CLASSIC BUTTERED GREEN BEANS

Steps:
- Bring a large pot of salted water to a boil. Fill a large bowl with ice water; generously salt the water.
- Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
- Meanwhile, melt 2 tablespoons butter in a large wide pot over medium-high heat. Add the shallots, season with salt and cook, stirring, until slightly softened, 3 to 4 minutes.
- Add the green beans to the pot; season with salt and pepper. Cook, stirring, until hot, 4 to 6 minutes. Remove from the heat and add 1 tablespoon water and the remaining 1 tablespoon butter; stir to coat.
BUTTERY SAUTéED GREEN BEANS
Green beans are sauteed in butter and seasoned with garlic and crushed red peppers. They;re amazing, as long as you don't overcook them.

- In a large skillet, heat the butter over medium-high heat.
- When the butter stops foaming, add the green beans and salt.
- Cook, stirring often, about 5 minutes.
- Add the black pepper, garlic, and crushed red peppers.
- Continue to cook, stirring often, for about 5 more minutes, until the beans are tender but not mushy.

SAUTEED GREEN BEANS WITH GARLIC AND PEPPER
Steps:
- Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
- Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Uncover the skillet and cook until the liquid evaporates and the green beans are tender, 10 minutes more. Stir in the lemon juice and remaining tablespoon butter and season with additional salt and pepper.

- Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.

BROWN BUTTER GREEN BEANS
Steps:
- Preheat the oven to 350 degrees F
- Cut off the top of the garlic head and discard. Put the garlic on a square of aluminum foil and drizzle with the olive oil. Wrap the foil around the garlic, put in the oven and roast for 50 minutes. Remove from the oven and set aside to cool to room temperature. Once cooled, remove the garlic from the foil and squeeze the garlic head, cut side down, over a small bowl until all of the roasted garlic cloves pop out. Mash the pulp with a fork and set aside.
- In a large skillet over medium-high heat melt the butter and cook until it begins to foam, turn light brown and acquire a nutty aroma. Turn the heat to low, add the shallots, and cook for 2 minutes. Add the green beans, roasted garlic, and almonds, and season with salt and pepper, to taste. Transfer the beans to a serving bowl and serve immediately.

Found this recipe in an old copy of Taste of Home I had lying around. Nice flavour, and something a touch different to dress up green beans for a special occasion. Bon Appetit!

Steps:
- Finely chop one yellow pepper, saute in 1 tbsp butter until tender. Set aside.
- Place pin nuts, lemon juice, salt, pepper and remaining butter in a blender. Cover and process until blended. Add cooked pepper and blend. Set butter aside.
- Place beans in a saucepan and cover with water. Cut remaining pepper into thin strips, add to beans. Bring to a boil. Cover and cook for 5-7 minutes, or until crisp, drain. Place in bowl and toss with butter.
