1 tablespoon creamy horseradish
1 teaspoon German-style whole-grain mustard
Zest and juice of 1 lemon
1 tablespoon unsalted butter
2 cups French green beans (about 8 ounces)
Salt and pepper

Steps:

  • Stir together the creamy horseradish, mustard, lemon zest and juice in a small bowl.
  • Melt the butter in a large skillet over medium heat. Add the green beans and sauté until barely tender, 5 minutes. Add the horseradish mixture and continue sautéing until the beans are tender and coated in the sauce. Add salt and pepper to taste. Serve immediately.

1 (8 ounce) container sour cream (about 1 cup)
2 tablespoons mayonnaise or 2 tablespoons salad dressing
1 tablespoon Dijon mustard
1 tablespoon prepared horseradish
salt & freshly ground black pepper
3 -4 green tomatoes
salt
1 egg white
1 cup self-rising cornmeal, mix
1/2 cup butter or 1/2 cup margarine
1 teaspoon pepper

Steps:

  • In small bowl, combine all sauce ingredients; mix well. Cover and refrigerate.
  • Slice tomatoes about 3/8-inch thick. Sprinkle lightly with salt. In shallow dish, beat egg white with fork. Place corn meal mix on plate or in shallow dish.
  • In large skillet over medium-high heat, melt 2 tablespoons butter. Dip tomatoes in egg mixture, then in corn meal mix to coat. Add tomato slices to skillet in single layer.
  • Cook over medium-high heat until golden brown; turn and cook until browned on other side.
  • Drain on paper towels.
  • Repeat with remaining ingredients, adding butter as needed.
  • Serve warm with Horseradish Sauce.

1 1/2 pounds ground beef sirloin
Coarse salt and ground pepper
1 tablespoon olive oil
1 pound green beans, stem ends removed
1 medium red onion, halved and thinly sliced
1/3 cup light mayonnaise
1/4 cup fresh parsley, chopped
1 tablespoon prepared white horseradish
4 thick slices tomato
4 thick slices country bread, toasted

Steps:

  • Form beef into four patties; season with salt and pepper. In a large skillet, heat oil over medium. Add patties; cook 6 to 8 minutes per side for medium. Transfer to a plate, and tent with aluminum foil; set aside.
  • To skillet, add green beans, onion, and cup water; season with salt and pepper. Cover, and cook, tossing occasionally, until beans are crisp-tender, 5 to 7 minutes. Uncover, and cook, tossing, until water has evaporated, about 2 minutes.
  • Make sauce: In a small bowl, stir together mayonnaise, parsley, and horseradish; season with salt and pepper. Place tomato slices and burgers on toast; top with horseradish sauce, and serve with green beans.

1 lb fresh green beans
1/2 cup plain nonfat yogurt
1 tablespoon all-purpose flour
2 teaspoons prepared horseradish
1/2 teaspoon Dijon mustard
1/4 teaspoon celery seed

Steps:

  • Wash beans and remove ends and strings.
  • In a medium saucepan cook green beans in a small amount of boiling water for 20 to 25 minutes or until crisp-tender.
  • Meanwhile, for sauce, in a small saucepan stir together the yogurt and flour.
  • Stir in horseradish, mustard and celery seed.
  • Cook and stir till thickened and bubbly.
  • Cook and stir for 1 minute more.
  • Pour sauce over green beans; toss gently to coat.

10-ounce package frozen chopped spinach, thawed
1/2 cup light mayonnaise
1/4 cup vermouth
6 tablespoons prepared white horseradish
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley leaves
4 cups cooked rice (regular or instant)
Lemon wedges, to garnish

Steps:

  • Coat a large saute pan or large stovetop grill pan with cooking spray. Season both sides of chicken with salt and black pepper. Place chicken on prepared pan and cook until golden brown on each side and cooked through.
  • Meanwhile, in a food processor, combine spinach, mayonnaise, vermouth, horseradish, lemon juice, and parsley. Process until blended and smooth. Season, to taste, with salt and black pepper. Spoon sauce over half of the chicken. Reserve remaining chicken for another recipe.

1 cup (generous) minced red onion

1 1/2 teaspoons coarse kosher salt

  • Line rimmed baking sheet with plastic wrap. Using/on off turns, finely chop 1/2 of fish in processor (do not puree to paste); transfer to bowl. Repeat with remaining fish. sriracha sauce (optional)
2 1/2 lbs chicken breasts, cutlets
1 -2 cup buttermilk
1 cup all-purpose flour
1 teaspoon ground black pepper
1/2 teaspoon salt
oil (for frying)
1/2 cup unsalted butter, plus
1 tablespoon unsalted butter
1 (4 ounce) can mild green chilies
2 teaspoons prepared horseradish
1/2 cup sweet pickle relish
2 cups heavy cream

Steps:

  • Bring a large pot of salted water to boil. Add the beans and cook 3 to 4 minutes, remove and cool in a bath of ice water.
  • Prepare the Green Chile-Horseradish Sauce and the Buttermilk Fried Chicken. As chicken cooks, heat 2 tablespoons butter in a large saute pan, add the green beans and season with salt and pepper. Keep warm.

1/4 cup chopped arugula leaves
1/4 cup chopped fresh Italian parsley leaves
1/2 cup mayonnaise
6 tablespoons drained prepared white horseradish
2 1/2 tablespoons (or more) dry white wine
2 tablespoons fresh lemon juice
1 tablespoon fresh lime juice

Steps:

  • Place spinach in sieve and press very dry. Place 1/4 cup firmly packed spinach in processor (reserve remainder for another use). Add arugula and parsley; chop finely. Buttermilk Fried Chicken with Green Chile-Horseradish Sauce image

1/4 cup flour
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
2 chicken breasts
1/2 cup buttermilk
4 tablespoons butter
1/2 can mild green chiles, 4oz
1 teaspoons horseradish
1 cups heavy cream
1 dash salt

Steps:

  • Line a baking sheet with paper towels. Put the chicken and buttermilk in a large bowl, cover, and refrigerate for 2 hours. Put the seasoned flour in a shallow dish.
  • Heat 1 inch of oil in a large, heavy skillet or Dutch oven over high heat to 350 degrees.
  • Remove the chicken from the buttermilk and dredge in the flour on both sides. Gently place in the oil and cook in batches, turning, until golden brown and crispy on the outside and cooked through, 5 to 10 minutes. Remove with a slotted spoon to the paper towel- lined baking sheet. Allow the oil to return to 350 degrees between each batch.
  • Melt 1 tablespoon of the butter in a small saucepan over medium heat. Add the chiles, horseradish, and pickle relish. Cook for 3 minutes and add the heavy cream. Increase the heat to medium-high and let boil for 3 minutes, watching closely to make sure the mixture doesn't boil over. Allow the mixture to cool slightly, then transfer to a blender or food processor and puree, being very careful with hot liquids in the blender, as they can overflow suddenly. Pour the mixture through a fine-mesh strainer back into the saucepan. Add the remaining 8 tablespoons butter, season with salt, and cook over medium heat, stirring occasionally, until the sauce is reduced to about 2 cups. It should be fairly thin. Keep warm until ready to use.
