4 ounces cream cheese, softened
1 cup shredded Colby-Monterey Jack cheese
1 cup shredded part-skim mozzarella cheese
1 can chopped green chilies, drained
2 tablespoons mayonnaise
1/4 teaspoon garlic powder
Dash seasoned salt
12 slices white bread
6 slices tomato
1/4 cup butter, melted

Steps:

  • In a small bowl, mix the first 7 ingredients until blended. Spread over half the bread slices. Top with tomato and remaining bread., Brush outsides of sandwiches with melted butter. In a large cast-iron or other heavy skillet, toast sandwiches in batches over medium-low heat until golden brown and heated through, 3-4 minutes on each side.

4 slices bread
4 slices cheddar cheese
1 can (4 ounces) chopped green chilies, drained
2 tablespoons butter, softened

Steps:

  • Top two slices of bread with two slices of cheese; sprinkle with chilies. Top with remaining bread. Butter the outsides of sandwiches. , In a large skillet or griddle, toast sandwiches until bread is lightly browned on both sides or until lightly browned.

Green Chile-Cilantro Sauce
2 poblanos (grilled, peeled, & chopped)
1/4 cup chopped red onion
2 cloves garlic, chopped
3 T fresh lime juice
2 T water
2 t grated lime zest
2 t honey
1/2 t salt
1/4 t pepper
1/2 cup olive oil
1/4 cup fresh cilantro leaves
Goat Cheese Mixture
4 ounces soft goat cheese
1/4 cup chopped, pitted Nicoise olives
1 red bell pepper, grilled, peeled, seeded, & chopped
1 T chopped fresh thyme leaves
1 t black pepper
4 chick breasts
4 t olive oil
1/2 t salt

Steps:

  • SAUCE: Combine poblanos, onions, garlic, lime juice, water, zest, honey, salt, & pepper in a blender until smooth. While motor is running, slowly drizzle in oil & blend until emulsified. Add cilantro & blend until smooth. If too thick, add a few T of cold water to thin.
