2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

I love greens and a friend of mine had given me this recipe a few years back, I think they're just great.The longer you simmer this the tastier they are.

Number Of Ingredients 11

4 bunch mixed greens cleaned and steamed
1/2 lb bacon chopped 1" pieces
1 smoked ham hock
smoked turkey necks or leg
2 medium onions chopped
6 clove garlic minced
1 bunch green onions chopped (optional)
7 c water
2 c chicken broth
1 Tbsp vinegar
salt & pepper to taste

Steps:

  • 1. if leaves are large cut in half
  • 2. cook the bacon in a large stock pot.
  • 3. add water, broth, and vinegar to pot and bring to a boil.
  • 4. add ham hock and smoked turkey, onions,garlic, salt and pepper.Let mixture boil for ten minutes.
  • 5. add greens and bring to a boil, reduce heat and simmer 4 - 5 hrs or until well cooked and most of the water is cooked away
