Time 1h

Number Of Ingredients 6

1 14-ounce can quality full-fat coconut milk ((splurge on the good stuff))
1 cup unsweetened vanilla almond milk
2-3 Tbsp matcha green tea powder
1/4 cup pitted medjool dates
1/4 cup honey ((or maple syrup for vegan))
1/4 tsp xanthan gum

Steps:

  • Place coconut milk, almond milk, matcha, dates, and honey in a blender and blend until well combined. Add xanthan gum and mix again. Taste and adjust flavor as needed, adding more green tea powder, dates, or honey.
  • Transfer to a mixing bowl and let chill for at least a few hours. Then pour into a pre-chilled ice cream maker and operate according to manufacturer's instructions.
  • Once finished churning you can either eat it as soft serve or transfer it to a freezer-safe container and let harden for 4-6 hours.
  • Be sure to set out 20-30 minutes before serving to allow to soften.
  • If you don't have an ice cream maker, simply pour the "batter" into a freezer-safe container, cover, freeze, and stir/whisk every hour or so to aerate.
  • Will keep in the freezer for a week or so. Best when consumed fresh. I'm sure it would be lovely with pomegranates, fruit compote, or cacao nibs.

GREEN TEA ICE CREAM

Time 1h50m

Yield 1 quart

Number Of Ingredients 6

2 cups heavy cream
2 cups half-and-half
1/2 vanilla bean, split lengthwise
9 egg yolks
3/4 cup sugar
2 tablespoons green tea powder

Steps:

  • In a saucepan over medium heat, combine the cream, half-and-half, and vanilla bean, stirring occasionally to make sure the mixture doesn't scorch on the bottom. When the cream mixture reaches a fast simmer (do not let it boil), set aside to infuse for 10 to 15 minutes.
  • In a medium bowl, whisk together the egg yolks and sugar. Whisking constantly, slowly pour the still-hot cream mixture into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees, the mixture will give off a puff of steam. When the mixture reaches 180 degrees it will be thickened and creamy, like eggnog. If you don't have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat and whisk in the green tea. Meanwhile, half-fill a large bowl with ice water. Strain the mixture into a smaller bowl to smooth it and remove the vanilla bean. Rest the smaller bowl in the ice water and let the mixture cool, stirring often, then continue according to the directions of your ice cream maker.

EARL GREY TEA ICE CREAM

Yield Makes about 1 quart

Number Of Ingredients 6

2 cups heavy cream
1 cup whole milk
3/4 cup (150 grams) sugar
6 tablespoons (30 grams) loose Earl Grey tea
1/2 teaspoon (2 grams) kosher salt
6 large egg yolks

Steps:

  • 1. Pour the cream and milk into a double boiler or a heatproof bowl set over a saucepan of gently simmering water (the bottom of the bowl should not touch the water). Whisk in 1/2 cup (100 grams) of the sugar, the tea, and the salt and stir until the sugar and salt have dissolved. Warm the mixture until you see steam rising from the top. Remove from the heat and strain the mixture into a bowl, pressing on the tea leaves to extract as much infused liquid as possible. Discard the tea leaves and return the infused dairy mixture to the double boiler.
  • 2. Meanwhile, prepare an ice bath in a large bowl and set another bowl over it. Set aside.
  • 3. In a medium bowl, with a kitchen towel underneath it to prevent slipping, whisk together the egg yolks with the remaining 1/4 cup (50 grams) sugar until uniform. While whisking, add a splash of the hot dairy mixture to the yolks. Continue to add the dairy mixture, whisking it in bit by bit, until you've added about half. Add the yolk mixture to the remaining dairy mixture in the double boiler. Set the heat under the double boiler to medium and cook the custard, stirring continuously with a wooden spoon and reducing the heat to medium-low as necessary, until steam begins to rise from the surface and the custard thickens enough to coat the back of the spoon. Hold the spoon horizontally and run your finger through the custard. If the trail left by your finger stays separated, the custard is ready to be cooled.
  • 4. Strain the custard into the bowl sitting over the prepared ice bath and stir for 3 to 5 minutes, or until the custard has cooled. Transfer the custard to a quart-size container, cover, and refrigerate for at least 4 hours or, preferably, overnight.
  • 5. Pour the chilled custard into an ice cream maker and freeze according to the manufacturer's instructions. Place the container in which you refrigerated the custard in the freezer so you can use it to store the finished ice cream. Churn the ice cream until the texture resembles "soft serve." Transfer the ice cream to the chilled storage container and freeze until hardened to your desired consistency. Alternatively, you can serve it immediately-it will be the consistency of gelato. The ice cream will keep, frozen, for up to 7 days.

Time 6h45m

Yield 6 serving(s)

Number Of Ingredients 6

3 1/4 cups whole milk
8 green tea bags
1/4 cup powdered milk (fat free)
8 large egg yolks
1 cup sugar
1 cup heavy cream

Steps:

  • Place milk in a medium saucepan and heat to a simmer. Pour half over the tea bags in a medium bowl and let sit for 30 minutes. Strain, pressing all the liquid from the tea bags.
  • Stir powdered milk into milk mixture and keep warm over low heat.
  • Place egg yolks and sugar in a medium bowl. Using a hand mixer or whisk, beat until thick and pale yellow, the consistency of mayonnaise. While mixing, slowly add the hot milk and whisk until blended.
  • Stir the egg mixture back into the saucepan and add the tea-infused milk; increase the heat to medium. Stir the mixture constantly with a wooden spoon until thickened like a custard sauce and registers 180º on an instant-read thermometer.
  • Strain the custard through a fine mesh strainer into a medium bowl. Stir in cream, cover and refrigerate at least 6 hours before continuing.
  • Pour chilled mixture into ice cream freezer bowl land let mix until thickened, about 20-25 minutes, per manufacturer's instructions.
