Yield 2 pint jars

Number Of Ingredients 5

1 to 1 ½ pounds of unripe figs
2 cups of white sugar
5 cups of water
6 whole cloves
1 lemon, 6 strips of zest

Steps:

  • 1. Prepare the figs: wash and cut off the stem. Make a slit at the bottom. 2. Place figs in a pot and cover with water. Cover pot and boil for 15 minutes. 3. Remove the figs and dispose of the boiled water. Rinse the pot. 4. Repeat Steps 2 and 3 three more times. The figs should be soft but still retain their shape. 6. Place figs back in the pot and add the 5 cups of water, sugar, the juice of half the lemon (about 2 tablespoons), 4 strips of lemon peel and cloves. Bring to a boil and continue cooking partially covered until the liquid becomes slightly syrupy and the figs begin to glisten. If there are figs that are becoming too soft and look as if they might lose their shape but the liquid has not reached the desired consistency, remove those figs with a slotted spoon and place in a clean bowl. 7. Cool the figs in their syrup. 8. Fill the two jars with figs and syrup, including the peels and cloves. Before sealing, add a strip of lemon peel (the two pieces that were not cooked with the syrup) at the top of each jar. Seal and refrigerate. 9. The figs are ready to eat after a week.

Figs come into season in late spring and again in late summer. For this recipe, look for figs that are firm to the touch. You can also use dried figs if they aren't in season where you live. Rehydrate the dried figs by soaking them in water overnight before adding them to the simmering syrup.

1 pound(s) unripe figs
2 cup(s) sugar
2 cup(s) water
1 1/2 tablespoon(s) fresh lemon juice
- water to initially boil the figs in

Steps:

  • Bring a large saucepan of water to a boil over medium-high flame. Add the figs, and boil for about 30 seconds. Drain the figs and rinse them with cold water.
  • Trim the stems and peel the skin from the figs with a paring knife. Use gloves to keep the juice from staining your hands.
  • Add the sugar, 2 cups water, and lemon juice to a large saucepan Bring to a boil, stirring to dissolve the sugar. Stir in the figs. Reduce heat to medium-low and simmer for about 20 to 30 minutes, stirring occasionally. They syrup will darken.
  • Pour the figs and syrup into clean jars. Seal tightly and store for a couple of days before eating. The preserves will keep in the refrigerator for a couple of months.
