Herbed Chicken Burgers are a healthy and delicious option for your backyard barbecue. Grill them up, and serve with a zesty lemon chive mayo!

For the lemon mayo
1/2 cup mayonnaise
1 teaspoon lemon zest
1 tablespoon lemon juice
1/8 teaspoon salt
2 tablespoons fresh chives, finely chopped (optional)
For the chicken burger
1 pound ground chicken
1 large egg
1 cup breadcrumbs, divided
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
To serve
4 brioche buns
1 ripe avocado, thinly sliced
1/2 red onion, sliced
1 medium tomato, sliced

Steps:

  • Make the lemon mayo: In a small bowl, combine the mayonnaise, lemon zest, lemon juice, salt, and chives. Wrap the bowl in plastic wrap and set aside until you are ready to assemble your burgers.
  • Preheat the grill and add oil: Preheat the grill for direct heat grilling, by turning gas burners to medium-high or spreading charcoal coals so there is direct heat under the grilling grates. The temperature should be 450-500˚F. To make sure the burgers do not stick, dip a clean kitchen towel or some paper towels in oil and use tongs to quickly rub down grill grates. Alternatively, you can spray the grates with spray oil, but be careful of flare-ups.
  • Grill the buns: Grill the plain buns for 20 seconds and remove from the grill.
  • How to store and reheat leftovers: Leftover chicken burgers keep well in the fridge for 3-4 days. They reheat really well in the microwave on high for 1 minute.

2 x cans chickpeas , drained
1 small onion , very finely chopped
4 garlic cloves , finely chopped
500g mashed potatoes (700g/1lb 9oz potatoes), mashed with 25g/1oz butter
finely grated zest of 2 lemons
juice of ½ lemon
50g fresh parmesan , finely grated
1 egg , beaten
2 x packs flatleaf parsley , chopped
10g pack fresh chives , chopped
4 x packs goat's cheese
plain flour , for dusting
2 tbsp olive oil

Steps:

  • Mash half the chickpeas in a bowl, then stir in the remaining chickpeas, the onion, garlic, mashed potatoes, lemon zest and juice, parmesan, egg, herbs, two of the goat's cheeses and a good amount of sea salt and pepper. When combined, divide into 12 and, using floured hands, shape into thick patties. Dust with flour and transfer to a plate. Cover and chill for 30 minutes.
  • Heat the oil in a non-stick frying pan and fry the patties for about 3-4 minutes on each side until well browned and hot all the way through. Slice the remaining goat's cheeses into 12, and lay a slice on each pattie. Place under a hot grill to melt the cheese. Serve hot.

1 green onion
1 egg
2 teaspoons Dijon mustard
1 teaspoon lemon pepper seasoning
1/2 teaspoon crushed red pepper flakes
1 lb ground chicken
1 log creamy herbed goat cheese, well chilled
1 tablespoon oil
4 hamburger buns

Steps:

  • Thinly slice onion.
  • In a large bowl whisk egg and add onion, mustard, spices, and chicken.
  • Mix using hands until all ingredients are evenly distributed.
  • Divide into four portions and roll each one into a ball.
  • Using your finger, poke a hole in the center of each ball.
  • Cut 4 tablespoon sized portions of goat cheese from the log and roll each one into a ball.
  • Push each cheese ball into the holes in the meat balls.
  • Press meat mixture over the cheese and flatten into burgers about 3/4 inch thick.
  • Heat oil in a pan and cook burgers about 7 minutes on each side, until cooked through.
  • Serve on buns.

CHICKEN WITH HERBED GOAT CHEESE

3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

5 ounces (about 3/4 cup) soft fresh goat cheese, room temperature
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon peel
1 garlic clove, minced
5 teaspoons olive oil
16 French-bread baguette slices, toasted

Steps:

  • Place goat cheese in small bowl. Mix thyme, lemon peel and garlic in another small bowl; season with ground black pepper. Mix half of thyme mixture into goat cheese. Add olive oil to remaining half of thyme mixture. Form cheese into 2 1/2-inch round; flatten slightly. Place in center of plate. Spoon oil-thyme mixture over top of cheese. Surround cheese with baguette slices and serve.

4 skinless, boneless chicken breasts
8 rashers smoked bacon
4 burger buns, split
4 slices of your favourite cheese (optional)
2 avocados, halved, stoned, peeled and sliced
2 tomatoes, sliced
4 handfuls of lettuce leaves
1 garlic clove
2 tsp chopped thyme leaves, or 1 tsp dried thyme
½ lemon, juiced
3 tbsp olive oil
3 tbsp mayonnaise
1 tbsp lemon juice
1 tsp mustard
small splash of chilli sauce (optional)

Steps:

  • First, make the marinade. Crush the garlic with the thyme and a pinch of salt using a pestle and mortar. Add the lemon juice, olive oil and plenty of cracked black pepper and mash together to combine. Lay the chicken breasts out on a board and flatten slightly using a rolling pin until they are an even thickness. Transfer to a container with the marinade, then seal, shake and chill until needed, or for up to 1 hr. Light the barbecue and wait until the coals are ashen, or heat a gas barbecue to medium. Mix the sauce ingredients together in a small bowl and keep chilled.
  • Cook the bacon on the barbecue for 3-4 min until crisp. Remove to a plate and set aside. Toast the cut side of the buns where you grilled the bacon to soak up the fat, then remove and set aside. Barbecue the marinated chicken breasts for 4-5 mins on each side until lightly charred. Top each with a slice of cheese, if using, and cook for a few minutes more until the cheese has melted and the chicken is cooked through (a probe thermometer should read at least 65C).
  • Spread the base of each bun with the sauce, then top with the avocado slices, tomatoes, chicken, bacon and lettuce. Sandwich with the bun tops, press down lightly and serve.
