IRMA'S CREAM CHEESE GREEN ONION CHIP DIP
My mom, Irma, passed away 2 years ago, and this was one of my favorite "treats" that she made. She never liked sour cream dips, but she loved cream cheese. She found/made up this recipe before I was born. Christmas, Easter etc., a family party just wasn't a party without this dip and lots of potato chips! When I brought my boyfriend(now husband) to the first family party, he wasn't too impressed with the dip, as he was used to the saltier, stronger tasting sour cream onion soup mix dip. But now he loves it! He uses it on everything when I make it! He likes it on potato chips, of course, but also on hamburgers, hotdogs, bagels, crackers and even veggies. It has a smooth, creamy texture that enhances other foods instead of overpowering them. One of my sisters uses the basic recipe and then adds a can of drained baby shrimp-if you like shrimp, you'll love that. Other family members add garlic or other spices. I'm submitting the basic recipe that Mom used, with my addition of Bon Appetit, as that is my favorite way to do it. I hope you enjoy this as much as our family does! P.S. you can use low/no fat or Neufchatel cream cheese for fewer calories, and it still tastes good.

Steps:
- Put cream cheese in mixer bowl to soften.
- Clean and remove roots, then slice green onions thinly. Use all the white tips, most of the light green parts, and slice two or three using the dark green tops for some color. It should be 1/4-1/2 c of onion bits, to your taste. Set aside.
- Start beating cream cheese with mixer, adding milk slowly, until the mixture is smooth and creamy. You may need more or less milk to get the consistency you want.
- Add Bon Appetit using more or less, to your taste and/or any other spices or herbs you want to use.
- Add green onions and mix until they're evenly distributed. Taste and add more seasoning or more milk, as needed.
- If you add shrimp, do it last, so they don't get too broken up.
- Chill for 1-2 hrs or overnight to let the flavors blend-that never happens at our house, lol, but it does taste better the next day if you can wait!
- In a pinch, I have used regular onions, chopped fine. I have even used dehydrated onion flakes, soaked in the milk. This is a very versatile and forgiving recipe. Have fun with it!

- Place grilled green onions, oil, lemon juice, and zest in a food processor and process until smooth. Add the feta and garlic and process until combined and smooth. Scrape the mixture into a bowl and garnish with the additional sliced green onions.
- Heat grill to high. Brush the pitas with the remaining oil and season with salt and pepper, to taste. Grill for 1 minute per side or until lightly golden brown. Remove from the grill and cut each pita into eighths. Serve with the feta dip.

- Put the 2 cereals into a gallon-sized bag and seal. Place on a flat surface and, using a rolling pin, crush the cereal until it's still slightly chunky. Pour into a medium sized bowl and add the flour, salt and pepper and mix to combine.
- Dip the chicken pieces into the beaten eggs, 1 at a time, and transfer to the breading mix. Coat well and refrigerate for 30 minutes.
- Pour the oil into a large saucepan and place over medium-high heat for 2 to 3 minutes. Test the oil by dropping a bread cube in; if it browns within 1 minute the oil is ready. Drop the chicken nuggets into the hot oil, 4 pieces at a time, and cook 2 minutes, or until the breading is golden and the chicken is cooked through. Repeat with the remaining chicken nuggets. Keep warm in a low oven until ready to serve.
- Place all ingredients in a small bowl and mix until well combined. Refrigerate until ready to use.

- In a large saucepan let the beans soak in cold water to cover for 1 hour, drain them, and in the pan combine them with 2 quarts of the water. Bring the water to a boil and cook the beans at a slow boil for 1 hour, or until they are tender.
- While the beans are cooking, in a large heavy skillet cook the bell pepper and the onion in the oil over moderate heat, stirring, until the vegetables are softened. Drain the beans, reserving 1/2 cup of them, add the remaining beans to the bell pepper mixture with the remaining 1/4 cup water, and simmer the mixture, covered tightly, for 15 minutes, or until the beans are very tender. In a food processor blend the mixture with the vinegar and salt to taste, pulsing the motor until the mixture is combined well but not puréed smooth. Transfer the dip to a bowl and stir in the reserved 1/2 cup beans. The dip may be made 2 days in advance and kept covered and chilled. Garnish the dip with the reserved bell pepper and onion and serve it with the tortilla chips.

- For the herb buttermilk dip: Smash the garlic, sprinkle with salt and work to a paste with your knife blade. In a bowl, whisk together the yogurt, buttermilk, lime zest and juice, cilantro, parsley, garlic paste and some salt and pepper. Cover, and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
- For the ebelskivers: In a large bowl, whisk together the flour, baking powder, baking soda, sea salt, nutmeg, black pepper and cayenne.
- In a medium bowl, combine the buttermilk, egg yolks, sweet potato puree, 4 tablespoons melted butter and green onions. Whisk until smooth. Slowly add the sweet potato mixture to the dry ingredients, stirring until combined. Whip the egg whites in a medium bowl until stiff peaks form. Gently fold the egg whites into the batter.
- Set the ebelskiver pan over medium heat, and brush each divot with melted butter. Heat until the butter begins to bubble. Add 2 tablespoons of the batter to each divot. Cook until the sides of the ebelskivers are golden brown and come away easily from the pan (use a skewer to check) and the top starts to dry a bit and bubble, 3 to 4 minutes. With a skewer, carefully turn the ebelskivers over and cook until deep golden brown on the second side, about 3 minutes more; transfer to a platter. Repeat with the remaining batter. Serve the ebelskivers with herb buttermilk dip on the side.
WARM ROASTED MUSHROOM, GREEN ONION AND CHEDDAR DIP
