We serve this along with steak and a baked potato. You can drizzle some extra-virgin olive oil on top before serving. Serve with crusty Italian bread. Navy beans work in this, also.

1 teaspoon salt
2 heads escarole, cut into 2-inch pieces
¼ cup olive oil
3 cloves garlic, pressed
1 teaspoon salt, or more to taste
½ teaspoon black pepper
¼ teaspoon red pepper flakes
1 (15 ounce) can cannellini beans, drained and rinsed
1 tablespoon Parmesan cheese, or to taste

Steps:

  • Pour enough water into a large pot to be about 2 inches deep; bring to a boil. Stir 1 teaspoon salt into the boiling water; add escarole. Cook the escarole at a boil, pushing the escarole further into the water as it wilts, until it is fork-tender, 3 to 5 minutes; drain.
  • Pour olive oil into the pot and place over medium heat. Cook and stir garlic, 1 teaspoon salt, black pepper, and red pepper flakes in hot oil until the garlic is soft, 3 to 5 minutes. Stir drained escarole and cannellini beans into the garlic mixture; cook and stir until the beans are hot, 5 to 10 minutes. Sprinkle Parmesan cheese over the mixture just before serving.

1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon minced garlic
½ teaspoon salt
ground black pepper to taste
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Place green beans, lemon juice, olive oil, garlic, salt, and pepper into a resealable plastic bag; marinate for 10 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spread green beans into a shallow baking pan; place under the broiler and cook until barely tender, about 5 minutes. Sprinkle with Parmesan cheese.

1 lb fresh green beans
truffle oil
butter
salt & freshly ground black pepper, to taste
white truffle, shavings

Steps:

  • Blanch green beans in hot water, drain.
  • Add green beans to a warmed saute pan which has enough truffle oil and butter (melted) to coat.
  • Saute green beans, coating them with the oil and butter.
  • Add freshly ground pepper and salt and lightly toss beans while sauteeing.
  • Plate the green beans and shave truffles over just before serving.

2 tsp. Fresh thyme, minced
6 Tbsp. Roland® White Truffle Oil
1 lb. Fresh green beans, trimmed and blanched
1 lb. Fresh Cremini mushrooms, trimmed and thinly sliced
2 Tbsp. Shallot, finely chopped
1 head Belgian endive, trimmed, cleaned, and sliced into 3/4-inch strips
Roland® Fine Sea Salt (add to personal taste)
Black pepper, ground (add to personal taste)

Steps:

  • TRUFFLE OIL VINAIGRETTE: 1) In a small bowl, whisk together Dijon mustard, white wine vinegar, and thyme. 2) Slowly whisk in the truffle oil to make a creamy, emulsified dressing. Season with sea salt and pepper; set aside. SALAD: 1) In a large bowl, toss together the blanched green beans, mushrooms, shallot, and sliced endive. 2) Add the truffle oil vinaigrette and toss to coat. Line a platter with whole endive leaves and mound the salad over them. NOTE: The green beans should be blanched until tender, but not soft.

½ cup brown sugar
½ pound bacon

Steps:
