon juice))
5.3 ounces (about 1/2 cup) Greek-style vanilla yogurt
1/4 cup light mayonnaise
1/2 teaspoon apple pie spice ((can substitute with ¼ teaspoon cinnamon and 1/4 teaspoon of nutmeg))
¼ cup chopped toasted pecans
¼ cup unsweetened shredded coconut

Steps:

  • In a medium bowl, toss together apples, raisins, and juice.
  • In a small bowl, whisk together yogurt, mayonnaise and apple pie spice.
  • Gently combine yogurt mixture with apple mixture. Refrigerate until ready to serve.
  • Just before serving, sprinkle with pecans and coconut.

1/3 cup reduced-fat whipped topping
1/4 teaspoon plus 1/8 teaspoon ground cinnamon, divided
2 medium red apples, chopped
1 large Granny Smith apple, chopped
1/4 cup dried cranberries
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the yogurt, whipped topping and 1/4 teaspoon cinnamon. Add apples and cranberries; toss to coat. Refrigerate until serving. Sprinkle with walnuts and remaining cinnamon before serving.

6 tablespoons olive oil
1/4 cup minced fresh cilantro
1/4 cup orange juice
1/4 cup white or regular balsamic vinegar
2 tablespoons honey
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon Sriracha chili sauce
2 large apples, cut into 1/2-inch wedges
1 package (5 ounces) spring mix salad greens
1 cup walnut halves, toasted
1/2 cup crumbled blue cheese

Steps:

  • For dressing, whisk together first 8 ingredients. In a bowl, toss apples with 1/4 cup dressing. Let stand 10 minutes., Place apple slices on a grill rack over medium heat; reserve marinade left in bowl. Grill apples, covered, until tender and lightly browned, 3-4 minutes per side, brushing with reserved marinade., To serve, toss greens with remaining dressing. Top with grilled apples, walnuts and cheese.

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean, optional
1/2 orange, juiced
1 banana, sliced
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 pint fresh strawberries, hulled and cut in half
1 bunch seedless green grapes, halved

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the orange juice and banana slices in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into serving bowls and top with the yogurt.

I've made this apple salad since Christmas, 1989. I love it;as a side dish, it accompanies ham very well. It's a take on the classic Waldorf salad from the Junior League cookbook, "Creme de Colorado". Pink Lady apples work very nicely in this salad too!

1 golden delicious apples or 1 granny smith apple, cored and chopped
1 cup seedless raisin (or a 1/2 cup seedless and a 1/2 cup golden raisins)

1/2 cup cubed cheddar cheese
1/3 cup chopped macadamia nuts
1 orange, juice of
8 ounces vanilla yogurt
1/8 teaspoon ground cinnamon

Steps:

  • In medium bowl, combine apples, raisins, celery, cheddar cheese, and nuts.
  • In a small bowl, blend orange juice into yogurt; pour over salad and toss well.
  • Sprinkle cinnamon on top.
  • May eat salad then or chill for an hour.
