SPRING GREEN SPAGHETTI CARBONARA

Spring Green Spaghetti Carbonara image

In 2018, I was working on a cookbook that I knew would be published in October 2020, one month before a contentious election. I thought, no matter what side of the political aisle you were on, you were going to be seriously stressed. (Little did I know that there would also be a global pandemic.) That's when I decided to make the cookbook all about comfort food. I wanted to include recipes for classics like tomato soup and grilled cheese sandwiches but to make them fresher, more delicious and easier to prepare. That's why I called my cookbook Modern Comfort Food. This Spring Green Spaghetti Carbonara is the essence of that idea. Classic pasta carbonara is made with lots of eggs, cheese and pancetta. It's delicious but it's also pretty rich. I lightened it up by adding fresh spring vegetables like snow peas, asparagus and English peas plus lots of scallions and chives. I also find that the classic dish doesn't have that "edge" that I like - a vinegary or tart flavor that really makes all the other ingredients pop - so I added the zest and juice of a whole lemon. Don't worry; I kept all the pancetta and lots of freshly grated Parmesan cheese! This is a delicious dinner: a classic Italian dish, updated, and so comforting on a cold night!

Time 30m

Yield 6 servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
12 ounces spaghetti, such as De Cecco
1/2 pound snow peas, julienned lengthwise
1 cup shelled fresh peas (1 pound in the pod), or frozen peas
12 to 14 thin asparagus, bottom third discarded and tips sliced in 2-inch pieces
2 tablespoons good olive oil
8 ounces small-diced pancetta
1/2 cup heavy cream
2 extra-large eggs
2 extra-large egg yolks
3/4 cup freshly grated Italian Parmesan cheese, plus extra for serving
5 scallions, white and green parts, thinly sliced diagonally
1/4 cup minced fresh chives, plus extra for serving
Zest and juice of 1 lemon

Steps:

  • Bring a large pot of water with 2 tablespoons salt to a boil. Add the spaghetti and cook for 8 minutes, stirring occasionally. Reserve a cup of the pasta water, then add the snow peas, fresh peas and asparagus to the spaghetti and cook for 2 minutes longer. Drain the pasta and vegetables together.
  • Meanwhile, heat the oil in a medium (10- to 11-inch) sauté pan over medium heat, add the pancetta and cook for 7 to 9 minutes, stirring occasionally, until browned. Transfer the pancetta to a plate lined with paper towels and set aside.
  • While the pancetta cooks, fill a large bowl with the hottest tap water and set aside to heat the bowl. Just before you drain the pasta, pour the water out of the bowl. Put the cream, eggs, egg yolks and 1/4 cup of the reserved pasta water into the bowl and whisk to combine. Immediately, add the hot pasta and vegetables and toss with tongs for a full minute or two, until the pasta absorbs the sauce. Add enough reserved hot pasta water to keep the sauce creamy. Add the 3/4 cup Parmesan, the scallions, chives, lemon zest and juice, 1 tablespoon salt and 1 teaspoon pepper and toss well. Add the pancetta, sprinkle with salt and serve hot sprinkled with extra chives and Parmesan.

SPAGHETTI WITH PANCETTA, GREEN BEANS, AND BASIL

Spaghetti with Pancetta, Green Beans, and Basil image

Pancetta (Italian cured bacon) adds salty flavor to this pasta dish; its richness is balanced by crisp-tender green beans and aromatic basil.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 45m

Number Of Ingredients 5

8 ounces spaghetti
4 ounces pancetta, diced, or 4 slices bacon, cut into 1/2-inch pieces
3/4 pound green beans (stem ends removed), halved crosswise
1/2 cup grated Parmesan
1 cup fresh basil leaves, roughly torn

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta, and return to pot.
  • Meanwhile, cook pancetta in a large skillet over medium until browned and crisp, 10 to 12 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate to drain. Pour off all but 1 tablespoon fat from skillet (reserve skillet).
  • Add green beans to skillet; season with salt and pepper. Cover, and cook until beans are crisp-tender, 5 to 7 minutes; transfer to pot with pasta. Add pancetta, cup Parmesan, and enough reserved pasta water to create a thin sauce that coats pasta. Top with basil and remaining cup Parmesan; serve immediately.

GREEN SPAGHETTI

Green Spaghetti image

Mexican-inspired green spaghetti. Garnish with Cheddar cheese if desired.

