CREAMY CHEESY BACON N GREEN ONION POTATO CASSEROLE

This potato casserole is made with velveeta cheese and grated parmesan. Its a good change up from using cheddar cheese. The bacon and green onion really gives this dish a great flavor.

5 medium (approx) thinly sliced/drained white potatoes
4-6 strips bacon cooked and crumbled ( you can use hormel bacon bits or pre-cooked oscar mayer bacon)
3/4 stick butter or margarine (reserve 2 tbs)
6-8 green onions diced halfway up stem
2 1/2 tbs flour
1 1/2 - 2 cups (approx) whole milk
3/4 cup (approx) velveeta cheese (cubed) .. or american cheese
2-3 tbs parmesan cheese (approx)
salt/ pepper to taste
2 tbs bread crumbs (reserved)
parsley flakes (optional)

Steps:

  • 1. Pre-heat oven at 350 degrees In medium size sauce pan sautee diced green onion in 2 tbs butter/margarine, once slightly browned add all "but" 2 tbs of butter/margarine .. heat on low ... once melted add flour and stir until blended ...slowing add milk stirring constantly until mixture is a gravy like smooth consistency (you be the judge if more or less milk is needed making sure cream mixture in not too thick )... add bacon bits and parmesan cheese to creamy mixture and stir. Using a 3 qt lidded casserole dish( sprayed with butter flavored non stick cooking spray) , add potatoes, pour cream mixture over potatoes and mix well.
  • 2. Place casserole dish w/lid on in a 350 degree oven and bake for 30 minutes ... remove from oven ... stir in remaining 2 tbs of butter/maragarine and velveeta cheese ... bake an additioanl 30-35 minutes until lightly browned and potatoes are soft. Remove from oven let cool a few minutes before serving. Enjoy!
  • 3. Note: If potatoes are too creamy/loose add a tablespoon or 2 of breadcrumbs ... stir and return to oven for an additonal 5 minutes.

6 medium potatoes
1 teaspoon salt
1 cup sour cream
6 -8 green onions, chopped with some greens
1 cup sharp cheddar cheese, shredded
1/3 cup butter, melted (you can use less)

Steps:

  • Peel, quarter, and boil potatoes until barely tender.
  • Drain, cool and grate on large side of grater.
  • Place in a large bowl.
  • Gently mix in all other ingredients, except butter.
  • Place mixture into a greased shallow 9x9 pan.
  • Top with melted butter.
  • Bake at 400 degrees for 30 minutes or until golden.

6 medium russet potatoes - boiled in salted water -cooled, peeled and grated
2 c sour cream
8 green onions, sliced
2 c cheddar cheese, shredded - i use sharp - reserving 1/2 cup for topping
1 1/2 tsp salt or to taste
1 tsp pepper
1/2 tsp dried rosemary - optional
3/4 - 1 c frenches, french fried onions

Steps:

  • 1. Poke your potatoes with a fork and boil in salted water until centers are tender. Drain and cool. Once cool, peel and shred...I either use my grater or food processor. In a large bowl, combine potatoes, onions, seasonings,sour cream and 1 1/2 cups cheese.
  • 2. Preheat oven to 375 degree F. Grease a large casserole dish, I use my 3 quart corning casserole. Could also use a 9 x 13 baking dish. Spread potato mixture into prepared dish. Bake for approx, 30 minutes - sprinkle with remaining 1/2 cup cheese and then french fried onions - place back in oven and continue baking until top is browning and bubbly. Serve hot...enjoy!
