1-1/4 pounds fresh green beans (about 5 cups), trimmed
1 can (8 ounces) sliced water chestnuts, drained
1 cup sliced fresh mushrooms
2 garlic cloves, minced
2 teaspoons canola oil
2 teaspoons sesame oil
2 tablespoons water
4 teaspoons reduced-sodium soy sauce
2 teaspoons sugar
1/4 teaspoon pepper
1/8 teaspoon salt
2 teaspoons sesame seeds, toasted

Steps:

  • In a nonstick skillet, saute the beans, water chestnuts, mushrooms and garlic in canola oil and sesame oil for 5-6 minutes or until almost tender. Add the water, soy sauce, sugar, pepper and salt. Reduce heat; cover and simmer for 10-12 minutes or until beans are tender. Sprinkle with sesame seeds.

1 can (8 ounces) sliced water chestnuts, drained
1 small onion, chopped
1 jar (4-1/2 ounces) sliced mushrooms, drained
6 tablespoons butter, divided
1/4 cup all-purpose flour
1 cup 2% milk
1/2 cup chicken broth
1 teaspoon reduced-sodium soy sauce
1/8 teaspoon hot pepper sauce
Dash salt
1 package (16 ounces) frozen french-style green beans, thawed
1/2 cup shredded cheddar cheese
1 cup crushed french-fried onions

Steps:

  • Preheat oven to 350°. In a small skillet, saute water chestnuts, onion and mushrooms in 2 tablespoons butter until onion is crisp-tender, 4-5 minutes; set aside. , In large skillet, melt remaining 4 tablespoons butter; stir in flour until smooth. Stir in milk, broth, soy sauce, pepper sauce and salt. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from heat; stir in green beans and cheese. , Spoon half of the bean mixture into a greased 1-1/2-qt. baking dish. Layer with water chestnut mixture and remaining bean mixture. , Bake, uncovered, 45 minutes. Top with french-fried onions. Bake until heated through, about 5 minutes longer.

1/4 cup butter
1 small onion, finely chopped
2 tablespoons all purpose or unbleached flour
1 cup half-and-half
6 oz. (1 1/2 cups) shredded sharp Cheddar cheese
1 (8-oz.) can sliced water chestnuts, drained
1 (6-oz.) jar sliced mushrooms, drained
1 teaspoon soy sauce
1/2 teaspoon hot pepper sauce
1/4 cup slivered almonds, if desired

Steps:

  • Heat oven to 350°F. In 1 1/2-quart microwave-safe casserole, combine green beans and 2 tablespoons water; cover. Microwave on HIGH for 9 minutes. Drain.
  • Meanwhile, melt butter in medium saucepan over medium-high heat. Add onion; cook and stir 3 to 5 minutes or until onion is tender. Stir in flour; cook until mixture is bubbly. Gradually add half-and-half, stirring constantly until mixture boils and thickens. Add cheese; stir until melted. Remove from heat.
  • Add cheese sauce, water chestnuts, mushrooms, soy sauce and hot pepper sauce to beans in casserole; mix gently. Sprinkle with almonds.
  • Bake at 350°F. For 25 to 30 minutes or until bubbly.

1 medium onion, chopped
3 tablespoons butter or 3 tablespoons margarine

1/4 teaspoon mace

  • Bring a pot of salted water to a boil, add beans and cook for 6-8 minutes.
  • Melt the butter/margarine in a skillet, add onion and saute for 7 minutes, stirring.

1 1/2 lbs fresh green beans, drimmed (about 5 cups)
2 teaspoons oil
1 tablespoon peeled chopped gingerroot (use a spoon to peel the gingerroot, then chop fine)
2 garlic cloves, crushed
8 ounces sliced water chestnuts, drained and rinsed
1/2 teaspoon salt

Steps:

  • In a large saucepan over high heat, bring to a boil enough water to cover beans.
  • Boil beans for 4 inutes. Drain and plunge into ice water to halt cooking; drain.
  • In a large skillet, heat vegetable oil over high heat, swirling to coat bottom of pan.
  • Stir-fry water chestnuts for 1 minute.
  • Add garlic and ginger (don't let it brown).
  • Add beans and salt.
  • Cook until heated thoroughly, stirring constantly.
  • Serve on a platter.
  • Chef note: You can also leave out the water chestnuts and ginger and add a small can of Ro-Tel tomatoes and peppers to create a Mexican dish).

12 tablespoons unsalted butter, plus more for baking dish
Kosher salt and freshly ground pepper
2 pounds green beans, trimmed
3 cups coarse fresh breadcrumbs
6 ounces peeled roasted chestnuts, coarsely chopped (1 1/4 cups)
1/2 cup coarsely chopped fresh parsley leaves
1 1/2 cups whole milk
1 1/2 cups heavy cream
1 clove garlic, minced
10 ounces mixed mushrooms, such as cremini, oyster, and trumpet, sliced (4 cups); plus 2 trumpet mushrooms, thinly sliced lengthwise (optional)
1 onion, finely chopped (2 cups)
1/4 cup unbleached all-purpose flour
Pinch of freshly grated nutmeg
Extra-virgin olive oil, for tossing (optional)

Steps:

  • Preheat oven to 350°F. Generously brush a 3-quart baking dish with butter. Prepare a bowl of salted ice water. Cook green beans in a large pot of generously salted boiling water until crisp-tender and dark green, 3 to 4 minutes. Drain; immediately transfer to ice water until thoroughly chilled. Drain and pat dry. Halve beans on the bias and transfer to prepared dish.
  • In a bowl, toss breadcrumbs with chestnuts to combine. Melt 6 tablespoons butter; drizzle evenly over breadcrumb mixture, tossing until evenly absorbed. Toss in parsley; season with salt and pepper.
  • In a small saucepan, heat milk and cream over medium-low until scalding and bubbles emerge along edges of pan. Remove from heat; cover to keep warm.
  • Sprinkle garlic with a pinch of salt; mash into a paste with the side of a knife. In a large straight-sided skillet, melt remaining 6 tablespoons butter over medium heat. Add mixed mushrooms; season with salt. Cook, stirring occasionally, until tender and beginning to brown, 15 to 18 minutes. Add onion, season with salt, and cook, stirring often, until onion is translucent but not browning, about 5 minutes.
  • Stir in garlic; cook 1 minute more. Sprinkle flour evenly over mixture and cook, stirring, 2 minutes. Slowly add milk mixture, stirring, and bring to a simmer. Cook until thickened slightly, about 3 minutes. Stir in nutmeg; season with salt and pepper. Pour mixture evenly over green beans in dish. Sprinkle breadcrumb mixture evenly over top.
  • Bake until bubbly along edges and crisp golden brown on top, about 30 minutes. Meanwhile, toss sliced trumpet mushrooms with enough oil to lightly coat, season with salt and pepper, and arrange in a single layer on a rimmed baking sheet. Roast until tender and golden brown along edges, about 30 minutes. Top casserole with roasted mushrooms and serve warm.

CRUNCHY GREEN BEAN CASSEROLE

This is my own variation to the old tried and true string bean casserole. My family has loved this for years, and now my daughter makes it for her family.

4 slices bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) can water chestnuts, drained and chopped
¾ cup milk
2 (15 ounce) cans green beans, drained
ground black pepper to taste
1 ⅓ cups French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a 1-1/2 quart casserole dish, mix together the bacon, soup, water chestnuts, milk, green beans and pinch of black pepper.
  • Bake for 30 minutes or until heated through.
  • Stir and top with French fried onions. Bake for 5 additional minutes or until onions are golden brown.
