The best part about this cheesy rice recipe is that it's great both hot or cold. It's a dish I make often since cheese and rice are staples in my pantry and because it travels well, I like to take it to a picnic or a barbecue.

1 cup water
1/2 cup uncooked long grain rice
1/4 teaspoon salt
1/4 cup cubed process cheese (Velveeta)
1 tablespoon minced fresh parsley, optional

Steps:

  • In a small saucepan, bring the water, rice and salt to a boil. Reduce heat; cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. , Remove from the heat; stir in cheese and parsley if desired. Cover and let stand for 2 minutes or until cheese is melted. Stir until blended.

I like to serve this dish at Thanksgiving and Christmas - or for that matter, anytime we have guests. It's a "no-fail" recipe.

3 cups cooked rice
1 cup minced fresh parsley
1/2 cup shredded cheddar cheese, divided
1/3 cup chopped onion
1/4 cup chopped green pepper
1 garlic clove, minced
2 large eggs, lightly beaten
1 can (12 ounces) evaporated milk
1/2 cup canola oil
3 tablespoons lemon juice
1 tablespoon grated lemon zest
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.

1 cup uncooked long grain white rice
1 (14 ounce) can chicken broth
1 cup reduced fat sour cream
1 (4 ounce) can diced green chile peppers
1 cup shredded Monterey Jack cheese, divided
1 (8.75 ounce) can whole kernel corn, drained
¼ cup finely chopped fresh cilantro
salt and ground black pepper to taste

Steps:

  • In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1-1/2 quart casserole dish.
  • In the pot with the cooked rice, mix the sour cream, green chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro. Season with salt and pepper. Transfer to the prepared casserole dish, and top with remaining cheese.
  • Bake uncovered 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.

Number Of Ingredients 9

1 3/4 cups chicken broth or water
2 roasted poblano peppers, stems, seeds and skin removed
1 roasted jalapeno pepper, stem, seeds and skin removed
1/2 cup chopped fresh cilantro leaves, divided
Kosher salt
2 tablespoons vegetable oil
1 Spanish onion, finely diced
4 garlic cloves, peeled and finely chopped
1 1/4 cups long-grain rice

Steps:

  • Combine the broth and chiles in a medium saucepan, bring to a boil, and then partially cover and simmer gently over medium to medium-low heat for about 10 minutes. Pour the chile mixture into a food processor, add 1/4 cup cilantro and process to a smooth puree. Season with salt and keep warm.
  • Wipe the pan clean, add the oil, and heat over medium-high heat. Add the onions and cook until soft. Add the garlic and cook for 1 minute. Stir in the rice and cook for 1 minute. Add the warm broth mixture, stir, and season with salt. Bring to a boil, cover, and then reduce the heat to medium-low and cook for 15 minutes. Remove from the heat and let sit for 5 minutes, covered. Fluff with a fork, transfer to a bowl, and stir in remaining cilantro.