Provided by Elizabeth

Categories     Main Dish Recipes     Pasta

Time 55m

Yield 8

Number Of Ingredients 11

2 large poblano peppers
2 (16 ounce) packages angel hair pasta
2 (4 ounce) cans chopped green chile peppers
4 cups torn romaine lettuce leaves
1 small onion, chopped
1 bunch fresh cilantro
2 cloves garlic, minced
2 teaspoons vegetable oil
1 (8 ounce) package whipped cream cheese
1 cup sour cream
2 tablespoons lemon juice

Steps:

  • Place poblano peppers on a broiler pan on the highest shelf in the oven, 1 inch below the broiler element. Heat the broiler's oven to high. Broil until fifty percent of the tops are charred, about 5 minutes. Flip and repeat on the other side, about 5 minutes more.
  • Place peppers in a large plastic bag. Allow peppers to steam as they cool, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook, stirring occasionally, until tender, 4 to 5 minutes. Drain.
  • Peel the loosened skin from each pepper. Wipe with a paper towel to remove any remaining pieces. Avoid running peppers under water; this will diminish the charred flavor.
  • Place peeled peppers, canned peppers, romaine, onion, cilantro, and garlic in a blender. Blend until well combined.
  • Heat oil in a large skillet over medium heat. Pour in pepper mixture and saute until tender, 3 to 5 minutes. Mix cream cheese and sour cream together and add to the skillet. Stir in lemon juice. Simmer sauce for 10 minutes. Add pasta to the skillet and mix well.

GREEN BEAN SPAGHETTI

Green Bean Spaghetti image

I love spaghetti but don't want to eat the pasta anymore so I brainstormed and realized that green beans might be a good substitute for pasta. I tried it out and it worked great. I now fix this at home and take it to parties, too. I've gotten many compliments on it. It was even included in a low carb recipe book a few years back...

Provided by Marcia McCance

Categories     Other Main Dishes

Time 20m

Number Of Ingredients 14

SAUTE IN SKILLET WITH A LITTLE OIL
1 medium onion (chopped)
1 medium green bell pepper (chopped)
ADD AND BROWN
1 lb ground beef (or turkey, etc)
salt and pepper to taste
1 Tbsp italian spices with oregano
1 tsp garlic powder (or to taste)
ADD AND COOK TIL BEANS ARE THAWED
3 c frozen cut green beans
ADD AND SIMMER TIL BEANS ARE DONE
1 can(s) tomato sauce (any kind)
1/2 c water
SPRINKLE WITH PARMESAN CHEESE AND SERVE

Steps:

  • 1. This really is a one dish meal -- I adjust the amount of green beans and meat (increase or decrease) to fit the situation and the number of people I'm feeding.
  • 2. I really do just dump the frozen green beans into the pan and cook until they are thawed, cover with sauce, and simmer til tender. Sometimes I add other frozen vegetables, too -- such as broccoli or okra
  • 3. I also like to add some more garlic powder and Italian spices for the last 5 minutes of cooking time to freshen up the flavors. You can also add a little more salt and pepper if you like at that time. Just taste it and see.

Time 40m

Number Of Ingredients 10

500g lean pork mince
1 apple , grated
1 tsp fennel seeds
1 tbsp oil
250g-300g wholemeal spaghetti (for children, use white spaghetti as wholemeal can be too filling)
200g baby spinach , plus extra to serve
1 ripe avocado , stoned and peeled, plus extra to serve
small bunch basil
100g frozen peas
25g parmesan , grated, plus extra to serve

Steps:

  • Mix the mince, apple and fennel seeds in a bowl. Divide and roll into 24 cherry tomato-sized balls. Heat the oil in a large frying pan. Cook the meatballs until golden brown and cooked through. Heat a large pan of water and cook the pasta following pack instructions.
  • Meanwhile, make the sauce. Set aside a handful of spinach, 4 tbsp peas and half the avocado for later. Pour hot water over the rest of the peas to defrost them, then drain well. Whizz the defrosted peas, spinach, avocado, basil and parmesan in a blender with 100ml pasta water, adding more if needed, to make sauce. Season well.
  • Add the reserved frozen peas to the pasta for the last min of cooking. Drain, saving some of the water, and tip the pasta into the meatball pan. Add the sauce and cook for a minute or 2 until hot, adding more seasoning or pasta water if you need to. Serve a salad of spinach and avocado on the side and top the pasta with extra parmesan for adults, if you like.
