Summer Strawberry Salad with Feta image

An easy, beautiful strawberry salad recipe to make all summer long. Arugula greens, feta cheese, cucumber, cherry tomatoes and strawberries in a naturally-sweet vinaigrette with fresh strawberries and balsamic vinegar.

¼ cup sliced strawberries
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon chopped shallot
1 tablespoon fresh lemon juice
2 teaspoons honey or maple syrup
½ teaspoon salt
8-10 ounces arugula or spinach greens (or a 50/50 mixture)
½ cup Italian parsley leaves (tender stems are okay) or basil leaves
1 pound strawberries (hulled and quartered)
1 English (seedless) cucumber (sliced into 1/2-inch chunks, or 3 baby Persian cucumbers, sliced)
1 pint cherry tomatoes (any color) (sliced in half)
¼ cup sliced red onion
½ cup crumbled feta cheese

Steps:

  • Combine all ingredients in a blender or small food processor until smooth and creamy. Dressing will keep refrigerated up to 5 days.
  • Put the arugula in a large salad bowl or a large serving platter. Top with the remaining ingredients and drizzle with 3 tablespoons of the dressing. Toss together gently. Serve with additional dressing on the side.

3 medium Roma tomatoes, sliced 1/4-inch thick
10 fresh strawberries, thinly sliced
1 (8 ounce) package fresh mozzarella cheese, sliced 1/4-inch thick
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh basil, or to taste
3 tablespoons olive oil
salt and ground black pepper to taste

Steps:

  • Place tomatoes onto a platter. Alternate strawberries and mozzarella slices in a row beside tomatoes. Drizzle balsamic vinegar over tomatoes only. Toss basil over entire plate. Drizzle olive oil over everything and season the entire dish with salt and pepper.

Green tomatoes are either nearly impossible to find or in such abundance that farmers at the greenmarket almost give them away. This recipe was inspired by Rachael Ray, who gets green tomatoes from a wholesaler when they're scarce or has a favorite farmer at the Union Square Greenmarket in Manhattan set some aside during the late spring and early summer when they're abundant. You can adjust the amount of peppers to control the heat. And red tomatoes work fine if you can't find green ones.

3 large green tomatoes, cored, quartered and thinly sliced lengthwise
2 teaspoons kosher salt, plus more to taste
1 Persian cucumber or 1/3 seedless English cucumber, thinly sliced
1/2 medium white onion, thinly sliced
A fat handful each of parsley and mint, chopped
1 to 2 green chiles, such as serrano or jalapeño, seeded and thinly sliced or finely chopped
Juice of 1 lime
1/4 cup extra-virgin olive oil
Freshly ground black pepper, to taste

Steps:

  • Place tomatoes in a large mixing bowl and toss with the salt. Transfer to a fine strainer and let drain for 20 to 30 minutes.
  • In a shallow dish, combine tomatoes with the cucumber, onion, parsley, mint, chile peppers, lime juice and olive oil. Toss to combine. Add salt and pepper to taste.

1 cup (about 1/2 pound whole berries) small strawberries, trimmed and halved

300g strawberries
250g mixed tomatoes
100g watercress , woody stalks discarded
1 tbsp pink peppercorns
2 strawberries (about 40g), chopped
½ tbsp honey
½ lemon , juiced
3 tbsp extra virgin olive oil

Steps:

  • For the dressing, toast the peppercorns in a dry frying pan for 1-2 mins until fragrant, then bash briefly using a pestle and mortar with a pinch of salt to break up the skins. Add the 2 strawberries and smash them to a paste.
  • Stir in the honey and lemon juice. Tip the dressing into a large bowl, and whisk in the olive oil. Check for seasoning, then add a little more salt or lemon juice, if you like. To assemble the salad, cut the strawberries into quarters or slim wedges, and roughly chop the tomatoes, slicing some and halving others so you get lots of different shapes. Mix with the watercress in the bowl.
  • Divide the salad between four plates or pile onto a platter. Spoon over any dressing left in the bowl.
