CELERY, CARROT AND GREEN APPLE SOUP
The apple and carrot flavors come through in this simple soup, made with easy to find ingredients. May be easily doubled or quadrupled.

Steps:
- Heat oil over medium heat in large sauce pan. Add carrot, celery, and onion, allowing to cook 2 minutes.
- Add butter and stir to melt.
- Add stock and cook for 10 minutes.
- Add apple, tomato paste, bay leaf and brown sugar. Cook for 2 minutes longer. Remove bay leaf.
- Transfer soup to blender or use an immersion blender, blend until smooth. Strain soup through fine sieve, keeping liquid and discarding any solids.
- Season with salt and pepper and serve hot.

GREEN CHERRY TOMATO/APPLE SOUP
first frost of the yr was last night so hubby picked green tomatoes......i had a bowl full...what to make my sis was tellin me bout an apple/green tomato salsa she was makin so i decided to try it as soup.... yummo!!!!

Steps:
- start night before.... in lg soup pot put tomatoes,apples,carrots and 1/2 all the spices...add 1 qt water... bring to boil reduce heat cook 45 min stir often so it does not stick to bottom of pan and burn taste... add spenda if needed[i did] put in food processor[i did in 2 batches] processe til smooth
- put back in pan add rest of spices and milk... cover and put in fridge overnight....i ya waant cook bacon and mix in before servin but ya don't have too...i served with dollap of sour cream......
