1 ounce grapefruit juice
1 ounce Aperol
1/2 ounce lemon juice
Splash of lime seltzer
Edible flower petals, for garnish

  • Add the vodka, grapefruit juice, Aperol and lemon juice to a shaker. Add ice and shake. Strain into a small stemmed glass. Top with a splash of lime seltzer and garnish with edible flower petals.

4 ounces ruby red grapefruit juice
2 ounces vodka
1 ounce Rosemary Simple Syrup, recipe follows
1 small sprig fresh rosemary, for garnish
1 cup sugar
1 sprig rosemary

Steps:

  • Combine the grapefruit juice, vodka and Rosemary Simple Syrup in a cocktail glass. Stir, add ice cubes and stir again. Garnish with a rosemary sprig.
  • Combine the sugar, rosemary and 1 cup water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. Let cool, then remove the rosemary sprig. Store in a sealed container in the refrigerator for up to 1 month.

One 3-pound red cabbage, cored and coarsely shredded, or a mix of red and green cabbages (10-12 cups)
1/4 pound slab bacon or 4 slices thick-cut bacon, diced
1/2 cup white vinegar, cider vinegar, or white wine vinegar
1/2 teaspoon celery seeds
1/4 teaspoon crushed red pepper flakes
2 teaspoons salt
1 teaspoon freshly ground black pepper
Pepper vinegar to taste

Steps:

  • In an 8-quart stockpot, bring 4 quarts water to a boil over high heat. Blanch the cabbage by submerging it in the boiling water just until it turns a dull grayish purple, about 5 minutes. Drain in a colander, shake the colander for a minute or so to remove excess water, and reserve.
  • Scatter the bacon in a 12-inch dry skillet over medium-high heat. With a wooden spoon, move the pieces around until the bacon is firm and barely crisp, about 4 minutes. Remove with a slotted spoon and reserve.
  • Pour the vinegar into the skillet. It will hiss and pop at first but will soon subside. Swirl the vinegar around with the spoon, stirring up any browned bits of bacon. Add the celery seeds and red pepper flakes and stir.
  • Add the cabbage to the skillet and toss to coat it with the vinegar. Add the salt, pepper, and reserved bacon, and continue to sauté, stirring the cabbage around the pan until all its bright magenta glory has returned, about 4 minutes.
  • Place the slaw in a bowl and shake pepper vinegar over it to taste. Pass the cruet at the table for those who wish to fire it up further.

ROSEMARY GREYHOUND

1 cup sugar
4 tablespoons fresh rosemary leaves
6 ounces ruby red grapefruit juice
2 ounces vodka
2 slices ruby red grapefruit, for garnish

Steps:

  • For the rosemary simple syrup: Combine the sugar, rosemary and 2 cups water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar has dissolved. Remove from the heat and let the rosemary infuse for 20 minutes. Strain the syrup into a container, discarding the rosemary. Let cool to room temperature.
  • For the rosemary greyhound: Place the grapefruit juice, vodka and 1 ounce rosemary simple syrup in a cocktail shaker with ice. Shake well to mix. Serve on the rocks, garnished with a grapefruit slice.

1 cup white sugar
1 Earl Grey tea bag

Steps:

  • Zest grapefruit, then section the fruit, cutting it away from the peel and inner membranes. You should have 5 teaspoons zest and 3/4 cup grapefruit sections. Puree zest, sections, and any juices with sugar and vinegar. Add tea bag. Chill, covered, 4 hours to 2 days. Remove tea bag and strain.
  • In a cocktail shaker half-filled with ice, combine 2 fluid ounces shrub and vodka. Shake until very cold. Strain into martini glass or an ice-filled old-fashioned glass. Garnish with a grapefruit wedge.
