2 hearts romaine, chopped
1 sack, 5 ounces, mixed baby greens
6 red radishes, sliced
1 cup fresh snap peas, chopped
6 scallions, sliced on an angle
3 tablespoons red wine vinegar, eyeball it
1 rounded teaspoon sugar
1/2 cup red pepper relish, found on condiment aisle
1/2 cup extra virgin olive oil, eyeball it
Salt and freshly ground black pepper

Steps:

  • Combine chopped romaine, baby greens, radishes, snap peas, and scallions in a large salad bowl. Combine vinegar, sugar and relish in a small bowl. Whisk in oil in a slow stream. Toss salad with dressing. Season salad with salt and pepper, to your taste and serve.

1 can (10-3/4 ounces) condensed tomato soup, undiluted
3/4 cup sugar
2/3 cup cider vinegar
1/2 cup canola oil
1 large green pepper, cut into chunks
1/2 medium onion, cut into chunks
1 garlic clove, halved
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon paprika
Salad greens and vegetables of your choice

Steps:

  • In a blender, combine the first 10 ingredients; cover and process until smooth. In a large bowl, combine salad greens and vegetables of your choice. Serve dressing with tossed salad. Store leftovers in the refrigerator; shake before using.
