3/4 cup pecans, coarsely chopped
3 tablespoons unsalted butter
2 tablespoons maple syrup
2 shallots, minced
2/3 teaspoon orange zest
1 pinch cayenne pepper
2 teaspoons all-purpose flour
1 1/2 lbs green beans
2/3 cup chicken broth
1/3 cup orange juice
1 teaspoon fresh sage, minced
salt & pepper

Steps:

  • Toast pecans in 12" non-stick skillet over medium-high heat, stirring occasionally, about 3 minutes or until fragrant. Stir in maple syrup, 1 tbsp butter, and 1/8 tsp salt. Stir constantly until nuts are dry and glossy, then transfer to plate and set aside.
  • Wipe out skillet. Melt remaining 2 tbsp butter in skillet over medium heat. Add shallots, orange zest, and pinch of cayenne pepper. Cook, stirring occasionally, 2 minutes or until shallots are softened. Stir in flour until combined, then add green beans. Add chicken broth, orange juice, and sage. Increase heat to medium-high, cover, and cook until beans are crisp-tender (about 4 minutes).
  • Uncover and cook about 4 minutes, until beans are tender and sauce has slightly thickened. Remove from heat. Season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans, and serve.

1/4 cup water
2 cloves garlic, finely minced
1 lb fresh green beans
2 tablespoons orange marmalade
1 teaspoon dried rosemary, crushed
1 teaspoon grated orange zest
1/4 teaspoon salt
1 tablespoon butter

Steps:

  • Trim beans and break into 1 inch lengths, wash.
  • In medium saucepan bring water and garlic to a boil.
  • Add green beans, reduce heat to low, cover and simmer for 10 to 15 minutes or until beans are crisp tender.
  • If any water remains at end of cooking, drain and return beans to pan.
  • Turn up heat to medium add remaining ingredients and heat to boiling, stirring occasionally.
  • Serve immediately.

  • Cook 1 1/2 pounds green beans in salted boiling water until crisp-tender, 2 minutes. Drain and transfer to a bowl of ice water to cool, then drain and pat dry. Whisk 2 tablespoons each sherry vinegar and orange juice, 2 teaspoons dijon mustard and 1/2 teaspoon kosher salt in a large bowl; whisk in 1/4 cup olive oil. Add 1 thinly sliced shallot and let sit 10 minutes. Add the green beans, 2 heads torn frisée, the segments of 2 oranges and 1/3 cup chopped toasted pistachios; season with salt and pepper and toss.

½ orange, zested
2 cloves garlic, minced
1 teaspoon soy sauce
1 ½ teaspoons balsamic vinegar
1 dash ground black pepper
1 tablespoon water
2 cups fresh green beans, trimmed
1 teaspoon extra-virgin olive oil
1 tomato, diced

Steps:

  • Stir the honey, orange zest, garlic, soy sauce, balsamic vinegar, pepper, and water together in a bowl. Add the green beans and toss to coat. Allow to soak for 20 minutes, mixing every 5 minutes.
  • Heat the olive oil in a saucepan over low heat; add the green beans to the hot oil and cover the saucepan. Pour the green beans and sauce into the pan and cook, shaking the pan regularly, until the beans are slightly tender, about 5 minutes. Add the tomatoes to the green beans, replace the cover, and continue cooking until the green beans are cooked though yet slightly crispy, about 5 minutes more.
