CREOLE GREEN BEANS
Even though our children are grown, my husband and I remain busy. So we rely on speedy recipes that call for everyday ingredients. This peppery treatment really wakes up green beans. It makes enough that we have leftovers, which is helpful since our schedules sometimes keep us from eating together. -Sue Kuhn, Dublin, Ohio

Steps:
- Cook beans according to package directions. Meanwhile, in a skillet, cook bacon, onion and green pepper over medium heat until bacon is crisp and vegetables are tender. Remove with a slotted spoon., Stir the flour, brown sugar, Worcestershire sauce, salt, pepper and mustard into the drippings until blended. Stir in tomatoes. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain beans and add to skillet. Stir in bacon mixture.

A nice way to spice up green beans. Good, but not for the kids! Be careful of adding extra salt due to the sodium content of some of the ingredients.

- Melt butter over medium heat in a large skillet. Stir in green beans, bacon, onion, green pepper, and garlic; cook and stir until onions are translucent, about 2 minutes. Stir in cayenne pepper, Creole seasoning, and black pepper. Cover; reduce heat to low. Simmer until vegetables are tender, about 20 minutes. Season to taste with salt.

LOUISIANA GREEN BEANS (CREOLE RECIPE FOR ZWT-9)
Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

Steps:
- Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
- Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
- HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

Steps:
- Melt butter in a medium sauce pan over high heat.
- Add bacon and ham and cook, stirring for 2 minutes.
- Add onions and cook, stirring until soft, about 4 minutes.
- Add tomatoes and their juice and cook, stirring for 4 minutes.
- Add 2 cups of the water, salt, pepper and beans.
- Reduce heat to medium and cook, stirring occasionally, until beans begin to soften, about 20 minutes.
- Add remaining 1 cup water and cook until beans are very tender, about 10 minutes.

- 2. Stir in chopped onion and bell pepper and cook for about 5 minutes or until onions are clear.. Stir in minced garlic for about 1 minute.
- 3. Stir in the Worcestershire sauce, salt and pepper. and Cajun seasoning until blended. Stir in diced tomatoes and chilis.
- 4. Bring to a boil; cook and stir for 2 minutes. Drain green beans and add to skillet. Stir in bacon until evenly distributed.
SCALLOPED CREOLE GREEN BEANS
This is the best green bean dish I have ever had! The mixture of onion, bell pepper, celery, tomatoes, and cheese blends so nicely with the green beans. I got the recipe from an friend's mother over 20 years ago and she got the recipe from her mother who had a local cooking show in the southwest Louisana/ southeast Texas area. You can taste the southern Creole influence in this dish. You won't be disappointed!

- Preheat oven to 350 degrees.
- Fry bacon until crisp and set aside. Saute onion, celery, and bell pepper in bacon drippings until transparent.
- Transfer onion mixture to a medium sauce pan and add tomatoes, salt, pepper, and sugar. Cook, covered over low heat for 1 hour. (yes--1 hour!).
- Add cheese to sauce mixture and stir until melted.
- Place green beans in casserole dish, crumble bacon over beans, and pour sauce over top.
- Bake, uncovered for 1 hour.

- Cut the beans in half crosswise and then lengthwise ( as for French-cut beans). Place in a large saucepan. Add water to cover. Bring to aboil and cook, covered until the beans are tender. Drain and return beans to the pot. In a large skillet, sauté the celery, green peppers and onion in oil until tender and lightly brown. Add the tomatoes and simmer, uncovered 15 minutes or until most of the liquid has evaporated. Add the sauted vegetables to the pot with the beans along the sugar, salt and pepper. Heat thoroughly.
GREEN BEANS CREOLE
Steps:
- Sauté a little minced garlic in a medium skillet until golden; add green beans and a little water; steam just until bright green. Drain the water and add 1 or 2 chopped tomatoes, plus fresh basil leaves and lemon juice to taste. Cover and cook until the tomatoes have softened and the green beans are done to your liking.
CREOLE-STYLE GREEN BEANS
Steps:
- Preheat oven to 350°. If using fresh or frozen raw green beans, cut stems off and boil in water about 5 minutes and drain well. In a skillet over medium heat, cook the bacon until crisp; remove the bacon to a paper towel-lined plate, leaving 1-3 TB. of drippings in the pan. Add the onion and green pepper to the drippings; cook until tender. Push the veggies to the side of the pan, add the flour, and blend it in, stirring constantly. Then add sugar, Worcestershire sauce, PEPPER and MUSTARD POWDER. Stir well, until smooth. Add the tomatoes. Cook, stirring constantly, until thickened, around 5 minutes. Add the beans and stir to combine. Put into an oven-safe dish and top with crumbled bacon. Bake at 350° until warmed thoroughly, 20 minutes or so.

- 1. Cook bacon until crisp and remove to paper toweling. Save 3T fat in skillet.
- 2. Add onion and green pepper and cook until tender. Blend in spices.
- 3. Add tomatoes with juice. Cook and stir, breaking up tomatoes, until mixture thickens. Add green beans and heat through.
- 4. Sprinkle with reserved bacon to serve.
